» THE MUMBAI $100 STREET FOOD CHALLENGE

We kick off our 7-episode #BestEverIndiaRoadTrip in Mumbai, India. Mumbai is located on the West Coast of India, and the metropolitan area has a booming population 21+ million. It’s known for being the financial capital of India as well as the hub of the internationally-popular Bollywood film industry. The food culture in Mumbai is recognized worldwide and its street food offers delicious, flavorful combinations of ingredients.

1. KAPIL FAMOUS DABELI CENTRE: Dabeli (Non-Jain version)
ADDRESS: Old Nagardas Road, Behind Chinai College, Andheri East, Mumbai - 400069

????DABELI: Dabeli is a popular Indian snack made with boiled potato mash. The mash is then mixed with chopped onion, garlic chutney, sweet chutney, pomegranate, peanuts and sev (shaved gram flour).

????KACHORI: Make the kachori dough using refined flour and then stuff with onion-boiled potato mix and deep fry. Then, top the fried bread with onion, coriander, gram flour shavings, mint chutney, sweet chutney and green chili.

????RAGDA PURI: The ragda is made by boiling chickpeas and letting it simmer. Fill the refined flour crisps with potato, moong lentil, green mint chutney, sweet chutney, chaat masala, black salt, red chili powder, coriander and, of course, the ragda.

Add a mixture of ginger-garlic paste, coriander, and soaked basmati rice. Cook for 15 - 20 minutes. Mix coarse wheat flour with water and pound for about 30 minutes. Add masala to the semi-cooked flour including black peppercorn, khwab chini, cinnamon, cardamom, 2 types of cumin, rose petals, almonds, cloves, big crystal salt and oil. Close and cook. Reduce the fire and leave it to cook for 2 hours. Pound the mixture for 25 minutes and add a paste made of 3 types of lentils, and ghee and pound it more for 5 minutes. Ready to serve. Top with teera, ghee, and fried onions.

» GOA’S FORBIDDEN STREET FOOD

1. HOTEL PARAKH: Tambda rassa (Red Curry) + Pandhara Rassa (White Curry) + Sukha Mutton

OPEN: 12:30- 3:30PM and 7:30-11:00PM

????TAMBDA RASSA: The Masala is made by frying onions in oil with grinded coconut, coriander and sesame seed paste. Add Kolhapur special masala chutney, salt, turmeric, garam masala and cook in mutton with stock and some water. Let it simmer for 10-15 min until it reaches boiling point. Serve with millet bread, called Jowar Bhakri.

????PANDHARA RASSA: Make the base masala by frying whole spices in hot oil like cinnamon, clove, bay leaf, black peppercorns, coconut milk, chicken stock, mutton stock, sesame seeds paste and ginger garlic paste. Then add water, chicken and mutton stock, cook properly to perfection.

????SUKHA MUTTON: Fry boiled mutton pieces in oil, salt and chili. Serve hot!

Open the cover and add tomato paste with green chilies & black pepper. Mix everything together then add yogurt & cream. Steam for a few minutes. Split the rip bones, and chop it into fine pieces. After 5 minutes, add 13 pieces of butter. Chop again. Add more ginger, coriander, green chilies, and cream.

????????In Uzbekistan, samosas are typically filled with meat (mutton, chicken or beef), vegetables (pumpkin, potato or onion), mushrooms, eggs, peas, herms and even a sweet ingredient from time to time. What makes an Uzbek samosa stand out (as is the case with most Uzbek dishes) are the spices used to enhance the flavors - zira, black and red hot pepper and sesame to cover the samosa.

Food info:
1) Khad Lam (Slow Cooked Underground Lamb):

Khad lamb (means cooking lamb in a pit in the ground)
Earlier soldiers didn’t want to leave any trace of smoke so that they can hide hence discovered this way of cooking.
Earlier it was rabbit meat but now since it banned so we are cooking lamb.

Making of garam masala- Roast all the following ingredients and pound it together: green cardamom, black pepper, cloves, coriander seeds, black cardamom, turmeric, bay leaves and caramelized onion powder.

Basic marination- Make cuts on the leg of the lamb and put minced garlic with lots of freshly prepared garam masala.

Next for the paste-mix red chili powder, coriander powder, turmeric, salt and lots of ghee.

Add this paste to the basic marination with a base of rotis and banana leaves. Cover it with a wet jute sack so that it doesn’t burn as it needs to be in direct contact with the fire for 2 hours in the pit.

2) Junglee Mass (Wild meat)
Five Ingredients Recipe-
If hunting, you get stranded, these are easily available in any village
Red chilli powder, Ghee, Salt, Dal or lentil, Coriander seeds, Lamb pieces. In a wok, combine everything together till the meat is soft and tender.

Top 10 Indian Street Foods in Chennai, India | The BEST INDIAN Street Food in Chennai

Back in November of 2018, I took an incredible, 3-week trip through seven cities in India. The fifth city I visited was Chennai, which is located in the state of Tamil Nadu. The food in Chennai is so flavorful and spicy, and I wanted to share with you my favorite dishes there. These are the top 10 Indian street foods in Chennai!

1. Beef Liver at Sukkubhai Biryani

I didn’t know you could get beef in India until my friend Deepak took me to this restaurant. I love beef liver, and the one that’s served at Sukkhubai Biryani is outstanding. It’s served in a dark, rich sauce and is rich, flavorful, tender, and perfectly spiced!

2. Beef Brains at at Sukkubhai Biryani

I’m always down to try exotic dishes when I travel, and you can’t get more exotic than the beef brains at Sukkubhai Biryani! They’re full of flavor and have an irresistible, gelatinous texture that I couldn’t get enough of!

3. Beef Biryani at Sukkhubai Biryani

Biryani is one of my favorite dishes in India and the beef kind I had in Chennai is one of the best I’ve ever had! The rice was perfectly cooked and full of delicious spices and tender chunks of flavorful beef. I loved it!

4. Filtered Coffee on Marina Beach

The filtered Chennai coffee I had on Marina Beach was a little different from the Karnataka filtered coffee I tried in Bengaluru earlier in my trip. It was super strong and aromatic and reminded me of a Cuban cortadito!

5. Mud Coffee at Mud Koffee

Hands down, the most unique coffee I’ve ever had is the mud coffee at Mud Koffee in Chennai. It’s made using the Turkish brewing technique and traditional filtered coffee. It comes out thick, milky, and frothy, and tastes like hot chocolate!

6. Fried Mutton Brain at Thambi Vilas Restaurant

Like the beef brains earlier, the fried mutton brain at Thambi Vilas Restaurant is gelatin-like, but full of sensational flavors that made my mouth water. It’s covered in a sensational masala and curry leaves and is my favorite food in Chennai!

7. Mutton Intestines at Thambi Vilas Restaurant

In India, they know how to do organ meat right. The mutton intestines at Thambi Vilas Restaurant are a little gelatinous and are bathed in a delicious, spicy masala with curry leaves. The cooks knocked this dish out of the park!

8. Sambar Vada at Eating Circles Restaurant

What do you get when you cross a crispy, fried vada with delicious sambar? You get the Sambar Vada at Eating Circles Restaurant. The vada soaks up the rich, sweet, tomato-based broth and becomes a flavor bomb in your mouth! It’s so tasty and juicy!

9. Neer Dosa at Eating Circles Restaurant

Unlike most other dosas in India, the Neer Dosa at Eating Circles Restaurant is a moist, gooey, gelatinous pancake that’s served with delicious, fresh coconut flakes and mint and tomato chutneys. It’s super gooey and is fantastic with the thick, flavorful coconut flakes. It’s one of my favorite dosas in India!

10. Fried Squid on Marina Beach

Seafood is a huge part of Tamil cuisine and the fried squid I tried on Marina Beach takes the prize for the best seafood in all of Chennai! It’s not rubbery at all and has a nice crunch from the frying process. The delicious curry made this succulent dish even better. I’ve eaten squid in lots of different countries, but this fried squid is my favorite squid dish in the world!

» KILIFI SWAHILI VILLAGE

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali
ADDRESS: Koleni, Kilifi, Kenyan Coast
OPEN: N/A

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

» NAIROBI STREET FOOD

1. MAMA MWENDWA’S: Chapati + Tea (Chai) + Mayai-Chapati
ADDRESS: Nation Kibandas, Mombasa Road, Nairobi
OPEN: 6:00AM to 3:00PM

???????? CHAPATI : Add flour to a bowl, salt and water and knead until firm. Sprinkle a little flour on a flat surface, then flatten and roll out the big mound of dough onto the surface. Pour a little cooking oil on the flat dough. Using a knife, portion the flat dough lengthwise into equal strips. Roll in each strip into a ball. Flatten dough balls using a rolling pin then cook on both sides on a hot pan.

☕ TEA (CHAI): To a big sufuria, add water followed by milk. As it gets hotter, add tea leaves.

???? MAYAI-CHAPATI: Add cooking oil to a hot pan, pour in a beaten egg and cook until well done on both sides. To make the Mayai-Chapati, place the omelette inside a chapati and serve.

2. ENKARE: Nyama Choma + Ugali + Kachumbari + Sukuma Wiki + Mutura
ADDRESS: Kitengela, on the outskirts of Nairobi
OPEN: 12:00PM to 11:00PM

???? NYAMA CHOMA (Roast Meat): Divide the meat into popular cuts like leg and ribs, with offcuts like kidney. Season with salt and place in an oven for a few minutes. Then, place on a charcoal grill and cook evenly on both sides.

???????? UGALI : Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

???????? KACHUMBARI: Mix tomato, onion, lemon juice together to make salad.

????????SUKUMA WIKI (Collard Greens): Fry onions in cooking oil, add the sukuma wiki for about a minute or two and then serve.

???? MUTURA (African Sausage): Cut offal into small pieces then boil. Fry with onions, herbs and spices. Stuff inside uncooked tripe and tie both ends firmly, then grill.

????PRICE: ¼ kg Nyama Choma with accompaniments (Ugali, Kachumbari, Sukuma Wiki, Mutura) 4.92 USD/500 KSH

3. MIGINGO NI YETU: Grilled Cow Head
ADDRESS: Kenyatta Market
OPEN: 12:00PM - 9:00PM

????GRILLED COW HEAD: Skin cow head and split it into different cuts. Boil for 2 hours then grill until ready.

Meeting Sonny from Best ever Food Review

Met Sonny One of the best food reviewer around the world. It was great fun meeting him. Though I had some fear inside me, at the time I met him I felt so comfortable. He was very friendly which must be appreciated.
