Lecture Series - Nikki Rose

Nikki Rose is a Greek American professional chef, writer and seminar director living in Crete. She is a graduate of the Culinary Institute of America and has worked in fine dining, culinary-tourism education and journalism around the world. Chef Rose has contributed to many media outlets and organizations focusing on Greek cuisine, heritage preservation and sustainable tourism. She is founder of Crete's Culinary Sanctuaries, an award-winning program for best practices in Responsible Travel. Rose formed CCS in 1997 to help provide tangible support to residents working on action programs to protect their cultural and natural heritage. CCS organizes a range of dynamic seminars for the public and academic institutions.

We all want to eat healthy food, but we do not always have the inspiration to make something tasty and healthy. Research has shown that the Greek and particularly the Cretan cuisine is very healthy. Therefore, many people want to learn to cook Greek, because the food always tastes so delicious during a holiday in Greece.

Our chef shows you how easy it is to cook a delicious and healthy dinner. You can choose to come cooking with us somewhere in the mountains. But you can also choose to join a workshop cooking on Crete for several days. The cooking lessons are outdoors, as it is after all your holiday.

The long life, health giving Wild Greens of Paros, Greece

Loaded with all the things that are good for you, the wild greens of Greece are mother natures best kept secret for solving many of your health problems when eaten over a period of time. here is a small selection I picked myself on the island of Paros, Greece. Mind you they are everywhere here throughout the islands and scientist have proven those who eat these greens are some of the longest living folks in the world besides the healthiest. The NY Times wrote an article on those who eat these forget to die pertaing to the diet of those living on the island of Icaria. Another place I have enjoyed wild greens and mushrooms.

CCS teachers are archaeologists, ecologists, organic farmers, heirloom seed savers, chefs, artists, and many others. CCS organizes accredited educational programs on Crete's culture, nature, organic agriculture and cuisine. Over 3,000 students, teachers and journalists have attended their programs. Their upcoming documentary, Heritage Protectors, is a continuation of their work. Learn about the edible wild greens.
In the rural areas of Crete there is a large variety of edible horta / wild greens to be found. They begin to appear with the first rains of autumn and continue through the winter and into spring.
HORTA may be eaten raw or cooked and are a very vital part part of the Cretan diet.
It is said that there are over fifty varieties of HORTA to be found in Crete.
For example: glistrida, rough, mantilides, sip, avronies, sorrel, achatzikoi, kafkalithres, chicory, lagoudochorto, koutsounades fennel, galatsides, stamnagathi, endive, etc.

Greek dishes easy to cook. Michael Jagd in Amorgós

In the Greek group of islands, the Cyclades, you'll find the untamed island of Amorgós quite close to Naxos.
We experience how to cook Favátokeftédes, croquettes based on fava (fava = a mash of yellow split seas), and Hortápites, pirogs of horta (horta = all kinds of edible green leaves) in the Aegialis Hotel. The item has been added some Amorgian nature and folklore with local musicians and dancers. It takes 4 minutes and has been produced by journalist Michael Jagd who has written the Danish guide Turen Går Til Kykladerne (The Trip Goes to the Cyclades).
