The Kwaj Current is a bi-weekly television show produced by the U.S. Army Garrison Kwajalein Atoll Public Affairs Office in the Republic of the Marshall Islands. This episode originally aired beginning April 15 for a period of two weeks on American Forces Network Kwajalein TV station, local channel 29-1. This is the first episode of the new television news program, The Kwaj Current, serving the U.S. Army Garrison Kwajalein Atoll (USAG-KA) community in the Republic of the Marshall Islands. The program is produced bi-weekly by the USAG-KA Public Affairs Office and media services staff. Squash Carbonara
Ingredients;
2Tbsp olive oil
4oz bacon
1 medium butternut squash, peeled and cut into ½” pieces (about 3 cups)
1 small onion, chopped
2 cloves garlic, chopped
2 cups chicken broth
12 oz spaghetti or fettucine
¼ cup Parmesan cheese
Salt and pepper to taste
Instructions:
Heat oil in a dutch oven and add bacon, and cook, stirring occasionally, until crisp, 8–10 minutes. Remove from bacon from pan and set aside
Add squash, onion, and garlic to skillet; season with salt and pepper and cook, stirring occasionally, until onion is translucent, 8–10 minutes. Add broth. Bring to a boil, reduce heat, and simmer until squash is soft and liquid is reduced by half, 15–20 minutes. Let cool slightly, then purée in a blender until smooth; season with salt and pepper.
Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid.
Combine pasta, squash purée, and ¼ cup pasta cooking liquid and cook over medium heat, gently stirring and adding more pasta cooking liquid as needed, until sauce coats pasta, about 2 minutes. Mix in ¼ cup Parmesan cheese; season with salt and pepper.
Roasted Okra
Ingredients:
1lb okra, rinsed and dried
½ Tbsp olive oil
¼ ts garlic powder
Pinch smoked paprika
Salt and pepper to taste
Instructions:
Preheat oven to 450. Cut off tips and stem ends of okra and place in large bowl. Add olive oil and spices and mix until okra is evenly coated. Spread okra on baking sheet in a single layer. Roast in oven for 20-25 minutes, flipping okra twice during cooking, until browned and fork-tender.
