Kudlayya Karbasaiyya Ganachari and his wife, Susheela, opened a tiny student mess, Basaveshwara Khanavali, in their home in Dharwad in 1963. Soon, the delicious reputation of their home-cooked jolada rotti oota or meal spread far beyond the student community, compelling them to open an eatery in the town’s main market. 50 years on, this North Karnataka khanavali or eating house, has expanded to 12 locations, including two in Bengaluru, but the family’s personal touch remains with the founder’s sons involved in the cooking of the meals. In this episode of Gourmet On The Road, I catch up with the youngest son, Ravi Shivappa Ganachari, at their newest eatery in Malleswaram, and savour a satisfying jolada rotti oota. Jollada Rotti Meal
This is a meal that is high in nutrition, taste and variety. The jolada rottis are light and fluffy, the sort that when smeared with some butter, marry well with everything on the leaf, especially the chutneys, kempu chutney, shenga chutney and guralu, with some yoghurt. The rotti wrapped with the jhunka, salad and the gravy of the eggplant preparation, is a riot of flavours and textures. The pulses, the moth bean and sprouted mung, are satisfying, the badanekayi enngayi and dhonne menasinkayi, the sort that will have you calling for second helpings. Certainly a meal that extols the vegetarian flavours of North Karnataka.

A Gourmet On The Road episode that’s dearest to me is the one where I shared a meal with ‘namma priyaru’, Karnataka Ratna Puneeth Rajkumar. How one wishes things had turned out differently, but alas! He wore Karnataka on his sleeve, and part of his vision was to promote young talent in Kannada cinema, a role that is now being bravely carried forward by his wife, Ashwini Puneeth Rajkumar. And when I recently received a call from her inviting me to a conversation on Aachar & Co., a film made by a near-all-women-team led by Sindhu Sreenivasa Murthy, somewhere, I felt this would be an apt continuation of my conversation with Appu Sir.
We met over a delicious South Canara lunch at New Modern Hotel, an appropriate venue given the film’s setting in Bengaluru of the sixties. We discussed the film, which promises to be a witty family entertainer, rich in its cinematic value, food, pickles, family, a lot more… and also basked in the warming memory of our dearest Appu, Puneeth Rajkumar.

Tasting Popular South Bengaluru Special Banana Leaf Meal At UDUPI SRI KRISHNA BHAVAN | 20 VEG Dishes

When it comes to festive vegetarian indulgence here in Namma Bengaluru, one looks forward to a good baale ele oota, a meal that is served on a banana leaf. And a popular one at that is the 20-dish special lunch served at the Gandhi Bazaar, Basavanagudi outpost of Udupi Sri Krishna Bhavan, a vegetarian eatery that first opened doors in 1926. In this episode, I not only savour this special lunch but also step into their kitchen to catch the making of a steamed ‘kadubu’ and the South Canara style rasam, known as the Tilli Saaru, by Ganesh, their ‘adige bhatru’, or chief cook, who has been cooking here for over 40 years. There is something truly auspicious about eating off a banana leaf. I hope you enjoy this episode.

Special Banana Leaf Lunch
This is an indulgent lunch affair representative of the flavours of the Udupi-Kundapura region in most of the 20-dishes that make for a typical baale ele oota offering here. The food is served hot and fresh, and conveys a wholesomeness that is pleasing and satisfying. One begins with a traditional grape juice and mosaru vade, menasinkai bhajji, kosambari, kadubu-chutney, couple of coconut-rich vegetables before proceeding to the substantial mains of poori-saagu, anna (rice) served with tilli saaru and sambar. Servings are unlimited, and the servers are quick and efficient in dispensing refills. Make sure you save space for the desserts, a payasa and hollige, before you close with curd rice, banana and beeda, in true South Canara style.

It had been a while since we tasted a Jolada Rotti meal, comprising soft, butter-smeared jowar rottis that are best enjoyed with nourishing preparations like the yennegai or eggplant curry. In this takeaway lunch, we ordered a simple but sumptuous jowar rotti meal that came close to quelling our North Karnataka craving, but most importantly included a delicious bonus in the seekarne, a spicy, slightly tangy ripe mango dish that is a must-try before the season ends! This was an amazing afternoon! To catch up with nearly 150 food lovers - who had come not only from all parts of Bengaluru but also beyond - and learn from them first hand their special connection with our show. I’ve always known that our work connects with a wide cross section of viewers, but here for the first time, we were meeting them. Our youngest participant was just over two and the oldest, in their eighties. Truly felt blessed to meet each one of them over a delicious jolada rotti oota at one of my favourite Uttara Karnataka restaurants, the legendary 60-year-old Basaveshwar Khanavali, here in Koramangala, Bengaluru. The fertile black soil of North Karnataka yields a rich bounty of vegetables and grain, and this delicious, fresh produce is best experienced in a traditional Jolada Rotti (jowar rotti) vegetarian meal at a khanavali (eating house) in the region. And the most popular jolada rotti oota seems to be the one served at Basaveshwar Khanavali, a string of vegetarian eateries in Dharwad, Hubballi and now, Bengaluru, that date back to 1963. We visited their main branch at Chennamma Circle in Hubballi, where we met the Ganachari family that is committed to serving sumptuous North Karnataka meals, and also discovered an interesting technique that makes their jolada rotti special. When Mr Mohan Rao couldn’t find a job in Bengaluru after completing his engineering degree, he hired a cook from Nellore and began a restaurant in 1981. Over time Hotel Navayuga became popular amongst its patrons for the biryanis, kebabs and fries. Its patrons include not just with the common man and hordes of travelers given its location in Gandhinagar, but its fare has also endeared itself to luminaries of Karnataka, most noteworthy being the Dr Rajkumar parivar.

I was told about this place by Karnataka Ratna, Dr. Puneeth Rajkumar, Appu Sir, and more recently shared a meal with his nephew, Vinay Rajkumar and Anushree when I tasted some of Dr Puneeth Rajkumar’s most favourite dishes here. In this Gourmet On The Road episode, I return to taste some of the delicacies that have transformed Hotel Navayuga from an eatery that was born out of the need for a livelihood to a Bengaluru culinary icon.

What I find most appealing about a good North Karnataka meal is its balanced approach when it comes to nutrition, the meal components, both raw and cooked, dishes that complement and contrast, not just in taste and textures, but also in the warming and cooling impact that they have on the body. A good representation of this culinary ethos is the jowar bhakri meal served at Kamat Bugle Rock in Basavanagudi. Part of the Kamat Yatri Niwas group that first brought North Karnataka cuisine to Bengaluru in a restaurant format, this 17-year-old eatery serves a satisfying jolada rotti oota, albeit with flavours slightly tweaked to better suit the palate of this South Bengaluru suburb. I was first introduced to Hotel Navayuga during the course of my most memorable meal, with Karnataka Ratna, Dr Puneeth Rajkumar, Appu Sir. We were relishing a traditional jolada rotti oota, but somewhere our conversation veered to tasting a biryani during our next meal. Alas, that wasn’t meant to be, but deep down I feel that if it would have been at Hotel Navayuga, a 40-year-old eatery that Appu Sir spoke about quite fondly. I did make a visit to the eatery later, to record a tribute episode to commemorate his last film over a meal with his nephew, Vinay Rajkumar and Anchor Anushree. It was also during the course of this meal that I decided I must return to film a full-fledged Gourmet On Episode.
