Given its incredible popularity with hundreds of seafood lovers who visit here for the meals, fries and curries everyday, it’s hard to believe that this restaurant is only six years old. I visit this eatery that has the vibe of a busy dining hall to indulge in a humongous meal, and along the way also catch up with its unassuming owner, Vicky Pai, who says his trying experiences as a young executive looking for affordable, homestyle food in a new city, spurred him to open Machali - to serve tasty, homestyle food at affordable prices. And going by my meals at this eatery, I have visited thrice already, and watching fastidious Mangalorans relish the seafood here, Machali certainly delivers, whether one wants to enjoy a sumptuous fish meal and fry for Rs. 150 or splurge Rs. 300. Truly, a democratic seafood restaurant that caters to all.

Fish Thaali
A standard Mangalore fish meal experience, on the plate there is a fish curry with a small piece of fish, some dry vegetables on the side, boiled rice, shrimp chutney, fried sandige and pickle. Servers walk along ladling more fish curry, a simple Konkani style lentil preparation, daali thove, and rasam out of buckets.

Set up by Steven Pinto who left behind a lucrative career in the IT sector to pursue his dream of sharing the food he grew up with, this 15-year old restaurant rose to fame thanks to its spiced filled seafood dishes and Mangalorean classics.

In this episode of Gourmet On The Road, Food Lovers’ Editor, Kripal Amanna visits the Ulsoor outlet and meets with the brother duo that run the restaurant. He discusses the procurement of fresh seafood, the variety of curries on offer and also witnesses the making of two most popular fries, the Bangude and the Kane Fry.

Food Lovers’ Editor, Kripal Amanna visits revisits this establishment and savours not just the special ‘limited’ seafood thaali, but a host of other delicacies like the crab curry, bangude (mackerel) fry and prawns masala amongst others. Enjoy!

Special Limited Fish Thaali
This thaali, complete with a fish curry, fish fry, vegetable of the day, rice, buttermilk and yoghurt had the potential to be a rather satisfying fish meal, especially given the fulsome flavours of the kaane curry. However, it was let down by the kingfish fry that although swathed in a spirited masala and crumb-fried, wasn't the epitome of freshness. Next time, I would order either a fish curry or the limited thaali that arrives minus the fry, but offers terrific value at at Rs. 180, and a fish fry separately.

Bangude Fry
This is what a fish fry should be all about. The mackerel was fresh, plump and juicy. Fried such that the masala formed a thick crust. You can taste the heat of the chilli and the tang of the tamarind in the masala, this combination of spicy and sour made for the perfect complement to the oily flavours of the mackerel.

Harish Shetty, a native of Puttur, and his wife, Prema, uprooted themselves from their life in Mangalore five years to move to Bengaluru with their only son, Shaman, for his higher education. To earn a livelihood, they set up a small eatery in a corner of the city, with absolutely no experience but compelled by necessity and their love for cooking the food of their native land. Despite all odds, their tiny shop, Fish N Dish, prospered modestly over the years. The current situation brought all that to nought as they lost their meagre staff, most of their business, and were forced to fend for themselves to stay afloat. Alerted by our viewers of their plight, I paid an impromptu visit to find the couple cooking in the kitchen, serving customers and also cleaning up after them, assisted by their son. The delicious homestyle Mangalorean food that I tasted fuelled by Harish and Prema Shetty’s motivation to provide for their son a better life inspired this episode. A delicate crust conceals the lady fish, smeared with a gentle masala that’s seasoned to perfection. The fish is fresh and flakey, the perfect size to peel away at its flesh, definitely a fry to order when here

The coconut is the perfect sponge to soak up the flavours of the masala and also the slight sweetness of the prawns. The coconut masala, toasted curry leaves, ginger garlic and green chilli combine supremely with the prawns that have been cooked to just the right texture.

Upon completing their studies, the engineers returned to Kundapur, built a food truck, roped in a village cook, before driving back to Bengaluru to launch their ‘Mangalore in Bangalore’ sea food enterprise. I visit them on a rainy evening for an interesting chat, and return mighty impressed with the marine spread on offer, the un-compromised rustic flavour of most of the dishes that I taste, and their commitment to offering fresh seafood at honest prices. The prawn ghee roast is a South Canara delicacy that can take any meal to the next level. Savour it with simple dal-rice or serve it as part of a more elaborate party spread, it’s a dish that stands out with its rich ghee-laden Kundapur masala. Here’s an impromptu video of me whipping up this recipe at home over the weekend. And even though I say so myself, this foolproof recipe is bound to impress even the toughest critic. Ingredients:
½ kg prawns, medium sized, small to medium is better because of the flavours, although a bit of a pain to clean and devein.
Now, for the marinade, I am using:
2 tbsp yoghurt
1 tsp turmeric powder
1 tbsp chilli powder
1 tsp salt
1 tsp vinegar, I like a bit of sour zing. One could use lime juice too.

For the masala
5 nos guntur Chillies
5 nos byadgi Chillies
1 tsp peppercorns
½ tsp cumin seeds
¼ tsp mustard seeds
¼ tsp fenugreek seeds
1 tbsp coriander seeds
1 tbsp thick tamarind pulp
10-12 garlic cloves
Water as required

To cook:
4 to 5 tbsp ghee
15 to 20 curry leaves
½ tsp jaggery
1 tsp vinegar
A pinch of coriander powder
Salt to taste

South Canara has its share of seafood eateries, but then, there are some that have endeared themselves to diners over decades by virtue of being true to the traditions they follow. One such popular seafood stop is Hotel Mahalaxmi, in the fishing village of Malpe, about six kilometres from Udupi, where Mrs. Pushpavati Bangera, the matriarch of this family run restaurant that began as a tiny hut, has been cleaning the fish and preparing the masala for the fish curry and fry each day for the last 60 years. I catch up with her and her son, Vishwanath Bangera before I sit down to a satisfying fish thali meal.

50 years ago, Thimmappa and his wife set up three tables in a rented outhouse in Udupi that they called home, to earn a livelihood by serving a simple meal of fish fry, curry and rice. Over the years, the fish fry, slathered in a secret masala made by the couple, and their sons thereafter, gained favour with locals who would flock to this home that carried no name. Five years ago, his son, Sathish Kotian finally put up a nameboard as a tribute to his late father’s culinary legacy that has endured decades since the eatery’s modest beginnings. The fish meal is a simple affair here, there’s rice, a tasty curry made with small-sized, inexpensive fish, a vegetable for the day and some pickle. The Mangalorean fish curry is the perfect balance of spice, heat and sour. In this recipe episode, we cook up a seer fish curry from scratch, including a vivacious masala that lends itself well to any mild-flavoured fish like pomfret, kingfish, ladyfish, or even prawns. Its beautiful bright reddish-orange hue comes from the combination of Kashmiri & Guntur chillies I prefer to use in this traditional preparation from namma Kudla. Traditionally, the curry is prepared atleast a couple of hours ahead of meal time, thereby allowing the fish to soak up the flavoursome masala. Served with steaming hot rice, this is a curry that pleases the soul! Enjoy!

Ingredients to make Mangalorean Fish Curry
Serves 3 to 4

500 gm fish, marinated in ½ tsp each of turmeric and salt.

15 red chillies (I use a combination of Kashmiri & Guntur in the ratio 9:6)
1 tbsp coriander seeds
1 tsp cumin seeds
10 to 12 peppercorns
¼ tsp mustard seeds
12 to 15 fenugreek seeds I USED 15
A pinch of carom seeds (ajwain)
½ tsp turmeric powder
1 large onion, roughly chopped
10 cloves of garlic
½ inch ginger, roughl chopped
Tamarind, lime sized ball
5 tbsp grated coconut
400 ml water
Salt to taste

For the seasoning
½ medium sized onion
20 to 25 curry leaves
Coconut oil

So, with the support of her husband, Vijay Ananth, this soft-spoken lady ventured out as a restaurateur just a couple of months ago, and in a relatively short span of time has managed to make an impression on the neighbourhood with her rendition of Mangalorean-Kundapur fare laced with a touch of Kerala influence. I visited Tarayi to taste their limited but tasty homestyle offerings, and to also help share the word on this family enterprise that’s a true labour of love. One of my all-time favourite comfort foods is the Kundapur Ghee Roast. A dish born decades ago in a tiny eatery called Shetty Lunch Home in the then sleepy hamlet of Kundapur along the South Canara coastline. Over the years, this spicy preparation has conquered palates across the country and beyond. What gives this dish its soul is the roasted Kundapur Masala, that manifests itself in the spicy, tangy, robust flavours of this preparation. Over the years, I have tasted many ghee roasts and watched its making in illustrious kitchens, including Shetty Lunch Home. This recipe, my ode to the dish and its creators, is versatile enough to be made not only with chicken, the original chicken ghee roast, but also with prawns, paneer or any veggie of your choice. Enjoy, stay safe and happy cooking.

1 kg chicken or prawn or vegetable of your choice

For the marinade:
4 to 5 tbsp yoghurt
1 to 1 ½ tsp turmeric powder
2 tbsp chilli powder
1 to 2 tsp salt (to taste)
1 tsp lemon juice/ vinegar

For the Kundapur Masala
8 dried Guntur chillies
10 dried Byadgi chillies
2 Tsp peppercorns
1 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
2 tbsp coriander seeds
2 tbsp thick tamarind pulp
16 - 20 garlic cloves
Water as required

To cook:
6 to 8 tbsp ghee
20-30 nos curry leaves
Salt as required
1 tsp jaggery
1 tsp vinegar
A pinch of coriander powder

Amazing #Manglorean Seafood Restaurant in #Khobar - ‘Machali Kingdom’ #seafood

After being told about this place by numerous followers and friends, I finally decided to try out @machaliksa in Khobar for lunch along with @ancel_bernard. We got there when there wasn’t much of a crowd but by the time we were done with lunch and about to leave, there were quite a few people waiting outside for a table.

We had already made up our minds about what we were going to order thanks to the recommendations I received, so this is what we ordered.

1. ‘Ghee Prawn Roast’ - SR. 18
2. ‘King Fish Tawa’ - SR. 17
3. ‘Crab Masala’ - SR. 20
4. ‘Ardhak Fish Fry’ - SR. 15
5. ‘Ghee Rice Meals’ - SR. 9

The ‘Ghee Rice’ meals comes with sides of 2 different types of curry, mango pickle and raita and you can request for extra portions of rice which they do not charge for.

The seafood is exceptional and this Manglorean restaurant has something that is very unique and will definitely have me going back for more.

I am talking about the ‘Ghee Prawns Roast’, a spicy prawn fry cooked entirely with ghee. It is mouth-watering, spicy and rich with all the ghee that they use. Its goes amazingly well with the ghee rice which is why you shouldn’t order the normal rice. This is a must-try if you visit this place.

The ‘King Fish Tawa’ is also outstanding. It might look spicy but the masala is rendered down and a great accompaniment to the fish and rice. The fish has been fried to perfection and the flavours really stand out. We ordered 2 since I did’t want to share.

If you like crab, then the ‘Crab Masala’ is also a great choice. We would have ordered the Ghee Roast version but I didn’t want to have too much Ghee. I will definitely give that version on my next visit.

The restaurant isn’t great for families but they do have partitions if you would like to dine-in.
