Tajik cuisine:
Tajik cuisine is a traditional cuisine of Tajikistan, and has much in common with Russian, Afghan, and Uzbek cuisines. Plov (pilaf) (Tajik: палав, Uzbek: palov), also called osh (Tajik: ош), is the national dish in Tajikistan, as in other countries in the region. Green tea is the national drink.
Palav or osh, generically known as plov (pilaf), is a rice dish made with shredded yellow turnip or carrot, and pieces of meat, all fried together in vegetable oil or mutton fat in a special qazan (a wok-shaped cauldron) over an open flame. The meat is cubed, the carrots are chopped finely into long strips, and the rice is colored yellow or orange by the frying carrots and the oil. The dish is eaten communally from a single large plate placed at the center of the table, often in with one's hands in the traditional way.
Another traditional dish that is still eaten with hands from a communal plate is qurutob, whose name describes the preparation method: qurut (Tajik: қурут, dried balls of salty cheese) is dissolved in water (Tajik: об, ob) and the liquid is poured over strips of а thin flaky flatbread (patyr or fatir, Tajik: фатир, or more accurately фатир равғанӣ, fatir ravghani, i.e., fatir made with butter or tallow for flakiness). Before serving the dish is topped with onions fried in oil until golden and other fried vegetables. No meat is added. Qurotob is considered the national dish.
Meals are almost always served with non (Tajik: нон), flatbread found throughout Central Asia. If a Tajik has food but not non, he will say he is out of food. If non is dropped on the ground, people will put it up on a high ledge for beggars or birds. Legend holds that one is not supposed to put non upside down because this will bring bad luck. The same holds true if anything is put on top of the non, unless it is another piece of non.
Traditional Tajik soups include mainly meat and vegetable soups (such as shurbo and piti), and meat soups with noodles (such as laghmon and ugro). Other dishes shared regionally, either as fast food or as an appetizer, include manti (steamed meat dumplings), tushbera (pelmeni), sambusa (a triangular pastry with either a meat and onion stuffing or a pumpkin and onion stuffing, baked in a tandoor oven), and belyash (pl. belyashi, Tajik: беляши, deep-fried cakes made of yeast dough and filled with minced meat, similar to pirozhki).
Soviet cuisine both influenced and was in turn influenced by Tajik cuisine.Wikipedia

$5 Traditional Food Experience, In Dushanbe, Tajikistan ????????

Another Stan country, not many people know about. Isetan is the old Persian word for place of. In this case, Tajikistan means place of the Tajiks. In Persian, taj means crown, and ik means head. Thus Tajik means a person who wears a crown. How cool, right?

I love how the countries in Central Asia are in close proximity to each other, yet they are distinctive in terms of language, currency, food, traditions, and nature. Each country's unique specialty sets it apart from the others.

Dushanbe is surprisingly such a clean city, with so many modern buildings. But, Dushanbe lacks Soviet architecture when compared to other Central Asian capitals. But this absence isn't accidental. Since Tajikistan gained independence, its authorities have been actively removing as many Soviet-era buildings as possible and replacing them with contemporary structures to highlight its new sovereign identity.

If you don't speak Russian, traveling here can be challenging as English proficiency is lacking. But I can assure you that you will have wonderful memories and unforgettable experiences in the capital city of Tajikistan. ????????

Country #38 Tajikistan

Tajikistan/Khujand (Panjshanbe Bazaar Square) Part 21

Welcome to my travelchannel. ☛☛☞☛
On my channel you can find more than 1000 films of almost 100 countries. See the playlist on my youtube channel.Enjoy!
Panjshanbe Market, Khujand (Bazaar called “Thursday”)
Covered market Panjshanbe is one of the most colorful sights of Khujand. Its name sounds similar to the name of the capital city – Dushanbe for a reason. Both names mean days of the week: Dushanbe – Monday, Panjshanbe – Thursday. They used to have trade on Mondays in Dushanbe, and on Thursdays in Khujand.
Panjshanbe Market or, bazaar, is located in the center of Khujand, opposite Sheikh Muslihiddin mausoleum. The bazaar consists of the main pavilion and many stalls, tents and shops adjust to it. It is always noisy there since not only residents of the city but also neighboring villages flock there for shopping.
The main feature of the Panjshanbe market is its unique architecture and design. Construction of the pavilion took place in the middle of the 20th century and finished in 1964. The building of the bazaar combines elements of classicism and Stalin’s Empire. The interior combines Soviet and oriental styles. There is a semi-spherical portal above the central entrance adorned with a bright painting and sculptures of man and woman on the sides. When you enter, you will see a long arched hall with a row of columns.
Panjshanbe market offers a big variety of goods that can be divided into two parts, grocery and non-food. On the ground floor, there is a huge hall where you will find fruits and vegetables, bread and spices typical for any bazaar in Central Asia. There you can feel the real color of the oriental market. The first floor places numerous shops and stalls selling clothing, electronic devices and household items. Shopping arcade is common for post-Soviet area.
If you are planning to visit Khujand, we definitely recommend you to take a walk to the Panjshanbe market to make your trip to this ancient city complete.

Third video from our Tajikistan Series. We took a mashrutka, went to Hisor Castle, went to the Melon tea house, and then ate at a Tajik restaraunt. It was a full day. If you are ever in Dushanbe you should try and go to Hisor and possibly the Melon tea house. Also you should try and eat Osh at least once.

Tajikistan/Khujand Visit Rauf's Family (Amazing Hospitality) Part 18

Amazing Hospitality in Tajikistan:
What should I say about Tajikistan? Tajikistan is one of the countries with the most hospitable people I ever met. You can knock on any door and ask “Chai? Plov?” and they will be like “Sure, come in. Drink my tea, eat my plov and sleep in my house.”. And then they will never just give you a simple meal, they will serve you all they have and stack plates of food, sweets and fruits over each other making sure there is no empty space left on the table / floor.
Still Tajikistan is definitely the poorest of all Central Asian countries with more than 50% of the gross national product being people working abroad sending money back home. It is interesting how much the people glorify the time of the Soviet Union when everyone had enough food, electricity and jobs.
Tajiks are the warmest, most welcoming people I have ever met. Hospitality here is a sacred value, and guests are treated with immense kindness and respect. Wherever I travel in Tajikistan, I am greeted with offers of tea, dinner and conversation from total strangers.

Dushanbe-Tajikistan
Dushanbe is the capital and largest city of Tajikistan. Dushanbe means Monday in the Tajik language. It was named this way because it grew from a village that originally had a popular market on Mondays. As of 2016, Dushanbe had a population of 810,700.
Historically a small village, Dushanbe was made the capital of the Tajik Autonomous Soviet Socialist Republic in 1924. Until 1929, the city was known in Russian as Dyushambe (Russian: Дюшамбе, Dyushambe), and from 1929 to 1961 as Stalinabad (Tajik: Сталинобод, Stalinobod) which was named after Joseph Stalin.
Situated at the confluence of two rivers, Varzob and Kofarnihon, Dushanbe is the capital of Tajikistan. Although archaeological remnants dating to the 5th century BC have been discovered in the area, there is little to suggest that Dushanbe was more than a small village until the early 20th century.
The first written mention of the village of Dushanbe occurred in 1676. It was at the crossroads, where a large bazaar occurred on Mondays, hence the name Dushanbe-Bazar (Tajik: Душанбе Бозор, Dushanbe Bozor) from Dushanbe, which means Monday in the Persian language, literally – the second day (du) after Saturday. In the village, there were more than 500 households and a population of about 8,000 people.

Navruz Palace&Komsomol Lake:
There is no shortage of high-level meetings and conferences taking place in Dushanbe. During 2014 it was nicknamed “The Diplomatic Capital of Central Asia” based on the high tempo of such events. The spectacular Kohi Navruz (Navruz Palace) hosted the 2014 Shanghai Cooperation Organization Heads of State Summit, which was attended by the presidents of Russia, China, Kazakhstan, Uzbekistan, Kyrgyzstan, Turkmenistan, Afghanistan, Mongolia and Iran.
The incredible building has been designed to reflect Tajik culture and diversity. Its various event halls are incredible to behold. Some have been painted in the ancient Persian manner with murals. Others are hand carved out of wood to reflect national symbols, while another is set with precious stones found across the republic. Murals of the nation’s heroes and poets have been set in a serious of domes around the outside of the building amongst gardens and fountains. The facility has been opened to the general public and even includes a bowling alley.
Dushanbe, Tajikistan - Choikhona Kokhi Navruz Billed as the largest teahouse in the world, the Choikhana Kokhi Navruz contains a cinema, nightclub, and various other venues and is decorated in traditional motifs.
In adjacent Komsomol Park, where Dushanbintsi can enjoy a swim or a game of billiards before tucking into some shashlik and beer, passersby generally say they think the structure is beautiful, though several expect it will not be open to the public, much like the $300-million Palace of the Nation across the lake, or a storied tea house in Dangara, President Imomali Rahmon’s hometown.

Tajikistan:
Tajikistan is a mountainous, landlocked country in Central Asia with an area of 143,100 km2 (55,300 sq mi) and an estimated population of 8.7 million people as of 2016. It is bordered by Afghanistan to the south, Uzbekistan to the west, Kyrgyzstan to the north, and China to the east. The traditional homelands of the Tajik people include present-day Tajikistan as well as parts of Afghanistan and Uzbekistan.
Geography
Tajikistan is landlocked, and is the smallest nation in Central Asia by area. It lies mostly between latitudes 36° and 41° N, and longitudes 67° and 75° E. It is covered by mountains of the Pamir range, and more than fifty percent of the country is over 3,000 metres (9,800 ft) above sea level. The only major areas of lower land are in the north (part of the Fergana Valley), and in the southern Kofarnihon and Vakhsh river valleys, which form the Amu Darya. Dushanbe is located on the southern slopes above the Kofarnihon valley. The Amu Darya and Panj rivers mark the border with Afghanistan, and the glaciers in Tajikistan's mountains are the major source of runoff for the Aral Sea. There are over 900 rivers in Tajikistan longer than 10 kilometres. Demographics
Tajikistan has a population of 8,734,951 (2016 est.) of which 70% are under the age of 30 and 35% are between the ages of 14 and 30. Tajiks who speak Tajik (a dialect of Persian) are the main ethnic group, although there are sizeable minorities of Uzbeks and Russians, whose numbers are declining due to emigration. The Pamiris of Badakhshan, a small population of Yaghnobi people, and a sizeable minority of Ismailis are all considered to belong to the larger group of Tajiks. All citizens of Tajikistan are called Tajikistanis.
In 1989, ethnic Russians in Tajikistan made up 7.6% of the population, but they are now less than 0.5%, after the civil war spurred Russian emigration. The ethnic German population of Tajikistan has also declined due to emigration: having topped at 38,853 in 1979, it has almost vanished since the collapse of the Soviet Union.
