Rajamma and her husband, Basavaraj, set up a pushcart in a street corner of Jayanagar to fry and sell hot bajjis. Thirty years have passed since, the neighbourhood has evolved beyond recognition but Rajamma’s Madhavan Park Bajji Angadi, or shop, has stood constant at the same spot. Her husband has since retired, and today, she is helped by her sons, as they continue to serve delicious vegetable bajjis at honest prices to customers who visit not only for the scrumptious fare but also for the comforting nostalgia of yesteryear. Krishna Poojary migrated from his hometown in Kundapura to Bengaluru nearly half a century ago in search of a livelihood. After a string of odd jobs in eateries, he decided to try his hand at a bajji (fried fritter) gaadi (cart) in Jayanagar 4th block, Bengaluru. It’s been 42 years since; the location of his cart has changed from one street to another over the years, but the place that his fried wares occupy in the hearts and palates of his neighbourhood patrons remains constant to this day. Also perhaps making Kundapura Bonda Bajji Shop one of the area's oldest street food carts! I visited him one cloudy Bengaluru evening to taste all the bondas and bajjis he and his son have on offer.

It would be an understatement to say that current times have been especially tough for street food vendors, most who manage to earn barely enough for the day without much of a safety net to fall back upon. Against this backdrop, we were moved to hear of the struggles of a young engineering student who almost single handedly, with his mother, embarked upon a street cart venture to rescue his father and family from a crippling financial setback. And in the course of doing so, reconnected his father with a delicious North Karnataka snack tradition. In this street food episode, I stop by at Chitradurga Girmit Mandakki Centre to meet Ullas Basavaraju and his father, and also taste the Chitradurga mirchi in a scrumptiously delicious spicy avatar, some girmit mandakki masala and a rather intriguingly named ‘operation bajji’! Over 30 years ago, Dinesh Sood and his brother Deepak Sood, originally from Ludhiana, set up a tiny four-table eatery in the old market area of Balepet, Bengaluru to serve North Indian khaana to traders and travellers who would visit the area. Gaining popularity over time, Punjabi Pure Veg moved to a slightly larger first floor nook eventually, where it still stands 28 years on. The ambience, service and the decor is rather basic, but it is the rustic flavours of the food dished out by second generation owner, Aman Sood and his motley retinue of cooks that seems to hold sway over regular patrons. Also, the fact that the fare is delightfully cheap further adds to its draw. Hope you enjoy this one, visit here only for the food, nothing else.

Orphaned at a young age and in search of a livelihood, Huchappa migrated from his village to Bengaluru in 1950. He found employment with UP Brahmins who were dispensing paani poori from streetside carts. Having learnt the trade, he struck out on his own with a pushcart in Nagarathpet in 1950, infusing North Indian style chaats with local flavours. His son, Kumar continues the tradition under the shade of a temple peepal tree, which also gives his very popular chaat shop its name, Arali Mara, peepal tree in Kannada. Originally from Satna in Madhya Pradesh and raised in Bengaluru, Jawahar Lal always dreamt of being an entrepreneur when he worked as a North Indian cook in eateries in Bengaluru. For nearly half a century Hotel Dwarka has ruled the South Bengaluru palate, when it comes to the Khaali Dose, that though not as popular as the ubiquitous masala dose, is much revered by dosa aficionados. Intrigued, I visit this eatery to taste their khaali dose, and also discover that though its name may mean ‘empty’ in Kannada, there’s much that goes into its making that has earned for Dwarka the moniker, Khaali Dose Hotel. Khaali Dosa
The khaali dose, served in a pair, is soft and spongy, topped with mini-dollops of butter. When eaten piping hot with a generous smear of the butter, it’s the sort that when placed in the mouth dissolves little effort. The chutney served alongside is the right consistency to impregnate the porous dose with its spicy fervour. The potato palya is flavourful, but the main act here is the dose, butter and chutney.

The pandemic was tough on the hospitality industry and the people who worked in it, many who found themselves out of employment. My good friend, Chef Amit Wadhawan however saw in this adversity an opportunity to convert an interest, that of bottling traditional and modern expressions of flavours in a hand crafted range of jams, chutneys, pickles and preserves, into a small business. Sold under the name, Supernatural Society, these delicious offerings are cooked by him personally in small batches sans any preservative, low sugar and with perhaps the highest concentration of fruits and other natural ingredients. I caught up with Amit in Delhi over a delightful tasting of some of his jars.

After years of working for a paani-puri vendor, Kuppuram Naidu saved enough to set up a chaat cart in the eighties in the far flung suburb of Basaveshwar Nagar in Bengaluru. His sons, Gokul and Sarvan, would turn up at the cart after school to help their father, and in between preparing chaat, serving customers and doing the dishes, catch up on their homework under street lights. The years passed, Gokul became an engineer, his brother a cost accountant. Unable to find a suitable job though, Gokul turned back to his father’s trade, and aided by his brother, has transformed the cart to a food truck. And not just any food truck, this engineer and cost accountant duo have aspirations to be the most hygienic street food operation serving authentic chaats! Made to the age-old recipes of their father who has since retired to farming, and with almost every component of the chaat prepared by them with the assistance of their mother, Shanthi Kuppuram.
I drive up to Naidus Chats to see this for myself and also savour a few of their popular offerings made to that has made them the cynosure of their neighbourhood.


Masala Puri
Bengaluru’s popular ‘local’ chaat offering is served in an avatar that is spicy but doesn't subdue the aroma and warming spices of the ‘masala’ that is at the heart of this concoction. The masala has depth of flavour, this chaat can be a filling snack with the white peas.

Not a Mumbai version with potatoes, but topped with onions, spiced peanuts, chilli powder, seasoning, chutneys and sev, this chaat is a riot of textures. After completing the 10th grade, a young lad decided to help his father in their village idli shop in Kanakapura, 60 kilometres from Bengaluru. Half a century on, Mr. Ramchandra has remained steadfast to his father’s culinary tradition, steaming fragrant idlis over a wood fire. A one-man army, he procures the ingredients, prepares the wood to fuel the decades-old stove, soaks the rice and lentils, grinds and carefully ferments the batter, before rising at 4am each morning to make a spicy chutney, and steam over 3000 idlis, 500 in a batch, that run out before noon! Working with the energy and enthusiasm that is hard to imagine in a modern-day sextagenarian, Ramchandra swears by the philosophy of “cheap and best”, in his words, selling four piping-hot idlis for only Rs. 10, or Rs. 2.50 a piece! The quality and appeal of the soft, fluffy idlis are such that patrons don't mind a two-hour drive just to breakfast at this old-fashioned Kote Idli Mane. The idlis are soft and porous, yielding with a slightly pasty texture in its weight. The size of the idlis are such that you can happily savour about four to six without feeling its burden. The spicy, roasted gram and red chilli chutney makes for a delicious accompaniment to the fragrant idlis.

Soon, his interest in making chaat overtook any academic inclinations and after completing seventh grade, he gave up school. Soon, his family joined in too, his father giving up his profession as an automotive mechanic, his mother, and much later, his wife, assisting in preparing the masalas, chutneys, etc. at home. Over the last two decades or so, the cart has made way to a tiny shop and Sri Ranganatha Chats Corner has emerged as a favourite chaat spot in the neighbourhood, not only for their homestyle, simple preparations, but also the friendliness with which they interact with customers, many who have been tasting their fare over years.
