CANH NGHÊU (CLAM SOUP): Smash lemongrass and ginger and add in a pot full of hot water with rock salt. When it boils, add clam, rock sugar, green chillies, basil , onion and coriander. Serve.

CÁ THU NƯỚNG NGHỆ (GRILLED MACKEREL WITH TURMERIC SAUCE): Grill banana leaves on the stove. In the leaves, add mackerel fish, fish sauce, rock sugar, MSG, salt, chilli jam and mix. Add cooking oil, turmeric, vermicelli noodles, wood ear mushroom, scallion, leeks and chillies. Wrap it up and grill over high heat for 20 - 30 minutes.

RAT MEAT HOTPOT: Chop up rat head and legs and add to a pot. Add lemongrass, vietnamese curry leaves, fish sauce, MSG, turmeric powder and stir-fry for 2 mins. Add coconut broth and cook for 5 more minutes. Add chillies and wait till it's fully boiled.

Ipoh, Malaysia has some of the best street food in the world, and we traveled from Kuala Lumpur, Malaysia to go for a FULL ON Street Food Tour with our friend Mark from Simply Enak, who runs food tours in Penang, Malaysia!

As soon as you arrive off the train in Ipoh, you know it's gonna be good eating. We met up with Mark and immediately started exploring for street food!

Rim Nam Restaurant ครัวริมน้ำ เขาหัวควาย :

Surat Thani (สุราษฎร์ธานี) - When I was in Surat Thani my friend P’Tan ( recommended his favorite restaurant for river fish and southern Thai food, called Rim Nam Restaurant ครัวริมน้ำ เขาหัวควาย. It’s a little outside of the city, but well worth the drive if you love to eat - especially river fish food.

I loved the look of the restaurant as soon as we arrived, very peaceful and quiet overlooking the river, surrounded by lush greenery and mountains.

Here are the dishes we ordered:

Shrimp Salad พล่ากุ้ง
Sour Curry, Bamboo Shoots แกงส้มหน่อไม้
Steamed Marble Goby ปลาบู่นึ่งซีอิ๊ว
Wild Boar Curry ผัดเผ็ดหมูป่า
Omelet ไข่เจียว

Total price - 2,200 THB (67.80 USD) - But just to note, most of the bill was because of the fresh marble goby fish we ordered.

The highlight dishes were steamed marble goby fish and the wild boar curry. But all the dishes were fantastic and I loved the setting and the amazing Southern Thai food.

2019年10月中LATTE去了趟武漢
武漢是美食之都
有美味的熱干面 三鮮豆皮
這隻影片花了很長時間記錄拍攝
製作工廠跟店面有一大段距離
除了上海拍攝的三鮮豆皮
這是LATTE第二次
清晨三點就起早拍攝的影片
為了清晨拍攝而不睡過頭
LATTE在工廠附近找了間酒店住下
拜託大家看在這麼認真的份上

原本1月就要剪輯
隨著肺炎疫情COVID-19日益嚴重
武漢封城之後球球烤爪爪也關上店鋪
於是想著等疫情和緩點再來上傳影片
這段期間店主合夥人父親感染了肺炎
好在使用了新藥治療
沒多久就順利康復

在台灣雞爪最常就是在滷味攤上面看到
而滷製過之後再烤倒是第一次嘗試
在拍攝的過程才曉得
小小的烤雞爪是這麼的費工
每天下午不斷的清洗 再去除雞爪上的指甲
隔天清晨三點就開鍋滷製
放入中藥包與各種調味料
灑上前一天處理的辣椒跟花椒
還有倒入啤酒增加風味
接著就是小火慢煮了
趁著這段時間 LATTE 趕緊回酒店休息下

睡沒多久就起來真是痛苦呀
為了拍到好畫面 LATTE 一定會堅持的
滷好的雞爪先撈起放涼
並將大小不合格的挑起剃除
接著將大骨去除2個1串串起
本想說雞爪那麼燙 阿姨怎麼有辦法拿起
原來是手套裡頭還有一層布手套
阿姨一串兩串 熟練的串起
放在盤上像衛兵那樣排排站
這些都是供應給店面當天銷售的份量

覺得店主堅持用傳統作法很不簡單
當咬下去的那口才知道是有多麼的不簡單
雞爪放在舌尖上頭
只是輕輕頂著上顎
雞爪就突然的化開
表皮Q彈而內部軟嫩
