This Man’s Village Butter Idli & Chutney Put PANDAVAPURA On The Map! SHIVAPPA IDLI Home, Darsaguppe

Pandavapura, located on the state highway between Srirangapatna and Melukote in Mandya district of Karnataka, would perhaps not have registered as a breakfast stop on the traveller’s map, but for an idli shop that goes back over three decades. Actually, it isn’t even a shop, but a window in 60-something-year-old Shivappa’s home from where he dispenses freshly steamed idlis (only) with home churned butter for a few hours each morning. Travellers on the route, and even those who journey from afar just to eat here, line up outside the window, even before it is flung open at 7am.

Shivappa’s enterprise bears no signboard and he employs no one, preferring to do everything himself, from preparing the chutney and the butter to the soaking and grinding of the grain, the fermentation and steaming of the idlis, helped only by his wife. When you are here, you need to abide by his “seemingly authoritarian” rules - register your order, collect a token in exchange for your payment, and wait patiently for Shivappa to steam the idlis fresh and call your token number! This may seem like a bit of a drill, until you take a bite of the spicy chutney soaked idlis, and then it all seems to make sense. Like we discovered when we drove 130 kilometres from Bengaluru for breakfast recently. Hope you enjoy this episode; take care, stay safe and happy eating.

Gangadhar, real name Krishnamurthy, is a man who wears many hats - former president of the gram panchayat, farmer and eatery owner. It is the last hat though that is relevant here. 16 years ago, he set up a makeshift shed to serve the famous Kyathasandra thatte Idli but away from the bustle of the main Tumkur highway, on a narrow village road leading to a tiny hamlet, Kesaramadu. Slowly but surely the popularity of his solitary village eatery grew for its thatte Idli, dosae and simple rustic lunch that came as a boon to the farming folks around. However, four years ago some customers recommended that he try roasting the Idli in ghee, and thus was born his, now-referred-to-as, Kesaramadu Roast Idli. Thatte idlis are steamed, cooled and then slow roasted on a dosae tawa with liberal lashings of ghee. Ten minutes later, the idlis take on a delicious, buttery crust that sends the palate into raptures brought on by molten streams of ghee. And it is this idli that seems to have put Gangadhar Idli Hotel, Kesaramadu, on the food lovers map! Hope you enjoy this rustic breakfast episode. Take care; stay safe and strong. Happy eating!

After completing the 10th grade, a young lad decided to help his father in their village idli shop in Kanakapura, 60 kilometres from Bengaluru. Half a century on, Mr. Ramchandra has remained steadfast to his father’s culinary tradition, steaming fragrant idlis over a wood fire. A one-man army, he procures the ingredients, prepares the wood to fuel the decades-old stove, soaks the rice and lentils, grinds and carefully ferments the batter, before rising at 4am each morning to make a spicy chutney, and steam over 3000 idlis, 500 in a batch, that run out before noon! Working with the energy and enthusiasm that is hard to imagine in a modern-day sextagenarian, Ramchandra swears by the philosophy of “cheap and best”, in his words, selling four piping-hot idlis for only Rs. 10, or Rs. 2.50 a piece! The quality and appeal of the soft, fluffy idlis are such that patrons don't mind a two-hour drive just to breakfast at this old-fashioned Kote Idli Mane. The idlis are soft and porous, yielding with a slightly pasty texture in its weight. The size of the idlis are such that you can happily savour about four to six without feeling its burden. The spicy, roasted gram and red chilli chutney makes for a delicious accompaniment to the fragrant idlis.

Delicious VILLAGE Tradition, CHIBLU IDLIS Steamed In Bamboo Over Wood Fire | BABU HOTEL Halaguru

The chiblu idli dates back to an era when modern kitchen conveniences of utensils weren’t easily available in villages, and so people would fashion cooking vessels out of resources handy. In the absence of present day idli steamers, village folk would steam idlis in baskets, known as ‘chiblus’ in kannada, made of bamboo, over a wood fire. And thus, these soft, aromatic chiblu idlis came into being. The painstaking effort required to steam idlis using this old-fashioned approach has caused this ancient practice to all but disappear. We travel 80 kilometres to Halaguru to savour this delicious tradition at Babu Hotel, a tiny village eatery that has been serving up the chiblu idli for over half a century now. Chiblu Idli
The chiblu idli is aromatic and steaming hot, served with a dollop of butter and alongside palya and red chilli chutney. The idli is soft, porous and carries a tart edge from the fermentation, that the butter helps balance against. The kempu chutney has a good balance of spice, and the crunch of the coconut complements the grainy bite of the hurigadale (roasted gram). The palya is savoury with the flavour of the onions.

Mrs Prema continues in the legacy of her father, Mr Venkateshwara, who began a tiny idli hut in a bylane of Hassan adjoining the main market area. Over time the eatery moved to a tiny shop down the road, but its main offering, the idli continues to be a crowd pleaser, even 36 years on! Over 1500 of these are steamed each morning, to a unique batter that incorporates kusubalakki, urad dal and sabakki, sago pearls, in equal proportion; the Idlis are soft and sponge-like in texture to drink up the ghee that is drizzled over. It is served with a unique onion palya that is only tempered with salt and turmeric, and a fiery red chilli chutney made of peanuts, red chillies, cumin and garlic. The decor here is nothing to speak of, just some benches strewn around a tiny shed, but it doesn't seem to deter its patrons from lining up in queues to savour piping hot idlis for only the four or five hours they are open for business every morning.

The origin of this iconic Bidadi thatte idli shop dates back to the 1950s when it came into existence as a tiny village eatery in the middle of nowhere (then), steaming and serving large plates of the acrey idli, an early precursor to the modern day thatte idli. What makes Sri Shiva Darshana Shashi Thatte Idli Hotel the most popular stop on the Bengaluru-Mysuru highway today though is the owning family’s commitment to its culinary legacy over five generations. I stop by for a chat and to taste the idli that in a manner of speaking has put Bidadi on the food lovers’ map.

Thatte Idli
The thatte idli is pillowy, it is as “soft as air” and breaks under the effect of gravity! Definitely order the butter with the idli, it’s a premium worth paying. The butter seeps through the porous structure of the fragile idli and makes for a bite that melts the moment you place it in your mouth. The chutney delivers a potent chilli punch, the potato saagu is creamy and provides for respite from the spicy yet addictive red chutney. The masala vada makes for a savoury interlude whilst tasting the idli. On the whole, this is an idli that is worth driving 50 kilometres for!

It is a well-known fact that Pavithra Idli Hotel on NH 48 in Khyatasandra, just outside Tumakuru is famous for the thatte idli that they have been dishing out for 36 years now. But what I found most interesting is the meticulous attention to detail of the owner, Mr. Udaykumar, he actually refers to himself as the third owner, the first two, he says, are his customers and employees, in his well-planned and spacious kitchen, that is more than twice the size of the dining area, and could perhaps outrival most traditional kitchens on the highways of India. So confident is he about his back areas that he offers willing customers a tour without hesitation. It is no wonder then that the fare served here - the thatte idli, and also a scrumptious mini benne masala dosae that I wasn't expecting - has swarms of fans for whom a stop at Pavithra Idli is a must when on the road here.

Iyer Idly, a tiny shop opened 19 years ago, selling idli batter to a community of busy scientists and engineers in the East Bengaluru neighbourhood of Vignan Nagar. In time, the shop added hot idlis in response to customer requests, and has since served only the idli and nothing else! The founder, Mr. M K Mahadevan passed on a few years ago, but his legacy continues with his wife, Mrs. Uma Devan and son, Krishnan Mahadevan, who till date make idlis the old-fashioned way, each batch of rice and urad dal batter fermented overnight, before being steamed and served with a spicy chutney that has won numerous fans for Iyer Idly not just in its neighbourhood but across the city. Idli Chutney
The idlis are made the traditional way from idli rice and urad dal that is ground to a batter and fermented overnight. The result is an idli that is soft and grainy, slightly pasty and aromatic, with a touch of tartness. It is served with a spicy chutney that some say is more popular than the idli here. This combination though is definitely the sort that makes Iyer Idly a sought after destination for what is perhaps one of Bengaluru’s favourite breakfast dishes.

Channe Gowda moved to Bengaluru from his native place, Kunigal 10 years ago to eke out a living and supplement his family’s marginal farming income. He tried his hand at many a job and trade, barely managing to make ends meet. A couple of years ago, he set up a food cart in Banashankari, South Bengaluru on the back of non vegetarian recipes gleaned from his well wishers. This too met with limited success, it was at this point that he introduced a thatte keeping in mind the clientele in the area. And that was when things changed. His soft and spongy 15 rupee thatte idli served with butter and two delicious chutneys caught the attention of locals and demand grew to an extent that he gave up the non veg menu to only focus on the idli, vade and a single rice preparation. Unable to cope with the stream of customers, Channe Gowda eventually moved operations to a house in the area, from where he continues to serve hundreds of his now famous Kunigal thatte idli each day.
From a street cart that would barely support him, he now provides livelihood to a team of fifteen! I set out this evening to meet this hard-working gent, and in the course of doing so, not only tasted his satisfying idlis, but also stumbled upon a flavourful tomato rice that he makes to an aromatic biryani recipe.

Softest Thatte Idli In Temple Town At 100-Yr-Old SUBBANNA MESS, Melukote | Must-Try Breakfast

During my lunch visit a few months ago to Subbanna Mess, a 100-year-old eatery in the temple town of Melukote in Karnataka, I happened to steal a glance at the preparation of the thatte idli batter, for breakfast the next morning. I was intrigued by the high proportion of urad dal as compared to typical idlis, and so made a mental note to return. And when we did, we were rewarded with tasting one of the softest idlis that I have ever eaten, in combination with a delicious, warming cucumber gojju made. I also savoured their scrumptious no-onion masala dosae, again with an interesting twist, and their world-famous creations - puliyogare, bella pongal and sakkare pongal. When it comes to savouring soft idlis and crunchy vadas, all roads in South Bengaluru lead to Sri Lakshmi Venkateshwara Coffee Bar, or SLV as this string of eateries is popularly known. And it is no surprise given the fact that the brothers behind this tiffin house enterprise have over 125 years of combined experience in the making of the idli, vada and khara bath, beginning with extended stints at the iconic Brahmins’ Coffee Bar where they learnt the trade. I met the brothers behind SLV, Srinivas Bhat, Krishna Bhat and Anantha Bhat at their flagship eatery as it completed 35 years last month to find out what makes their offerings so special.

Idli
The idli is porous and the sort that dissolves in the mouth when steaming hot. The chutney makes for a flavourful accompaniment to permeate through the idli with its ‘flowing’ consistency and spicy fervour. One of the best idlis one can taste in Bengaluru. The butter, to be honest, is an unnecessary but decadently tasty indulgence!

The vade here is double fried ensuring a crisp crunchy bite from the first bite to the last, on the inside it is soft and porous, speckled with black pepper, green chillies and curry leaves.

Although established at its present location in 1926, its culinary provenance dates back to the early 1900s. One of Bengaluru’s oldest eateries, Udupi Sri Krishna Bhavan has not received the kind of recognition other eateries of its ilk have perhaps due to its location amidst the hustle and bustle of Balepete. The food here is prepared the old-fashioned way, not the sort that swims in rivers of ghee or is buried under mounds of butter, khoa, or other such dairy decadence. Which is good, especially if you want to indulge, sans any guilt, in its tasty South Canara fare, like many of its regular patrons, some who have been visiting for 50 years! ಇಲ್ಲಿ, 40ರೂಗೆ ಒಂದು ಪ್ಲೇಟ್‌ನಲ್ಲಿ ಎಂಟು ಇಡ್ಲಿ ಹಾಗೂ ಬೆಣ್ಣೆಯೊಂದಿಗೆ ಚಟ್ನಿ ಸಿಗುತ್ತೆ. 60ರೂಗೆ 12 ಇಡ್ಲಿ. ಸುಮಾರು 35+ ವರ್ಷಗಳ ಹಿಂದೆ ಶಿವಪ್ಪನವರ ತಂದೆ ಆರಂಭಿಸಿದ ಈ ಹೋಟೆಲ್‌ಅನ್ನು ಶಿವಪ್ಪನವರು 30 ವರ್ಷಗಳ ಕಾಲ ನಡೆಸಿದ್ದಾರೆ. ಇದೀಗ ಅವರ ನಿಧನದ ಬಳಿಕ ಅವರ ಪುತ್ರ ನಡೆಸಿಕೊಂಡು ಹೋಗ್ತಾ ಇದಾರೆ. ನಾನು ಸುಮಾರು 4 ವರ್ಷಗಳಿಂದ ಇಲ್ಲಿಗೆ ಹೋಗ್ತಾ ಇದೀನಿ. ಶಿವಪ್ಪನವರ ಕಾಲಕ್ಕೂ, ಈಗಲೂ, ಇಡ್ಲಿಯ ರುಚಿ ಮಾತ್ರ ಸ್ವಲ್ಪವೂ ಬದಲಾಗಿಲ್ಲ.

Prabhakar Hegde moved from his native Sirsi in Uttara Kannada to Bengaluru in the nineties to earn a livelihood. He found employment at the iconic Veena Stores in Malleshwaram, and after a few years of working there decided that cooking and serving tiffin was his calling. He went on to open a tiny store in Vidyaranyapura, a far flung locality in North Bengaluru, 23 years ago, a place so remote that back then only a handful of buses would ply there each day. However today, the area has grown into a bustling suburb, and so has Hegde’s Fast Food which is now a cornerstone of the neighbourhood for its idli, vade and a couple of other thindi items. Having received a bunch of recommendations in support of this shop, I visited Hegde impromptu for a chat one evening with him, and also with the locals who have monikered this place as the Veena Stores of Vidyaranyapura.

Thriveni and Narayana Bairy’s SLV Coffee Thindi sits in a distant suburb of South Bengaluru. But in the nine years that it’s been around, this darshini style eatery has garnered quite the reputation amongst locals for its soft idlis, part of a short menu of only five or six tasty tiffin dishes that are personally prepared and served with much care and attention by the husband-wife duo. On weekends, their children chip in too. The fare served also draws from Narayan’s experience at some fabled eateries where he first worked when he came to Bengaluru from Kundapura 25 years ago, Do taste their delicious tiffin thindi and support this hard working family’s business.
