Love Animal-Style Fries from In-N-Out? Here's how to make them at home!

Do you like your fries Animal Style at In-N-Out? Now you can make Animal Style fries at home! In 1948 Harry Snyder introduced California's first drive-thru hamburger stand, In-N-Out, and it has been a staple in California culture ever since! If you are longing for the ultimate fast food fix, we suggest recreating In-N-Out's famous Animal Style Fries at home for yourself. The combination of crispy fries smothered under melted cheese, caramelized onions, and secret sauce is pure indulgence at its finest and a perfect pairing for California Sparkling wine or a crisp glass of Sauvignon Blanc.

INGREDIENTS
For the Caramelized Onions:
2 tablespoons (30 g) vegetable oil
2 large, sweet onions, finely chopped
1 teaspoon (3 g) coarse kosher salt
1/4 cup (60 ml) white wine, such as Sauvignon Blanc or Pinot Gris (to deglaze pan)
¼ cup (60 ml) water

For the Secret Sauce:
½ cup (115 g) mayo
¼ cup (60 g) ketchup
2 tablespoons (30 g) dill pickle relish

For the French Fries:
4 medium russet potatoes (about 700 g)
½ tablespoon (6 g) coarse kosher salt
High temperature oil for frying
Fine grain sea salt or table salt to taste for seasoning fries

To assemble:
4-6 slices of American cheese
1 teaspoon (5 ml) distilled white vinegar

Directions
To make the onions:
In a large skillet with a lid, heat the vegetable oil over medium-low heat. Add the onions and 1 teaspoon (3 g) salt. Stir to combine, cover and cook, stirring occasionally for 25 min. If browning too quickly reduce heat.

Uncover, increase heat to medium-high & cook, stirring often until caramelized, 5 min. Add the wine and water to the pan, scraping up any browned bits on the bottom. Cook until the water has evaporated, about 2 more minutes. Set aside.

To make the sauce:
Combine the mayo, ketchup, relish, & vinegar. Stir to combine. Set aside.

To make the fries:
Peel and cut the potatoes into fries that are thin and long, similar in shape to fast food fries. Take your time and make sure that the fries are all uniform in size and shape.

Rinse and drain the cut fries, then place in a large pot and cover with cold water until submerged. Season the water with ½ tablespoon (6 g) coarse kosher salt.

Let sit at room temperature for 1 hour or up to 8 hours in the refrigerator. Drain the water and dry off the fries on a paper towel.

Heat a heavy-bottomed pot filled with high temperature cooking oil (about 2.5-inches) to 325°F (160°F).

Fry the fries in batches for 3-4 minutes giving a turn in the middle of the cooking time. Remove to a new paper towel to drain. Season with more salt to taste. Repeat with the remaining fries.

Increase the heat of the oil to 375°F (190°F). In batches, add the par-cooked fries back into the oil and fry for 2-3 more minutes.

Remove with a spider or slotted spoon to drain the oil and then transfer to a heatproof bowl. Season with salt immediately, tossing the fries with the salt to coat. Transfer the cooked and seasoned fries to a paper towel lined plate and repeat with the remaining fries.

To assemble the animal style fries:
Preheat the oven to broil. Cover a baking sheet with foil. Spread the prepared fries in an even layer. Layer on the American cheese over the top.

Broil for 3-5 minutes, watching it closely. Once the cheese is melted quickly spread cooked onions over the top. Smother with the sauce over the top and serve immediately.

Recipe notes:
This recipe can be made with store bought frozen fries, prepared per the package instructions instead of homemade if desired.
The caramelized onions and dressing can be made up to 3 days in advance and stored separately in the fridge.

I’ve eaten In-N-Out Burger before and I’ve eaten Five Guys before… but this was my first time to ever eat them back to back. In this video I’m taking you on a full burger review comparison between In-N-Out and Five Guys, two burger chains with extremely loyal followings.

In-N-Out Burger

I ordered the Double Double and extra crispy fries. Now to keep things consistent for the review, I couldn’t go all crazy with their secret menu of toppings, so all I ordered was extra onions.

Prices - Double Double - $3.85, Extra crispy fries - $1.80

The Double Double from In-N-Out is indeed extremely tasty and salty and it has an amazing balance of tastes and everything goes together in such harmony. However, after finishing the Double Double I walked away still quite hungry.

Five Guys

Next we drove over to Five Guys, luckily just a 5 minute drive from In-N-Out Burger. Again, I kept it pretty simple and just ordered their cheeseburger all the way, and a side of regular fries. You’ll notice immediately that the prices are twice as high as In-N-Out, however, we’ll find out that their burger weight probably twice as much as well.

Prices - Cheeseburger - $7.99, Fries - $4.29

The Five Guys Cheeseburger is heavy and dense, and they already press down the bun for you, so it’s not fluffy at all. The ingredients inside are great, and I especially enjoyed the mushrooms inside. The burger is definitely not as salty as In-N-Out, however it tastes better quality.

VERDICT:

It sort of depends on what mood you’re in, and you do have to take into account that Five Guys is twice as expensive as In-N-Out - so you could eat two Double Doubles for the same price as one Five Guys cheeseburger.

I think the In-N-Out Double Double is tastier, possibly because it’s saltier, but the Five Guys burger tastes fresher, more natural, and a little more home-cooked styles. Overall, I would choose Five Guys more often than In-N-Out Burger. That’s my final verdict.

In his show California's Gold, Huell Howser learns about the secret menu of IN-N-OUT Burger from the official source through an exclusive interview at the chain's birthplace in Baldwin Park near Los Angeles, California. This episode was first aired on 1/31/2010 at 7PM on KCET, Los Angeles.

Huell Howser passed away on 1/7/2013. He will be missed.

IN-N-OUT burger is available only in 5 states: CA, AZ, NV, UT, TX. It is famous for its freshness and quality of ingredients. e.g. the beef patties are never frozen, the fries are made on site from whole potatoes, the buns are fresh. Their slogan is Quality you can taste.

I don't remember when their business expansion started, because they were not in Northern California until like 10 years ago.

Is In n Out testing the market in Toronto? They served burger in Canada in Sept of 2014. Not sure why?

When I think more about this secret menu, In N Out has great incentive not to put them on the official menu. First of all, they can change the price without prior notice. You will find out when you pay. Nowadays, fast food restaurants need to post the calories info on their menu. A secret menu saves on the efforts in that area.

IN-N-OUT ANIMAL STYLE & DOUBLE-DOUBLE CHEESE BURGER

IN-N-OUT is always my favorite place when I crave for burgers and fries. We are lucky because this restaurant is available in Southern California.. I prefer In-N-Out when ordering burgers than places like McDonalds, Burger King or Jack in The Box, etc. Another favorite burger place that I also like is Red Robins. Thanks for watching!

In-N-Out...My Burger Challenge

I had the double double, the 3X3 and the 4X4...all done in the animal style. What was left to do? They don't make burgers bigger than the 4X4 anymore. So I trained, harder than before. I hit the books, reading everything I could on the secret menu. I ate a large meal early the day before and nothing the day of the burger challenge. I tried to get them to make a double double animal style with a double double animal style in the middle...a double double, double double animal style burger. To the best of my knowledge this was my own mad genius idea. I just ordered two double doubles and put them together myself. It was a intimidating pile of burger, cheese, onions and extra buns no less. I dove in hard and fast. I like my food hot so I was really choking it down. The sandwich was hard to keep intact but by rotating around, working towards the center, I managed to keep it together. I didn't have fries. I had a small water to aid in this feast. I grew tired and thought it wouldn't happen. My bites got small and I was starting to chipmunk the food in my mouth. a few sips of water and fresh air gave me the strength to swallow the last bite. I did it and felt pretty good. Chase that with a few tums and a cold beer...I'll be alright.
