After years of working for a paani-puri vendor, Kuppuram Naidu saved enough to set up a chaat cart in the eighties in the far flung suburb of Basaveshwar Nagar in Bengaluru. His sons, Gokul and Sarvan, would turn up at the cart after school to help their father, and in between preparing chaat, serving customers and doing the dishes, catch up on their homework under street lights. The years passed, Gokul became an engineer, his brother a cost accountant. Unable to find a suitable job though, Gokul turned back to his father’s trade, and aided by his brother, has transformed the cart to a food truck. And not just any food truck, this engineer and cost accountant duo have aspirations to be the most hygienic street food operation serving authentic chaats! Made to the age-old recipes of their father who has since retired to farming, and with almost every component of the chaat prepared by them with the assistance of their mother, Shanthi Kuppuram.
I drive up to Naidus Chats to see this for myself and also savour a few of their popular offerings made to that has made them the cynosure of their neighbourhood.


Masala Puri
Bengaluru’s popular ‘local’ chaat offering is served in an avatar that is spicy but doesn't subdue the aroma and warming spices of the ‘masala’ that is at the heart of this concoction. The masala has depth of flavour, this chaat can be a filling snack with the white peas.

Not a Mumbai version with potatoes, but topped with onions, spiced peanuts, chilli powder, seasoning, chutneys and sev, this chaat is a riot of textures. From the crispy crunch of the papri to the moist crunch of the onions and the spicy nutty bite of the peanuts, laced with the chilli-coriander-mint green chutney balanced with the tangy sweetness of the jaggery-tamarind chutney.

Originally from Satna in Madhya Pradesh and raised in Bengaluru, Jawahar Lal always dreamt of being an entrepreneur when he worked as a North Indian cook in eateries in Bengaluru. A friend pointed him to a tiny shop on Berlie Street in Langford Town, and thus began Sudha Chaats, named after his wife, 39 years ago, to introduce Bengaluru to the joys of khasta (crisp) samosas and kachoris. The couple would cook and serve their fare piping hot; alongside the North Indian treats, their masala vada, bhajji and bonda, made interestingly with samosa stuffing, too found much favour, making their shop a popular cornerstone of the neighbourhood over time. Jawahar Lal passed on two years ago, but the tradition continues with his wife, now joined by their son, Satya Narayan. Hope you enjoy this chatpata episode. Orphaned at a young age and in search of a livelihood, Huchappa migrated from his village to Bengaluru in 1950. He found employment with UP Brahmins who were dispensing paani poori from streetside carts. Having learnt the trade, he struck out on his own with a pushcart in Nagarathpet in 1950, infusing North Indian style chaats with local flavours. His son, Kumar continues the tradition under the shade of a temple peepal tree, which also gives his very popular chaat shop its name, Arali Mara, peepal tree in Kannada. Every city has its distinctive chaat style, so does Bengaluru, including its very unique masala puri that is a hit with folks here. And a popular chaat destination is Karnataka Bhel House, which began as one of the earliest stores unlike food carts way back in 1975. Founded by Mr Prabhulinga Linga Dev who converted his provision store in Chamrajpet to a chaat shop on the advice of a friend who had just returned from plying the trade in Mumbai, KBH, as it is popularly known, may have branched out into spiffy operations across multiple outlets today. However, it is the consistency of the chaats here, we are told by its fans, thanks to the owning family’s focus on sourcing the best ingredients, for instance, the peas that go into the masala come from the US to ensure the same taste year-round, whilst all components and condiments that go into the chaat are produced in their central kitchen, that has made Karnataka Bhel House a popular chaat destination. On a recent road drive through Kolar, we made a detour to Kolar Gold Fields, once famous across the world for its gold mines. The mines have long closed, and the town is now a pale shadow of its former glory. What has endured however is a bakery that first opened in 1880 and still continues to dispense its baked wares in an old school tradition that harks back 143 years! I met its fourth generation owner and also tasted many of the scrumptious treats on offer that are still popular with the inhabitants of this verdant town 70 kilometres from Bengaluru.

Note: I enjoyed most of the baked treats on offer. Standouts for me though were the veg puff, muffin (dilpasand), coconut biscuit, spicy cookies and plum cake.

When it comes to the hygiene aspect in a mainstream eatery, Taaza Thindi rivals the best with its clean approach to cooking and serving delicious South Indian tiffin fare. Not due to current covid 19 compulsions, but from when they began operations six years ago. In the current scenario, they have taken matters a step further as I discovered when I visited their flagship Jayanagar restaurant recently to savour their best selling masala dose. Turns out they have stopped making dosas altogether just because the three to four-minute ensuing wait for one would have customers crowding, making it difficult to maintain social distancing owing to space issues at this outlet. “It’s a huge loss financially especially in these difficult times”, say the founders, but “we didn’t want to compromise with the wellbeing of our customers and employees!”
Mildly disappointed with the absence of the dosa, I sought solace in their equally pleasing idli vada and chow chow baath combo, the latter featuring a comforting khaara baath made with bansi rawa. Hope you enjoy this episode, stay safe and happy eating.

Armed with the recipe for a crowd-pleasing manchurian sauce that he learnt from a chinese cook, 16 year-old Ravi set out with an auto 21 years ago to serve gobi manchurian in the South Bengaluru neighbourhood of Banashankari. Two decades on, Ravi Gobi seems to rule the heart of gobi manchurian lovers in the city, as evidenced by the number of customers who throng his vegetarian sidewalk eatery each evening. I caught up with Ravi and some of his happy patrons over an extended manchurian tasting session recently, where I savoured not only his popular cauliflower and cabbage versions, but also an equally appetising, babycorn, mushroom and potato variation too. Each dish on the Ravi Gobi menu is prepared fresh to order, every plate served piping hot and therefore necessitating a wait of 10 to 15 minutes. The gobi or potato/ mushroom/ baby corn, fried fresh, dressed in a chilli-salt spice mix to make the dry version, or tossed in a savoury manchurian sauce that has the fresh zing of coriander, green chillies, ginger, garlic and onions.

Chetan Nagendra had to drop out of school in Mandya and move to Bengaluru to work in a factory due to financial hardships back home. However, he soon found himself without a job when the assembly line was automated. Desperate and dejected with no employment available, he went to work at his relatives' chaat cart for a meagre wage of 20 rupees a day. Eventually, it dawned upon him that he too could begin something of his own, where no one could fire him again. And thus began his streetfood venture peddling tikki puris in Jayanagar. 20 years on, Chetan’s Tikki Adda has amassed a popular local following for his scrumptious tikki puri and masala bun fare, some traditional and others inspired, as I learnt from a gaggle of food lovers on a recent visit to the neighbourhood. TKS Iyengar’s, a passion enterprise spanning three generations of a family came as a breath of fresh air to Bengaluru's tiffin culture with time honoured recipes that were hitherto confined to homes. Not surprisingly, this charming refreshment house became an instant hit when they opened doors a year ago. However, the current covid situation has brought all that to nought, and left the family with no staff and barely any business to make ends meet. However, rather than buckle down, the ladies of the house aided by their menfolk are doing all that it takes to keep their traditions alive, from manning the stoves to serving customers to keeping house. I savour a delicious homestyle Iyengar meal on a recent visit, and while doing so said a silent prayer, hoping that eateries like TKS Iyengar’s survive these turbulent times. Bobby Da Dhaba goes back over 35 years ago when a family from Gurdaspur were invited by the Gurdwara in Bengaluru to set up a tiny eatery next to it to serve “ghar ka Punjabi khaana” to devotees for whatever price they could afford to pay. The eatery has moved away from the gurdwara since, but the tradition of the family’s service to its customers remains, and the food continues to be rustic and wholesome, the sort you will find in a Punjabi home, fortified with loads of makhan, butter! I drove 20 kms to the far flung suburb of Nagasandra to meet Bobby, his grandmother named the dhaba after him, and in addition to savouring a big, fat meal of parathas, chole, paneer bhurji, dal makhani, palak paneer and more, also managed to down a litre of lassi!

Soon, his family joined in too, his father giving up his profession as an automotive mechanic, his mother, and much later, his wife, assisting in preparing the masalas, chutneys, etc. at home. Over the last two decades or so, the cart has made way to a tiny shop and Sri Ranganatha Chats Corner has emerged as a favourite chaat spot in the neighbourhood, not only for their homestyle, simple preparations, but also the friendliness with which they interact with customers, many who have been tasting their fare over years.

To quell a chaat and north indian veg food craving, we take away from the Bengaluru outpost of Bhartiya Jalpan, a 75-year-old mithai and namkeen house from Guwahati, Assam. Now whilst takeaways aren’t the best way to savour desi chaats, we found the flavours spot on if you’re looking to savour some chatpata desi fare. Hope you enjoy this episode. This Man ‘Invented’ The WHITE PAANI PURI! Tasting BANGARPET CHAAT At Ramesh Chit Chat In Bangarapet

Son of R. Panduranga Setty, who is said to have begun the Bangarpet Chaat tradition in 1974 in Bangarapet, named so (Bangar = gold, pete = town) for its importance as a town that connected the erstwhile Kolar gold fields to Bengaluru, 80 kilometres away, young Ramesh, wasn’t happy just continuing with the family legacy. A desire to create something new led to the invention of the ‘white paani’, a clear liquid that though as innocuous-looking as water, packs a potent, spicy punch. And thus began the tradition of the Bangarpet Paani Puri, that has spawned a few hundred namesakes in Karnataka. Ramesh however continues to operate out of his tiny shop in a bylane in Bangarapet, serving customers personally and experimenting constantly to add to his spicy, tangy repertoire. I spend an evening with him, tasting his wares, and return impressed with his childlike enthusiasm that doesn’t seem to have waned in the least despite being in the business for nearly four decades, his latest creation, a pizza inspired paani puri! White Paani Puri
A simple assemblage of green peas, onions, carrots and coriander, stuffed in a semolina and flour puri, topped with the potent ‘white paani’. The spiciness of paani though is toned down by the creaminess of the peas and the crunch of the onions. A simple, clean flavoured paani puri that allows one to appreciate every component singularly, as well as in its completeness.

The year was 1993. A Punjabi from Delhi with a young family, hotel management degree from the US and a stint with a leading hospitality chain, landed in Bengaluru on business. Taken in by the city’s salubrious weather, he set up a tiny 400 sq. ft. restaurant called Treat to serve up Saddi Dilli style Punjabi food. 27 years on, Treat has integrated well into Indiranagar, Bengaluru’s culinary landscape with a loyal following in the area and beyond. Its founder, Pramod Chaudhry is now joined by his son and daughter, as they look to take on the challenges brought on by the current pandemic. I visit them, and savour many of the hearty Punjabi kebabs and curries, vegetarian and non-vegetarian, that helped this neighbourhood eatery make it to many a Bangalorean’s speed-dial way before delivery apps appeared on the scene! When Prabhu, an automobile engineer with a major car company chose to pursue his entrepreneurial calling in food, a food truck didn't come across as a surprise to his father who encouraged him to pursue his dreams. After getting his hands on a Tempo Traveller, he drove it to Pune to fabricate a food truck that would serve up the meaty cuisine of his Tamil heritage with a smattering of influences from Andhra Pradesh and Karnataka as well. Back in Bengaluru, this culinary enterprise on wheels, Kaveri Godavari Foods, is slowly but surely gaining popularity in the neighbourhood it is parked in. Adding to its appeal is the fact that all dishes here are prepared at Prabhu’s home and cooked in wood-pressed oils extracted in the family’s oil mill. I drive 20 kilometres to East Bengaluru to catch up with this passionate engineer and experience the streetfood vibe here whilst savouring a bunch of tasty preparations - egg kothu parotta, kalakki podi dosa, mutton parotta, chops, nati chicken, brain fry and more.
