In the year 1957, Nagasamy Naidu set out to sell a biryani made to his wife’s unique recipe in the then sleepy town of Dindigul in Tamil Nadu. Seated at the counter, always with a turban tied on his head, led to the eatery being popularly referred to as the Thalappakatti (thalappa - turban; katti - tied) biryani shop as opposed to its original name, Anandha Vilas, and thus was born an establishment that today owns (yes owns, not franchises) nearly 70 outposts of Dindigul Thalappakatti across the world. I visit the kitchen here to watch the cooking of their famed biryani made with small-grained seeraga samba rice, and also visit one of their eight restaurants in Bengaluru to get a takeaway bundle of their signature dishes. Dindigul Mutton Biryani (Pressure Cooker) | Dindigul Mutton Biriyani | Mutton Biriyani recipe

Dindigul Mutton Biriyani recipe by

Chef Yuva Durga Prasad, Executive Chef - Hilarity Inn, Chennai and Chef Ganesan, Vimalam Mess, Chennai.

Dindigul Mutton Biriyani

INGREDIENTS:

Ghee – 100 ml
Cinnamon – 2 pieces
Cardamom – 2 nrs
Cloves – 2 Nrs
Nutmeg – small piece
Staranise – small piece
Onion, sliced – 1 Nr
Biriyani Masala – (Cinnamom Paste - 2 tsp & Garam Masala paste – 2 tsp)
Garlic paste – 3 tbsp
Ginger paste – 2 tbsp
Mutton – 1 Kg
Salt to taste
Fresh Mint leaves
Fresh Coriander leaves
Green chillies, whole – 10 nrs
Water
Seeraga Samba Rice – 1 Kg (Soak and rinse the rice)
Lemon juice – 1 big size

METHOD OF PREPARATION:

1.Heat ghee in a pressure cooker, add few small pieces of cinnamon, cardamom, cloves, nutmeg and staranise.

2.Add onion, fry it till golden colour. Add biriyani masala; prepare this masala out of whole garam masala such as cinnamom, cardamom, cloves, nutmeg, star anise and mace. Cinnamon must be soaked in water separately and grind it into smooth paste, remaining spices can be soaked combinely in water and grind it into fine paste.

3.Add cinnamon paste and fry it. Add garam masala paste and fry it. Add mutton pieces and fry it for few minutes.

4.Add salt to taste and mix properly. Add mint and coriander leaves, stir well.

5.Add whole green chillies, stir well for sometime and add required amount of water.

6.Boil the mixture and close the pressure cooker to cook the mutton pieces. Allow two whistles.

7.Open and mix the cooker, add rice and mix. Add lemon juice and stir well.

8.Keep the flame in simmer and close the pressure cooker to cook the rice. Allow just one whistle to make the rice cook.

9.Open the pressure cooker once the pressure is slow down. Stir and serve this Dindigul Mutton Biriyani.

this biryani is seductively subtle in its aroma. you taste the luscious flavours of the aqhni in every grain of the flavourful jeera samba rice. The juicy meat pieces are small, allowing you to savour its meaty goodness in almost every mouthful of the briyani. If you like your briyani a little spirited and slightly spicy, taste it with the eggplant salan. I personally love this 'briyani' just by itself.

NAATU KOZHI BRIYANI
prepared in the same fashion as the mutton version, the flavour of the rice is very similar to the mutton briyani sans the flavour of the fat in the latter. The flavourful country chicken has a bit of a bite, typical of its character. If you love your naatu kozhi, you will love this briyani too.
