» THE JAPANESE STREET FOOD

Asakusa is reminiscent of an older Tokyo, lined with traditional craft shops and street-food stalls along Nakamise Street, near the ancient Sensō-ji Temple. Mid-19th-Century Hanayashiki Amusement Park has thrill rides and cafes, while riverside Kuritsu Sumida Park hosts regular festivals and firework displays. Casual izakaya bars dot the neighborhood, as well as yakitori restaurants serving grilled meat skewers and beer.

????BROTH: The broth includes shoyu, kelp, pork for richness, and most importantly, niboshi (dried boiled fish - sardines or anchovies).
NOODLES: The broth is typically prepared first due to the amount of time it takes to prepare. The fresh noodles are boiled for a short period and placed in a bowl separately from the broth. The toppings go in last, on top of and into the broth.

????ZENTORO MABOMEN (SPICY TOFU RAMEN): You need douban (fermented broad beans and chili paste) and douchi (fermented black beans) to make this dish. It’s meant to be spicy and almost sticky. There should also be minced pork. Add thick ramen noodles to the mabo-dofu dish.

????SANRATANMEN (HOT AND SOUR RAMEN): Black pepper, red peppers (tougarashi) and a sourness from vinegar come together in the broth. Toppings include wood ear mushrooms, bamboo shoots and tofu. Thinner noodles are used here.

????CHICKEN RICH RAMEN: They use high-grade chicken with a lot of collagen. The broth is comprised of several vegetables, which are blended into the thick and creamy chicken broth. Add some lemon for acidity.

Daisen is a mountainous area in Tottori, famous for its high-grade chicken. The soup includes roasted beef ribs and sardines. In addition to the standard egg, green onion, kamoboko (fish cake), and seaweed toppings, they sprinkle on fried garlic. The noodles are thin and straight.

Nakamise Dori (street) dates back to the 17th century. It's one of the oldest shopping areas in Tokyo. This street leads up to Sensoji Temple, Which is one of Tokyo's most famous tourist attractions. This area in Asakusa is loading with great shopping and amazing street foods. In this video I explore and show you just some of the foods available in the area around Nakamise street.

We kick off our 7-episode #BestEverIndiaRoadTrip in Mumbai, India. Mumbai is located on the West Coast of India, and the metropolitan area has a booming population 21+ million. It’s known for being the financial capital of India as well as the hub of the internationally-popular Bollywood film industry. The food culture in Mumbai is recognized worldwide and its street food offers delicious, flavorful combinations of ingredients.

1. KAPIL FAMOUS DABELI CENTRE: Dabeli (Non-Jain version)
ADDRESS: Old Nagardas Road, Behind Chinai College, Andheri East, Mumbai - 400069

????DABELI: Dabeli is a popular Indian snack made with boiled potato mash. The mash is then mixed with chopped onion, garlic chutney, sweet chutney, pomegranate, peanuts and sev (shaved gram flour).

2. AGARWAL FAST FOOD: Sev Khamani + Kachori + Ragda Puri

????SEV KHAMANI: Sev khamani is a dish originally from Surat, Gujarat in India. It is made using gram flour mash, onion, coriander, sugar, gram flour shavings and green chillies.

????KACHORI: Make the kachori dough using refined flour and then stuff with onion-boiled potato mix and deep fry. Then, top the fried bread with onion, coriander, gram flour shavings, mint chutney, sweet chutney and green chili.

????RAGDA PURI: The ragda is made by boiling chickpeas and letting it simmer. Fill the refined flour crisps with potato, moong lentil, green mint chutney, sweet chutney, chaat masala, black salt, red chili powder, coriander and, of course, the ragda.

OPEN: Weekdays: 11:30AM - 9:30PM | Weekends + Public Holidays: 11AM - 9:30PM

????DOJO NABE: First cook the fish for 20 minutes in a pressure cooker, allowing it to soften (with the bones in). Then add the fish to a platter, mixing it with soy sauce and radish broth and allowing it to cook on a mini-stove. Wait for the broth to boil, then add green onion on top. That’s it, ready to eat! Continue to add broth as you like while eating.

????SHIORAKA: Begin by slicing the squid, removing its organs and putting them in a plastic bag. Separately, allow the squid to marinate in salt for 30 minutes before adding it to the plastic bag containing the squid organs. To get the most flavor, the squid will marinate for 5 days; however, it can also be eaten right away.

????Fugu is one of the most celebrated and notorious dishes in Japan. Due to its tetrodotoxin, it can be lethally poisonous, which is why there are strict rules around the preparation and serving of this dish. Fugu preparation is controlled by Japanese law, with chefs undergoing specific training for a minimum of three years. Our chef, Mr. Nakase, received his certification and has been lawfully serving some of Tokyo’s most delicious fugu for the past 14 years.
