Uzbekistan Day 1: Tashkent

On Day 1 in Uzbekistan we went on an ultimate Uzbek street food tour in Tashkent, including the biggest bazaar in the city, and the most massive plov (rice pilau) cooking in Tashkent.

We had arrived at the airport in Tashkent at about 4 am in the morning, and at 9 am we were ready to start eating our way through the city.

First we met up with Bekruz and Akbar both from the Ministry of Tourism Uzbekistan (Bekruz is the one who invited me to Uzbekistan and arranged everything for us, so thank you Bekruz!), and Ravshan (check out his channel: a local food vlogger in Uzbekistan.

Two of the most important phrases you should know in Uzbek are:
Assalomu Alaykum - Hello / Greeting
Rahmat - Thank you

Bread Bazaar, Tashkent - We started this ultimate street food tour at the bread bazaar in Tashkent, a market dedicated fully to bread, with a little fruit and other things mixed in. We bought some break, some kaymak, and some fruit and then went to a nearby restaurant where they laid everything on the table for us, along with tea. Uzbek breakfast was a great way to get started.

Chorsu Bazaar - The grandest bazaar in Tashkent is Chorus Bazaar, and it’s a perfect place to get a feel of Uzbek culture and food. We first stopped at the food court to try hanum, a type of dumpling filled with potato and somsa. Then we continued to the dome shaped iconic part of the bazaar, filled with fresh meat and spices. It’s one of the coolest market structures anywhere in the world.

Plov Center - We kind of had to rush out of Chorsu Bazaar because although they prepare 1,500 Kilos, seriously, of rice plov per day, it only takes 2 - 3 hours before they run out everyday. So we got there, already one of the monster swimming pool pans was finished, but they still had a few others going and serving. Plov is the national dish of Uzbekistan, a food that’s eaten on every and all occasions. For Tashkent plov, it’s pretty heavy on the meat at oil, with rice, chickpeas, and raisins. Also it included, qazi - horsemeat sausage which is a delicacy. It was incredibly delicious, and proper meal experience.
Total price - 100,000 UZS ($12.21)

Plov is love, remember that when you’re in Uzbekistan.

National Food Restaurant - After strolling around for a while in the afternoon, we continued to a National Food restaurant, a laid back family style restaurant that serves all things Uzbek food. Along with a number of dishes, the main dish I was most interested in was the naryn, thin slices of dough mixed with minced meat and horse. It was interesting, and quite good, as were the other dishes.
Total price - 110,000 UZS ($13.43)

Sultan Suleyman Restaurant - For dinner we went to a bit of a fancy trendy restaurant, and had another platter of food. This time, dough noodle like sheets topped with meat, horse sausage again, and green onions.
Total price - 122,000 UZS ($14.90)

KING of Uzbekistan STREET FOOD - 1.5 TONS of Rice Plov + Bazaar Tour | Tashkent, Uzbekistan

My second day in Tashkent, Uzbekistan continued with another amazing Uzbekistan street food tour! Come along with me as I try the national dish, plov, and go on a tour of another amazing bazaar!

My adventure began at the Plov Center, the best place in Uzbekistan to eat plov!

Inside, I saw a massive pan of plov. There were seven different vendors . You can order from a vendor or from a waitress inside. The waitress takes longer, so I decided to order from the vendor. My order came to 25,000 som, or $3 USD!

I loved seeing them mix the oil into the rice and watching them plate it. It’s a meal and an attraction!

Inside, there’s also self-serve bread, salads, and fresh fruit juices. It’s self-serve, so you can grab some inside, or order from a waitress. We decided to eat upstairs so I’d have a view.

My plov was a mix of lamb and beef, chickpeas, raisins, quail eggs, white and yellow rice, and horse sausage. My first salad contained tomatoes, cucumbers, and onions, similar to a Greek salad. The other had pickles and cabbage.

The plov was a little sweet because of the yellow carrots and raisins. It reminded me of a dish I’d had in South America. It was one of the tastiest rice dishes I’ve ever had. I loved the oil throughout, the vegetables, and the different meats. It created a nice contrast of flavors that was so different from Indian biryani!

The horse sausage was very gamy, salty, lean, and tender. Together with the plov, it was an insane combination. It was like the different meats all married each other! The juice, meanwhile, was both minty and fruity.

The quail egg with the plov was very different, but the plov was a masterpiece! Next, I took some of the cucumber and cabbage from the salad and mixed it into the plov. The cucumber was pickled and was fresh and crunchy. I loved the contrast between it and the oily rice!

Then I mixed the tomato salad into the plov. It was super sweet, juicy, and fresh. Everything was so fresh and tasty!

Our next stop was the Oloy Bozori. The bazaar was in a beautiful, modern building with 30-40 foot ceilings. I could see fruits, nuts, and spices. It felt cleaner than Chorsu Bazaar and was very nice!

Vendors offered me some tasty figs and strawberries. The strawberries were out of season, so they were small, but good. They only sell the highest-quality foods here.

Everyone wanted me to try their food! I had some fruit and some medicinal-tasting green tea. It gave me instant energy! Next, we saw some organic Uzbek tomatoes. I was given some hot Samarkand mountain tea, which was light and herbal!

The aroma around the herbs was so good! I tried a strong Uzbek milk ball. It smelled like strong, fresh, unpasteurized cheese! It was like I was drinking it straight from the cow!

Then, we headed to Independence Square. It represents the independence of Uzbekistan. We could see the President’s house nearby. We had to pass through a metro station to get there. There were two fountains and an aqueduct-like monument. There’s another monument that honors all the Uzbeks who died in World War II. There’s also an eternal flame.

My grandparents were directly affected by World War II. I wouldn’t be here if they hadn’t met during it. This war affected everyone in the world in some way. We passed by the fountain again while the water was shooting straight up. It felt much cooler there!

We went back through the metro station and paid 1,400 som each/$1.50 USD. It was the fanciest metro station I’ve ever seen. It was beautiful and had lots of marble pillars and chandeliers. It was built by the Soviets. All the stations in Tashkent are incredible!

The national dish of Uzbekistan is an aromatic rice pilaf known as plov. It is enjoyed as a weekday meal and specially prepared for holidays and wedding feasts. ????????Considered Uzbekistan’s national dish, it is impossible to visit Uzbekistan without eating plov (probably more than once). For over 20 years, Central Asian Plov Center has been satisfying taste buds, serving 2,000 people on a daily basis. They’re known for their giant Khazan, where one batch of plov contains 65kg of meat, 100kg of rice and about 30kg of carrots.

????PLOV: Beef and lamb, onion, sunflower oil, yellow carrots, chickpeas, black pepper and other spices, lamb fat, raisins, garlic and chili (optional).

2. UZBEKISTAN ASSOCIATION OF CHEFS: Grilled Catfish in Clay + Blooming Fried Carp
ADDRESS: Tashkent, Uzbekistan

The majority of chefs in hotels and restaurants in Tashkent graduated from Uzbekistan Association of Chefs. 20-year-old Ahmadjon Hamdamov is one of Uzbekistan’s top chefs. At the age of 14 he took home his first medal as the champion of the Global Cooking Contest in Greece.

????????GRILLED CATFISH IN CLAY: First the chef marinates the catfish with black pepper, white pepper, salt, chicken egg yolk, mixture of salt and egg white. Then he mixes the clay (from the Uzbek mountains) with water, coating the fish in a thick layer of the mixture before wrapping it with aluminum foil and letting it cook for 35 minutes.

????Abdurahman Foziljouov opened Qanotchi in 2017 and quickly became famous for his ability to combine cooking and entertainment. Known as the Uzbek “Salt Bae,” he has garnered national attention and even received a visit from the original Salt Bae.

????CHINESE NOODLES: Begin by boiling noodles. Prepare the gravy (includes sunflower oil, lamb marinated with soy sauce and eggs, onion, green pepper, red pepper, cabbage, garlic, salt, soy sauce, tomato, bok choy, tomato sauce, water, MSG and ginger powder). Finally, pour the sauce on top of the noodle dish and enjoy!

Uzbekistan's ULTIMATE STREET FOOD - Rice Plov + Paper & Silk Workshop Tour | Samarkand, Uzbekistan

With my final adventure in Samarkand upon me, I headed out to go on a paper & silk workshop tour and tried more of Uzbekistan’s ultimate street food, rice plov! Come along with me as I wrap up my exploration of Samarkand!

I started at a local paper workshop where they make paper the ancient, traditional way! The place looked like a really old house, and there were streams running through the property. There was even a water wheel!

I watched as the women skinned tree branches and put the skin in buckets of water. Then, they soak it for three days and then boil it for five hours!

Outside the next room was a stream with a huge log connected to a turning wheel. As the log turns, it makes a mechanism inside the room pound the boiled skin from the branches, which is put in a frame. It takes nine hours for the machine to pound the skin. They press it with a large rock for an entire day, and after that, you have paper! They make two types of paper: one from trees and one from cotton.

Once the paper is pressed, it’s put up to dry. It takes 5 hours to dry in summer and an entire day in the winter. After it dries, they smooth it by rubbing it on each side with a stone for 15 minutes.

I got to try it myself! It was intense work, but I could see the excess fibers coming off it. They use the paper to make lots of different products, including masks, hats, purses, dolls, and clothing! The masks cost 400,000 som/$42.06 USD each, but I bought 3 and negotiated down to 350,000 som each. They were really unique. This is the only place in Uzbekistan where you’ll find them!

Always carry cash in Uzbekistan; they don’t really use credit cards here.

Next, at the silk-weaving workshop, I learned that they can get 1,200 meters of thread from one silk cocoon. They only use natural vegetable dyes from things like roots, flowers, and pomegranate skin.

They have 80 women working there. To see them, I walked through the facility, past lots of the rugs they make, which were displayed on the walls. The craftsmanship in them was incredible. They take months to complete! They make silk carpets here, while their factory in Afghanistan makes them out of wool.

The women here work from 9 to 5, 5 days a week. They don’t switch up designs here. Instead, they use old, traditional patterns because they have special meaning. This is the largest silk factory in Central Asia.

I was blown away by the carpets in the showroom. There were so many colors and sizes. The smallest cost $80 USD, while some of the larger ones were at least $1,000 USD.

Next, we headed to Axmadjon Lux Osh to eat some plov! The chef prepared a huge one for me. The carrots go on top of the rice here, followed by beef, chickens, horse, eggs, chickpeas, cucumber, and a huge piece of fat!

The plov came with bread, tomato salad, yogurt, and a minty yogurt drink. This one was different from others I’d had because it had chicken in it.

The rice was nice and oily and I loved the yellow carrots. I couldn’t get enough of the horse sausage, and the quail egg was really tasty. The chicken was a tiny baby chicken. Inside, it was like minced chicken! This plov was so different from other rice dishes I’d had around the world. The yellow carrots added a nice sweetness. There was also a spicy red pepper!

I mixed some yogurt with the rice and meat, which blended really well with everything! I loved it! The horse was gamy but so good. Then I tried some super strong vodka!

I ended with the tomato, onion, and cucumber salad. It’s refreshing and similar to Greek salad, only without the feta cheese.

????????In Uzbekistan, samosas are typically filled with meat (mutton, chicken or beef), vegetables (pumpkin, potato or onion), mushrooms, eggs, peas, herms and even a sweet ingredient from time to time. What makes an Uzbek samosa stand out (as is the case with most Uzbek dishes) are the spices used to enhance the flavors - zira, black and red hot pepper and sesame to cover the samosa.

Uzbekistan Day 4: Full historical sights and food tour of Samarkand, Uzbekistan!

Samarkand is a monumental city of history and food that played a major role along the Silk Road, in between China and the Mediterranean. It’s a city of fascinating history, giant plates of plov, and incredible kebabs.

Gur-e Amir Сomplex - To begin this full tour of Samarkand, we started in the morning at Gur-e Amir Сomplex, the tomb and mausoleum of Amir Timur, the founding father of Samarkand, responsible for building much of the ancient remains of the city. The tomb complex from the outside is impressive, but the inside will blow you away.

Registan - There’s no square more monumental and grand in scale than Registan, the center of the ancient city. You’ll find madrasas and mosques, all of which are intricately decorated and magnificent.

Siab Bazaar - A short walk from Registan is Siab Bazaar, right outside Bibi-Khanym Mosque. At the market we stopped to have tea with one of Bekruz’s friends and tasted some nuts and dried fruit. The apricot seeds were new for me, and the dried apricots were spectacular.

Osh Markazi - There’s no better place to eat plov, the national dish of Uzbekistan, when you’re in Samarkand than Osh Markazi. Samarkand plov is notable for the rice being cooked in flax-seed oil with yellow carrots and beef. It was one of the best meals and dishes I had in my entire trip to Uzbekistan.
Total price - 140,000 UZS ($17.17)

Ulugh Beg Observatory - At its time of being built by Ulugh Beg, it was one of the most advanced and important astronomy observatories in the world.

Domashnii Restaurant - We didn’t stay long at the observatory because right behind it you’ll find Domashnii Restaurant, a local restaurant that specializes in chickpeas and lamb. The dish is so comforting and both the lamb and chickpeas melt in your mouth.
Price - 74,00 UZS ($9.08)

Ikrom Shashlik - Next we went to eat Samarkand kebabs, again some of the best kebabs I had on my entire trip to Uzbekistan. The bull testicles and minced meat kebabs were great, but the highlight was the skewer of alternating thin lamb meat and fat. As I was leaving they told me their grill was 21 meters long and the grillmaster had been grilling there for over 20 years.
Price - 7,000 UZS ($0.86) per kebab

Shah-i-Zinda - At about 5 pm we arrived to Shah-i-Zinda, another masterful tomb complex that includes one of the top sights of Samarkand: the turquoise alley of tombs. The turquoise and blue mosaic will make your jaw-drop.

Home-cooked dinner - Finally to end this incredible food and sights tour of Samarkand we went to a family home restaurant where we enjoyed a simple local meal in a family home courtyard. It was the perfect ending to an incredible day in Samarkand, Uzbekistan.

Let’s look at some of the most delicious Uzbek food you need to try in this Central Asia country!

Let’s start with Shashlik! For this region typical grilled meat, which delicious smell can be felt almost everywhere.

Uzbek kitchen has many tasty soups, such as rice soup mastava and lagman noodle soup.

You can also taste traditional Uzbek Manti dumplings filled with meat or potatoes or pumpkin or have Lagman noodles as a main meal.

I can only recommend these green Noodles colored by dill, which are typical for town Khiva.

We cannot forget plov, the most favorite dish of Uzbek people. The base is lamb and rice and each region has its own variety and style. Of course, homemade plov is the best!

What Uzbek people love the most, is bread. You can find a lot of types of bread, such as this one, made in traditional clay oven.

Each Uzbek city has its own bazaar, where you can find so many fresh fruits and vegetable, spices, nuts, sweets and much more! Trying Kurt, balls made of drained yoghurt or milk, is a must!
