In this episode, Mark Wiens and I visit two South Bengaluru’s tiffin bastions, Brahmins’ Coffee Bar and Vidyarthi Bhavan. The latter was on his list, he had seen videos of, including, to quote him, “their legendary dosa stack”. Brahmins though was a revelation, as he tucked in the soft idli and crunchy yet soft vade. Followed by the “crispiest yet fluffiest dosa” he’s ever tasted, this made for a sumptuous, satisfying morning.

In its 78 years of existence, Vidyarthi Bhavan has always served its iconic masala dose within its premises, keeping it strictly outside the purview of delivery services. However the current scenario calls for an entirely new approach in food service, and in keeping with this, this revered South Bengaluru eatery has embraced takeaway as a new way of life, at least for the foreseeable future. I visit Vidyarthi Bhavan to document this change from the past and see for myself how its management is taking all steps necessary to ensure continuity of its delicious culinary traditions in as safe a manner as possible. Masala Dosa
The masala dose is now folded twice as opposed to the VB classic one fold, an allowance that the eatery has made for the dose to be rolled into an aluminium foil in order to retain its temperature when savoured at home. The crispy crackle of the dose is now replaced by a whisper of a crunch, but the buttery flavours are still spot on. The dose oozes ghee, and the aloogadde palya is mildly seasoned and creamy. It helps to crispen the dose a bit on the pan just before eating.

Idli
VB’s idlis are the grainy sort, perfect for ladling over chutney and piping hot sambar, before breaking it down to a delicious, spicy mash. If they’re too cold by the time they get to you, steam for a couple of minutes.

Uddin Vade
The vade definitely suffers the most casualty when consumed in a takeaway format. Gone is its crisp crunch, that would yield to a porous bite. The only way to redeem the vada is to dunk it into a bowl of piping hot sambar and savour it with a dollop of spicy chutney.

Khara Bath
The kharabath travels extremely well, given its moist texture. This tasty dish is studded with onions, fried lentils, coconut flakes and curry leaves, making for a playful medley of flavours and textures.

Kesari Bath
End your meal with this luscious semolina preparation, the flavour of the pineapple and cloves is quite pronounced. The dish is mellow in its sweetness, save for the pop of extra sweetness when you bite into a toasted raisin.

A couple of weeks ago, I watched a beautiful Kannada play that not only chronicled the iconic Vidyarthi Bhavan but also brought alive the emotional connect that patrons have with this institution over the decades. Amongst the brilliant characters portrayed, a pivotal performance was that of famed actor and food legend, Sihi Kahi Chandru, who gave voice to the Vidyarthi Bhavan masala dosae, the heart of a tiffin experience at the 77-year-old eatery. In the course of our conversation backstage, Chandru Sir and I quickly decided we should savour a full tiffin at Vidyarthi Bhavan soon. In this exciting Gourmet On The Road episode, Food Lovers’ Editor, Kripal Amanna explores Namma Bengaluru's most popular dosa destinations!

In part one of this two part episode, he begins his trail at Mavalli Tiffin Rooms or MTR tasting a plain dosa and a masala dosa. He then visits Hotel Janatha and New Modern Hotel in South Bangalore for ragi and rava dosas.

There’s nothing that comes close to savouring the crisp crackle of a dosa a few moments after it has left the pan. An experience that we missed much in lockdown. And so when Bengaluru’s most popular dose spot, Vidyarthi Bhavan re-opened dine-in, we lost no time in getting there to savour their iconic masala dose, scrumptious rave vade and a couple of other evening treats. In doing so, I also took a look at the measures that this eatery has employed to ensure a safe dining experience. Enjoy and stay safe.

Rave Vade
A deep-fried semolina vade studded with chilli, cashewnuts, ginger and curry leaves and served only in the evening, I am told this is quite popular. It’s bite is as crunchy as a cookie, crisp around the edges and soft towards the centre.

A textbook kesari bath that dissolves on the palate in a buttery gush of ghee, the raisins convey a pop of sweetness and the cashew lends a toastiness to the clove-induced flavour of this semolina pudding.

Brahmins' Coffee Bar ( - Bur first for breakfast, we’re starting at Brahmins' Coffee Bar, since 1965. They are famous for their coffee, tea, and especially their South Indian food breakfast staples; idli + vada, and coconut chutney.

Vidyarthi Bhavan ( - Perhaps the most famous restaurant in Bengaluru, Vidyarthi Bhavans specializes in their own unique style dosa that’s cooked pancake style and fried in ghee until it’s unbelievable crispy. The waiters famously stack the dosas all the way up their arms before delivering them to your table. The masala dosa here is a must eat!

Gowdara Mudde Mane ( - If you love all things meat, eat at Gowdara Mudde Mane when you’re in Bangalore is a must. They make all sorts of meat dishes including green masala chops, the spiciest meatballs, mutton fry, shanks, everything is dedicated to meat! Along with the dishes you must try their ragi mudde, a traditional staple of South India made from finger millet made into a dough.

AraLimara Paanipuri ( - One of the great parts of Indian street food culture is the afternoon chaat - a combination of small snacks usually in the afternoon that are tangy, sweet and spice. This legendary stall has been serving Indian classic chaats for decades. We tried their Dahi puri, Masala puri, Bhel puri, and Pani puri.

Namma Filter Coffee ( - Next up on this Bangalore food tour we needed to digest with some South Indian filter coffee, and at Namma Filter Coffee, they do it best!

When it comes to the Benne Masala Dosa, all roads lead to CTR - Shri Sagar or Central Tiffin Room in Bengaluru. The city’s love for this butter drenched dose goes back a few decades when the present owners took charge of this 70-year old establishment that served as the only eatery in the historic Malleswaram area.

Food Lovers’ editor, Kripal Amanna catches up with Sandesh Pujari, third generation owner of this landmark eatery and explores what makes the benne dose special, before indulging in a tiffin treat that includes not just their most loved offering, but other equally popular snacks like the Mangalore bajji, Maddur Vade and more. Vidyarthi Bhavan - iconic restaurant of Namma Bengaluru!

Vidyarthi bhavan' - This place requires no introduction!
Since 1943, it has won hearts of everyone and is maintaing the same quality and consistency.
More than everything, two things I really love the most here.
Firstly, the nostalgic feel and childhood memories flashes up as and when you enter and secondly the staff who welcomes you and treats you so well with a big smile on their face.
Dosa asusal crispy on center and soft texture on corner with aloo palya and spicy kai chutney was a killer.
If it is one sentence description, I would say it as a complete heave
