LEGENDARY Filipino Food in DAVAO CITY Philippines: Eating CARABAO Meat FEAST

Sana’s Original Kabawan, a humble carinderia in Davao City is a longtime favorite eatery of former mayor and current President of the Philippines, Rodrigo Duterte and his family. He is the first president to represent the Mindanao region and second from Visayas (his birthplace), the two lesser represented regions of the Philippines.


Sana is one of the friendliest and most generous people we have met on our travels. She has been through a lot in her life and has managed to keep this special place open for over 40 years, despite many threats of the building being demolished.


Now to the food, all of the dishes here are with carabao, the water buffalo native to the country. We were presented with all three without asking and we were blown away with it all!

1. Bulalo, a soup made with carabao bones.

2. Tapa, dried carabao meat that’s been shredded and fried.

3. Hinalang, a “spicy” broth, which didn’t pack heat , but had a wonderful lemongrass flavor with chunks of supremely tender carabao. That is a feat in itself, as the meat is very lean.


We couldn’t get enough of Sana’s hospitality, conversation and food. It is truly one of those special places that sticks with us for a long time.

We are Greg and Jumi, hailing from opposite ends of the globe. Greg is a native New Yorker who was born and raised in Queens NYC and Jumi grew up in the beautiful islands of the Visayas region of the Philippines.

How did we meet? One of us messaged the other on Instagram (before sliding in DM's was even possible through the app!) and we met just after Hurricane Sandy hit NYC in October 2012. Although we grew up in two very different worlds, we bonded over a love of experiences over material things, delicious food and exploration.

We have visited 15+ countries together since December 2014 exploring beaches, ancient temples, bustling streets and ruins. Along the way, we get adrenaline flowing whether paragliding, ziplining, or jetskiing.

To fuel up for our adventures (and everyday life), we eat lots of local food wherever we are. Street food, carts, trucks, hidden gems and family-run sit-downs are our mainstays. We don't cook, but prefer to spend our money on experiences and we treat food as one. Hey, we gotta eat regardless, right? May as well enjoy it and support good businesses while we're at it!

The first stop on our Filipino food tour in Davao City was to the popular Ellen’s Tuna Queen for a huge tuna feast. Here we tried her tuna sinuglaw as well as the giant tuna tail and tuna sisig. Ellen is known for her giant tuna tail which she prepares fresh each day. We couldn’t believe the size of this giant tuna tail!

Chocolate is a popular Filipino food in Davao, since so much of it is grown around the city, as well as durian. We made sure to taste some local chocolate as well as a delicious local durian pie, full of strong durian flavour. There’s nothing like these popular street foods in the Philippines.

Our last stop on our Filipino food tour in Davao City, Philippines was to try the best street food, a massive tuna jaw. Tuna is huge in the city, so we couldn’t finish our day of Filipino food without trying the massive tuna jaw in Davao, a must-try street food in the city.

SANA'S CARENDERIA ORIGINAL KABAWAN & BULALOAN I The Best Tapa in Town. Davao City, Philippines.

No wonder this is our president's favorite place to eat.
This humble carenderia, SANA's claim to fame is their unbelievably crispy shredded carabao tapa and their soup. Back to the tapa, it's unlike most beef tapas as theirs is dry, crispy and shredded, and made from carabao.

Their Bulalo (beef bone marrow broth) and Hinalang (Beef soup with chilis and lemongrass and ginger) are perfect for hangovers. Don't expect nice interiors (inato lang ang lugar) though just real good food.
The only recommended CARENDERIA with the Best Tapa in Town, Eating place for all walks of Life.

????????LOMI: In a pot with oil, add chopped garlic and onions then add the broth (made from boiling pig jaws for 5+ hours). Add soy sauce, black pepper and seasonings. Boil the egg noodles. Add coconut milk and mix well. Add in eggs. Cook until it gets thick, then serve in a bowl. In a bowl, add hard boiled eggs, roasted pork, liver, lumpia (fried spring rolls), ground pork, chinese kikiam, fish balls, chicharon and fried garlic on top.

Season with onions, garlic, celery, green chilies, ginger, pepper and salt. Boil for another hour. Add milk mixture, then liquid seasoning, soy sauce and fried garlic. Serve with rice.

????????PANCIT PALABOK: Boil water then add in pork bones and cook for a couple hours. Add flour, corn starch, eggs, then season with salt, pepper, fried garlic, MSG and achuete. Place noodles in the dish, and then pour in broth. Add chicharon, fried pig stomachs, achuete fried tofu, crushed chicharon, hard boiled eggs, and green onions on top.

???????? CRISPY PATA: Boil pig legs for 3-5 hours with a broth made with water, celery, onions, garlic, bay leave, salt and pepper. Deep-fry leggs for 20 minutes. Slice the meat and then brush secret glaze. Serve with pickles.

????????PANSIT BIHON: Stir-fry glass noodles and add egg noodles cooked in pork broth. Add carrots, celery, cabbages, chayote, fish balls, pork marinated with soy sauce, pepper and MSG.

????????TORTANG ALIMASAG: Make an omelette with crab meat, carrots, bell peppers, onions, garlic, salt, soy sauce, oyster sauce and bay leaves.

DUTERTE CITY: A DAVAO CITY FOODTRIP

Davao City is one of the gems of Mindanao where plenty of unexplored adventures and places to visit awaits. Known as the Duterte city, it’s been dubbed as the safest city in the Philippines because of President Rodrigo Duterte’s tight management of the place when he was still a mayor of Davao. To this day, Davao has been known to have the most disciplined people with warm smiles, accommodating and hospital culture that also adds up to its rustic and laid back culture.

We spent a few days in Davao exploring the local food scene and immersed ourselves in the local lifestyle. Our trip takes us to the downtown area of Davao where we walked around and tried some local streetfoods. We visited Dencia’s, a known local restaurant that serves the best Goto/Lugaw in town, we also looked at how the Davao food scene is like, and enjoyed Durian as our dessert.

(Some pricing I mentioned on our meals are wrongly converted to US dollars, my apologies for the wrong math. My brain isn't working! :D )
