Chef Gaggan Ananad opened a new restaurant in Bangkok, called Gaggan Anand ( - and we had an exclusive opportunity to eat there a few weeks ago, recently as it had opened.

You’ll immediately notice the amazing setting, which is in a compound in Bangkok, camouflage with lush vines and greenery. There’s a bar at the front, again surrounded by beautiful vines - I loved the natural approach to the design and decor. Amazingly, Chef Gaggan and his team, set up the restaurant in a matter of a couple months.

Emoji Menu - Classic with Chef Gaggan, we were presented with an emoji menu, this time on puzzle pieces, so as we ate the 25 different dishes courses, we made the puzzle to make it an even more interactive fine dining in Bangkok experience.

Progressive Indian food - although the food at Gaggan Anand can be classified as progressive or modern Indian food - it really is in its own unique creative genre of food on its own. It’s unlike any other food in the world. Dishes are Indian in flavor and spice, yet ingredients are a mix, and it’s truly an artistic expression of Chef Gaggan and his amazing team of talented chefs.

For me, Gaggan Anand is a meal that’s as much about the entire overall experience, as it was about the delicious bites of food. Some bites you have no idea what happened in your mouth, some bites you laughed and had fun, other bites were perplexing and unique. It was a unique Indian food meal of surprises and a lot of fun.

Street Food Bangkok - 60 Kg. CURRY + SPECIAL ROTI with Chef Gaggan!

What if we could do a Bangkok street food take-over, Gaggan and his team of chefs would cook, we’d organize a pop-up event, and we’d donate the money directly to a food vendor in need?

4 days later, it was happening!

Mae Roti - Her Story: About 10 years ago her husband passed away, and she has raised and supported her 5 kids by selling roti (now selling with her daughter). As soon as we tasted her roti, we knew it was special (green roti), and Chef Gaggan immediately began thinking of what curry it would pair well with.

60 KG. of Beef Rendang Curry - Rendang curry is among the best curries and best single dishes in the world, and thanks to the amazing Chef Rydo ( he along with Chef Gaggan cooked up 60 kg. Of some of the world’s best rendang. It was so incredibly good, so fragrant, rich, full of spice, and it was the perfect accompaniment to fresh hot green pandan roti!

Thank you for your help and support and for coming out in Bangkok. We hope to do events like this, to promote and to support more food vendors.

Bangkok native Mae is a street cart food vendor, who raised her family of five children all on the income of one humble cart. Each day, Mae serves up hundreds of sweet rotis for just 10 baht ($0.34 USD) apiece.

This bright-green herbal roti, thin as a handkerchief and hand-spun (and invented) by Mae and her daughters, is served right on the streets of Bangkok’s Bangrak Bazaar. It’s become a local hit, attracting hungry locals and foreigners alike to try its subtle flavor.

At Lido Connect Bangkok, hundreds of people gathered to get a taste of this street food stall's unique pandan leaf roti. โรตีใบเตย (roti bai theuy) is a green roti infused with the essence of pandan, and the inspiration for Michelin Star Chef Gaggan Anand to develop an Indonesian Rendang curry to complement the herbal, fragrant roti.

The team prepared 400 plates, or 60 kg. of some of the most tasty beef rendang the world has ever seen.

The recipe was developed by Gaggan chef Rydo Anton, an Indonesian himself. The 60 kg. rendang curry was truly the perfect complement for the pandan roti, a Southeast Asian fusion that brought joy to stomachs and money to benefit the inventor of the special roti.

Mark Wiens, Gaggan, and Itan were inspired to give back to the street food community, which so inspires their work, and raise 108,000 baht to help Mae achieve her dreams of buying a house.

What I love so much about eating at Samrub For Thai (สำรับสำหรับไทย), is that it’s a Thai food learning experience. I learn so much about ingredients, combinations, history, and taste. I believe Chef Prin is one of the most talented chefs of Thai food.

The private dining room of the extremely talented Chef Prin, known better as Samrub For Thai (สำรับสำหรับไทย) is for me one of the best Thai restaurants in the world. Having a foundation of Thai food, it’s just incredible to see how Chef Prin takes Thai cuisine to the next level, but actually brings back ancient Thai foods that have been buried and lost.

The menu at Samrub For Thai (สำรับสำหรับไทย) constantly changes, typically every month. And what’s incredible is that many of the ancient Thai recipes listed ingredients, but not amounts. And so it’s up to the cook to determine the balance and taste - and you need to have a seriously good tongue and knowledge of Thai food to determine the best ratios of ingredients.

Here’s the list of Thai dishes we ate during this meal:

Miang som (เมี่ยงส้ม), marian plum
Oysters snack (ขนมหอยนางรม)
Beef salad, tree basil (พล่าเนื้อสด)

Sour pomfret soup (ต้มส้มปลาเต๋าเต้ยน้ำส้มโหนด)
Crab coconut cream relish (หลนเจ่าปูม้า)
Roasted duck, langsat fruit, salad (ยำเป็ดย่างลองกอง)
Shrimp curry, young mangosteen (แกงตู้มี่)
Beef with holy basil (เนื้อผัดใบกะเพรา)

Sticky rice ice cream, mango, golden beans (ไอศรีมข้าวมะม่วงกับถั่วทอด)

It was an outstanding meal, almost unbelievable flavors, quality of ingredients, and just an amazingly fun time to hang out with friends and eat best Thai food.

Chef Gigg is the Iron Chef champion of Thailand, head chef of Lerdtip Restaurant, and he’s our partner at Phed Mark. He recently opened a new restaurant, Lerdtip (เลิศทิพย์), Thai Chinese restaurant at CentralWorld shopping mall in Bangkok. Chef Gigg invited me over for dinner to show me one of his new signature dishes, a huge plate of seafood noodles (known in Thai as radna ราดหน้า). #ThaiFood #Bangkok #Thailand

Part of the beauty of this plate of Thai Chinese style noodles was seeing Chef Gigg, who is a master wizard on the wok, cook the entire dish. He first fried the noodles in a heap of smoke, an amazing skill so that they didn’t stick together, but had the perfect gummy and crunchy consistency. He then cooked all the individual ingredients, the lobster, abalone, crab, snow fish, and vegetables. Another hugely important part of radna (เส้นใหญ่ราดหน้า) is the sauce, a mixture of fermented bean paste and Chinese spices, whisked into a thick and ultra flavorful sauce.

Through the dish is usually called Sen Yai Radna (เส้นใหญ่ราดหน้า), this version on Chef Gigg’s is more of a Thai Chinese Noodle special (ราดหน้าจักรพรรดิ).

Price - 8,900 THB ($293 USD) for the plate of radna noodles!!

1,200 Fried Chickens!! GIANT INDIAN FOOD Wedding for 3,000 People! | Kerala, India!

Weddings in India are on a huge scale, and this was a wedding reception in Kannur, on the West Coast of India. We arrived and immediately headed back to the kitchen, where the amazing Chef and his team were busy preparing huge amounts of food for over 3000 guests.

There were a dozen pots of biryani going over fire, and inside the kitchen, there were huge pans of curry, and the most impressive dish - a pan full of 1,200 chickens, marinated in chili and ready to be deep fried.

Something that really impressed me is the head Chefs ability to organize and manage - making sure to get flavors right (even though there’s no written recipe), without forgetting any ingredients, and all while keeping a schedule so the food is ready when the guests arrive. Imagine doing that for 3,000 people. Truly skill, knowledge, organization, and experience.

The food was spectacular, with lollipop chicken, fried chicken in spices and chili, chicken curry, biryani, a variety of south Indian dosa, and a multitude of over 25 different dishes. What a meal and experience, eating, cooking, and watching the food being prepared at an Indian wedding receptions in Kerala, India!

Mark Wiens - A Quick Overview of Life and How I Started Traveling

While most of the time you probably see me eating food, I've been receiving a lot of questions lately asking me who exactly I am, how I started traveling, why I love eating so much, and how I earn a living. So in this video I'm going to quickly explain how and where I grew up.

I was born in Phoenix, Arizona, in the USA in 1986. My mother is from Hawaii, and she's Chinese, so I'm half Chinese. Visiting Hawaii, where food is a huge part of the culture, is where I first became so obsessed with all things food. My grandfather was a Chinese chef, so food has been a big part of my family.

My parents are Christian missionaries, so when I was 5 years old, we moved to France for a year. I attended my first year of school in France. We then moved to DR Congo, which was then known as Zaire. We lived in the middle of the jungle and as a kid I would run around exploring and eating interesting and rather bizarre jungle creatures. Due to war in Zaire, we moved to Nairobi, Kenya, where I attended a Christian international school for 8 years until graduating from high school. After high school I went back to Arizona and attended Arizona State University for 4 years, graduating with a degree in global studies.

After graduating, I didn't want to just get a job, so I started traveling again. I traveled in South America and then went to Asia where I finally got a job teaching English for a year. During that year though, I decided not to ever teach again but to do everything I could to make it as a freelancer on the internet and be able to have freedom to travel (and eat). It was in Thailand that I met my girlfriend, who is now my wife, so I am married!

This brings us up to now. For a living I do a combination of selling my own ebooks, freelance writing, making videos, and all sorts of other random projects like SEO and social media marketing.

KOCHI, KERALA, INDIA - Kochi is the biggest city in Kerala. It’s a vibrant and busy city, but still relaxing in comparison to many of the larger cities in India. We only had a short time in Kochi on our final day before flying out of Kerala, so we made the most of it. This Indian street food tour of Kochi includes a number of impressive drinks, hand-made soda making and mixing, and a 13 quail eggs dosa! #Kochi #Kerala #India

Kerala Snacks - To begin this food tour, we first stopped for some afternoon snacks and tea, including vada, fried eggs, and some samosas. 152 INR ($2.15) - Total price for 5 people

Soda - Also known as marble soda, or Goli Soda of Kochi, the juice or water is filled into marble top bottles, spun with gas, and instantly emerges a carbonated soda beverage. That’s incredible, but the magic for me is when they mix in lime juice, salt, sugar syrup, and pop the marble bottles to open, and mix a fresh soda beverage for you. Amazing place to see and drink sodas in Kochi, Kerala, India. 20 INR ($0.28) - About price per soda

Sundarams Dosa - Kochi, India - For dinner, we headed to Sundarams Dosa, a place to eat amazing variety styles of dosa in Kochi. I immediately went for the 13 quails egg dosa. They were so cool, and added extra chili powder and chutney. One of the best dosas I’ve ever had in my life as well, so incredibly good!

Drink Magicians - Easily some of the best bartenders in the world, Kochi is famous for their drink shows. They mix chilies and juice, and shake them so hard, they almost carbonate on their own. One of their signature moves is squirting milk as it splashes into your cup. 50 INR ($0.71) - About price per drink

Finally, we ended this Indian street food tour of Kochi with hot chips - freshly fried Kerala banana chips.
