Needless to say, he also catches a full military-style breakfast that includes a nourishing paaya soup, chicken leg masala, chops, mutton liver, khaali dose and steaming hot donne biryani.

The gelatine has rendered well into the broth and glistens on the surface, you taste the flavour of the fat in the broth and the spicing too, especially the green chilli. The trotter is the sort that melts in your mouth.

Plump chicken legs cooked nice and juicy down to the bone. Definitely not a dish for the faint-hearted, you can taste the searing heat of the red chilli powder in this gravy. The onions, tomatoes and lime provide a mildly sweet-tart counterpoint to the chilli heat though.

The sweetness of the spices, the star anise, the mild astringency of the cloves, the fresh bite of the herbs, the pointed pungency from the green chillies, the tartness of tomato and the lime. The ghee coats the rice with a film of lushness, you can smell the smokiness from the dum. The chicken is delicate in its flavour, and not as effusive. Savour it with the rice to enjoy the complete range of flavours in this dish.

When Bengaluru emerged from lockdown months ago, Lokesh and Rajiv, the brothers behind Shivaji Military Hotel took a conscious decision to not reopen dine-in until the situation got better. This meant foregoing a substantial chunk of revenues and relying on takeaway business only, but this was something they were prepared to live with, for the safety of their customers and staff. So when they reopened the eatery to customers a couple of weeks ago, we lost no time in getting there to savour their hugely popular donne biryani and also report on the current experience at this 90-year old culinary institution that has a reputation for being jam packed with customers. We arrived to find certain measures in place, even though in precarious danger of being overrun by its patrons. Thankfully though, the taste of the donne biryani hasn't wavered a bit from the time we tasted it last nearly a year ago. Hope you enjoy this episode, stay safe and happy eating!

A warming, gently-spiced mutton bone broth, the trotters are cleaned well and cooked to melt-in-the-mouth texture.

The biryani is served steaming hot and is impressionable in its persistent aroma and spicy, flavourful fervour laced with green chilli heat. We tasted the donne biryani in takeaway mode where it is packed in foil, but it's not quite the same as when it is ladled onto a donne, a container fashioned of leaves.

The biryani has a slightly smokey tone, and the spices imbued with the weight of the fat and the character of the meat, is rounded in its flavour as opposed to the chicken biryani. The meat is juicy and has absorbed the flavour of the masala rather well. This is the textbook donne biryani, served by this revered culinary institution for the last nine decades.

It had been a while since I had filmed a biryani making episode. And so when the opportunity arose to film the complete process of a biryani whose recipe has remained constant for over a century, I lost no time to head to Taj Hotel Shivaji Nagar, an eatery that dates back to the early 20th century, and today churns out over 500 kilos of biryani each day. I met with the third and fourth generation of the family of the late Janab Abdur Rahman, who are committed to preserving the ancient traditions that go into the making of their biryani, including cooking it over a wood fire only.

As the oldest son in his family of modest means, Ningaraju was compelled to look for work as a student. His fondness for food and his ability to recall the flavour of dishes from local eateries led him to set up a pushcart on the outskirts of Bengaluru, serving a self-taught village-style biryani. In the beginning, “things were difficult, sometimes humiliating and marked by periods of self-doubt”, recalls Raju, as he is popularly known. Giving up though wasn’t an option, driven also by the necessity to provide for his family. Slowly, the popularity of his mild-flavoured biryani served in cups of dried banana leaves, jonne, grew, and so did the scale of his enterprise. Today, this resilient entrepreneur’s Halli Jonne Biryani occupies prime real estate in Jayanagar, South Bengaluru, and is frequented by over 500 customers on any given day. The seeraga samba rice is stained pastel yellow with a tinge of green, reminding one that this biryani hasn’t borne the brunt of a masala overload. Not the sort of biryani that one will smell from a mile away, the flavours though are the sort that reveal to the palate the ingredients that have gone into its making. You can taste the tingling heat of the green chilli, the freshness of the coriander and mint, the veil of fragrance from the spices register. A biryani that also brings to the fore the flavour of the seeraga samba rice. If you like it spicy, you may need to taste it with the curries that are served alongside the biryani.

The mutton has rounded off the flavours of biryani, as opposed to the chicken version. The meat is tender and moist, its fat laden flavours the sort that compels one to draw a bit of the meat in every scoop of the rice. These biryanis are perhaps the lightest donne biryanis one has tasted.

This Bengaluru hotel is a hit with biriyani lovers | The Hindu

When you think of breakfast in Bengaluru, images of crispy masala dose or soft, steaming idli with sambar immediately pop into mind. But that’s not all the city has to offer.

What if we said you could have biryani? Not just any biryani but donne biryani - a South Indian speciality made with short-grained rice and served in dried plantain, or donne, pouches. Non-vegetarian breakfast options are not new to Bengaluru, with every establishment flaunting its own dedicated fan base.

Standing tall with a 114-year legacy, is Shivaji Military Hotel. Tucked away in a quiet bylane opposite the bustling Banashankari Bus Stand in south Bengaluru, it is easy to be fooled by Shivaji Military Hotel’s calm exterior.

Enter, and you hear the chatter of hungry customers, starting as early as 8 am. As the day wears on, the din only grows louder, the lines longer and the service feverish. Started in 1908 by S Mannaji Rao, Shivaji Military Hotel has been run by three generations of the Rao family. In over 100 years of its existence, the hotel has seen its share of ups and downs.

But its popularity truly soared after Bengaluru became a software hub. Currently, it is being managed by Mannaji Rao’s grandsons, Rajeev and Lokesh.

Mallika Biriyani is the fascinating story of a computer engineer who began a biryani shop six years ago with an investment of Rs. 10,000 after a string of failed ventures. In the early days, he would procure a kilo of mutton each day, today the shop has evolved to a bustling biryani destination which procures over 500 kilos of meat on weekends to cater to the thronging crowds here. I make a 20-km trek through town to the far flung suburb of Kothanur in East Bengaluru to catch up with Venkatesh for a close look at his enterprise, and also taste the five or six dishes on offer here including his unique wood-fired biryani creation which comes across as a delicious confluence of various styles. A pleasing homestyle mutton preparation that’s cooked slowly on a wood fire, the fat in the meat renders into the gravy giving the curry a lip-smacking unctuous richness. The meat slides off the bone, the curry is a great combination with the rice and raagi mudde. If you need one reason to make the trip to Mallika, this would be it!

Chicken Biryani
The biryanis are served in large portions, there’s plenty of rice, and 5 or 6 pieces of chicken, which makes it a great biryani to share. On the nose, there’s the smokey character from the wood-fire, you can taste the depth of flavour in the rice from the spices. The meat is moist, though mellow in its flavours and benefits from being eaten with the flavourful rice, that is a mixture of two varietals, the ‘starchy’ short-grained seeraga samba and the ‘low on starch’ medium-sized-grain, bullet variety.

Mutton Biryani
Seven or eight pieces of meat in a mutton biryani at Rs. 230 makes it great in terms of value, and perhaps also lends to its mass appeal. The spicing and masala is identical to the chicken version, but the character of the mutton, with a bit of fat, imbues the biryani with a mellow, warming flavour note that’s more rounded on the palate. The meat is juicy, and has a bit of a bite. If you like your flavours a bit punchy, taste it with the sherva, the gravy of the mutton curry.

Bangalore Food Tour - BEST DONNE Biryani, BUTTER Idli | Karnataka Food Tour

Rice is definitely quite an essential part of South Indian cuisine whether it is in the form of an idli, dosa or everyone's favourite- Biryani. We started our day in the streets of Bangalore with Palav, which is served in a banana leaf cone with some chutney. This, is a breakfast dish! Rice in the morning may seem like a very heavy option but surprisingly this Palav is the pretty light on the stomach and quite perfectly spiced if we may say so…
If just plain and simple Palav was not enough, we tried the Chicken Palav. The kick of black pepper in this is absolutely beautiful. The chicken is super tender and the dish as a whole is yummy.

Just like our food walks, we decided to take a break from the food and experience the beautiful culture of Karnataka, and what better place to do that than the Markets. We meandered our way through K. R. Market which is the hub of some of the most beautiful and freshest vegetables. We then stepped into the colourful flower market. The colourfulness of this place is overwhelming but worth visiting.

Back to Food- our next stop was Ranganna Military Café. We had Kaal Soup which is made of paaya, a good source of protein. Along with this we also tried Dosa and Keema Gojju. Everything that they served was delicious, subtly spiced and super healthy! But the highlight had to be the Donne Chicken Biryani at Shivaji Military Hotel. The Biryani is cooked in a huge utensil for hours over charcoal. The flavours of this Biryani is very unique and quite irresistible and the chicken in the biryani is so tender that it will melt the moment it touches your mouth. This was definitely a fulfilling experience.

One of the must visit places in Bangalore has to be Idly Corner. A small shop serving pillowy soft Idly with spicy coconut chutneys and a dollop of white homemade butter. The hotness of the chutneys is perfectly countered by the richness of the butter. This idly was truly scrumptious!

Eshwar Rao entered the kitchen of a generations-old military hotel when he was barely into his teens. It was here that he learnt age-old Karnataka-Maratha recipes from his mentor, Rukmini Bai over decades of diligent labor, that he now serves up in his rustic eatery, S G Rao’s Military Hotel in Cottonpet, Bengaluru. I met this entrepreneur, now in his forties, and caught the making of a unique military style pulav, in addition to a tasting of some of the other must-haves here. The pulav here is cooked only with the gravy of the meat, the meat that is then layered under the rice just before serving. Drop in at Ranganna Military Hotel for breakfast, lunch or dinner to chow down on rustic meaty dishes full of flavour.


Established way back in 1964, this eatery swears by its food and so do its patrons. Presently run by a husband-wife duo and their sons, the USP of the restaurant lies in the functioning of its kitchen.


In this episode of Gourmet On The Road, Food Lovers Editor, Kripal Amanna visits the 60-year-old establishment to explore its kitchen with third generation Co-owner, Sendil Kumar. He discovers that the prep here begins as early as 7am, and every dish is prepared using secret recipes and local ingredients!

He also relishes a meaty spread for lunch, tasting from a hearty mutton leg broth, to steaming hot mutton pulao, kheema gojju, ragi mudde and more!

The food prices are extremely reasonable and a mutton donne biryani costs Rs. 290 and Mutton Pepper Dry Costs Rs. 290 as well.

It has been an absolute pleasure to taste the food. every grain of the biryani is a flavour bomb carrying all the flavour of the mutton, Green chilli coriander masala, black pepper and the Whole spices. it is served with the Mutton sherwa, which is also in a similar masala base. The raita though was a bit runny but needed the most as you need to intake fiber also with your meal.
