HA GIANG VIETNAM - Welcome to Ha Giang, in the mountains of northern Vietnam, on the border of China. Today we’re with Mr. Thien at his homestay where he and his family will be cooking a full Tay People festival meal - including a five colored sticky rice, a whole duck, a whole pig, and a fish.

A big thank you to YESD Travel Vietnam for making this happen: Highly recommended for authentic and responsible tours in Vietnam.

When we arrived they were already beginning the meal preparations. We were lucky to see the entire cooking process from start to finish. One of the traditional foods of the Tay People is five colored sticky rice, each color made from a natural coloring and steamed. Along with the sticky rice we had a huge assortment of pork dishes, including fresh blood and organ sausage, boiled meat, grilled meat, and probably my favorite of the meal - roasted duck stuffed with Kumquat leaves.

When the food was ready, they presented it on trays over banana leaves with a chili dipping sauce. Food in Northern Vietnam is not only about eating, but it’s about socializing, talking, drinking, and eating together.

BLACK THAI JUMPING FISH

1. MR. KINH’S FAMILY HOME
ADDRESS: Tu Le Ward, Van Chan District, Yen Bai Province

????STICKY RICE IN BAMBOO: Wash the rice and place it in the bamboo. Add water. Cover the upper part with phrynium leaves and grill over a fire. Use a machete to cut the bamboo bark. Serve with sour buffalo skin.

????SOUR BUFFALO SKIN: Grill the buffalo skin and remove the hair. Boil the skin for 45 to 60 minutes. Cut the skin into thin slices and season with galangal, chilis and salt. Place in a jar for 5 to 7 days to ferment the skin.

????SOUR DECOMPOSED FISH: Cut the fish in big chunks. Roast the rice then pound it into a powder. Season fish with galangal, lemongrass, chillies, rice powder and salt. Place it in a jar for 3 to 7 days.

????THAI TRADITIONAL GRILLED FISH: Cut the fish open and remove the gastric acid. Marinate in lemongrass, chillies, perilla leaves, Thai pepper, salt, and minced local stinky leaves. Place inside the fish then fold fish in half. Place fish on a bamboo skewer and grill for 30 minutes.

????FISH GASTRIC ACID DIPPING SAUCE: In a bowl, add the fish gut, local stinky leaves, salt and perilla. Pour the mixture into a bamboo trunk. Use phrynium leaves as a cork. Grill the bamboo trunk for 20 minutes. Pour it out and serve as a dipping sauce.

????GRILLED MOSS IN BAMBOO: Wash the moss and chop in small pieces. Season with garlic, chillies, lemongrass, shallot, and cilantro. Place phrynium leaves in the bamboo trunk, then add the moss in and grill on fire for 20 minutes. Remove from the bamboo and serve.

????JUMPING FISH SALAD: Cut the banana blossom into thin slices. Squeeze it in water with salt. Mince the fish mint and normal mint. Add a bit of salt to the veggie mix. Add sour juice made from bamboo shoot pickle juice.

HANOI, VIETNAM - Today we’re going on an ultimate Vietnamese street food tour to eat 5 of the must eat Vietnamese foods in Hanoi, that are not pho. I’m hanging out with local food expert @Hanoifood from Hanoi Food. We’re eating some local favorite Vietnamese dishes and some extreme dishes as well. It’s going to be delicious!

Here are all the places we ate:

1. Xôi Xéo
Location: Xôi Mây (
Price: 15,000 VND ($0.63) per bowl
One of the common breakfasts in northern Vietnam is sticky rice with toppings. She has to be one of the fastest food assemblers in all of Vietnam!

2. Bún Riêu
Location: Bún riêu Hàng Lược (
Price: 75,000 VND ($3.15) for fully loaded bowl
Pho is extremely common in Vietnam, but there are so many other noodle soups, and bun rieu is one of the best. This place is extremely popular and we ordered it fully loaded!

3. Bún Chả
Bún Chả Hàng Quạt (
Price: 45,000 VND ($1.89) per portion
If there’s one dish that you have to eat when you’re in Hanoi, Vietnam, it would be bun cha for lunch. The combination of grilled pork in a soup of fish sauce with noodles and vegetables is heavenly.

4. Bún ốc
Location: Bún ốc cô Huệ (
Price: 40,000 VND ($1.68) per bowl
One of Khoa’s favorite local dishes is bun oc, or snails and noodles. We specifically tried the cold version with giant snails!

5. Cháo
Location: Cháo Sườn Sụn Huyền Anh Đồng Xuân (
Price: 35,000 VND ($1.47) per bowl
Another common dish in Vietnam is chao, or congee, rice porridge. Rather than being chunk with rice grains, this was one of the smoothest bowls of congee ever.

6. Chả Rươi
Location: Cửa Hàng Chả Rươi Hưng Thịnh (
Price: 35,000 VND ($1.47) per piece, we ate 5
One more extreme Vietnamese food we had to try was cha ruoi, a sandworm pancake. A little bizarre, but proved to be one of the best meals of the day!

There are millions of Vietnamese people outside of Vietnam. There are thousands of Vietnamese people living on Tonle Sap Lake in Cambodia, not too far away from the city of Siem Reap. Every day thousands of tourists from all over the world take tours on this lake without knowing the truth behind these floating homes. They are taken to the floating market where they are guilt tripped into buying inflated bags of rice, noodles, or candy and thinking they are doing a good deed. But the fact is, these markets and nearby school leaders are in on a big scam at the children's expenses. The less touristy and smaller Catholic School doesn't appear to be a part of this bait and switch situation because they are the ones petitioning and talking about it. TAY VILLAGE FEAST

1. BAC HA MARKET
ADDRESS: Bac Ha Township, Bac Ha District, Lao Cai Province

????????CORN STEAMED PUDDING: After grinding the corn and mixing with lime water, steam the corn mixture in the mold. Cut in bite-sized pieces. Add pickled cabbage, ground peanuts, pickled juice, and fresh herbs. Top with MSG and seasoning powder.

????????FIVE-COLORED STICKY RICE: Soak the sticky rice with Magenta leaves for various colors. Steam the rice in a hollow tree trunk pot. Wrap the sticky rice with a phyllium leaf and add a mixture of ground sesame seeds and salt.

????????FRIED POUNDED STICKY RICE CAKE: After pounding the rice, either crispy fry it or serve it plain. Fry two sides of the pounded sticky rice cake. Cut it into bite sizes.

????????FRIED MUNG BEAN RICE CAKE: Take a small piece of rice flour and add mung bean paste as the filling. Sprinkle sesame seeds on the outside. Deep fry until it turns golden brown.

????PRICE: Corn Steamed Pudding & Colored Sticky Rice - 10.000 VND / $0.4 USD each | Fried Sticky Rice Cake - 5.000 VND / $0.2 USD | Fried Mung Bean Cake - 3.000 VND / $0.15 USD

2. MR KIEN AND MRS LUYEN’S FAMILY
ADDRESS: Na Lo Village, Bac Ha Township, Lao Cai Province

????ROTISSERIE PIGLET: Stuff with Clausena indica leaves and season with Thai pepper, salt, MSG and ground pepper. Rotisserie for four to five hours. Regularly spray water on the skin. Take out the leaves and squeeze for dipping sauce, then cut the meat in bite sizes.

????FRIED PORK SHOULDER: Blanch the piglet shoulder in the broth with fermented rice, ginger, lemongrass, lime leaves, Thai pepper, and dried shallots. Fry it in a pan with pork fat.

????TAY TRADITIONAL BRAISED PORK BELLY: Blanch the pork belly in the broth with fermented rice, ginger, lemongrass, lime leaves, Thai pepper, and dried shallots. Pierce pieces of pork belly with bamboo skewers. Dip the meat in a bowl of vinegar and honey. Fry in pork fat and then boil in the blanch broth again. Cut into one-inch slices and season with ground pepper, Thai pepper, ginger, rice wine, Tay fermented soya paste, Tay fermented soya bean, fish sauce, MSG and seasoning powder. Stack up 8 even pieces. Put it neatly in a bowl. Add pickled cabbage on top and braise in a bowl in a steamer for 2 hours.

????????BLACK STICKY RICE: Soak the sticky rice and mung bean for eight hours. Grill the bark and “Núc nác” tree branches. Smash it to ash, and mix with the sticky rice. Season the pork belly with a mixture of prickly ash, Thai pepper seeds, MSG, salt. Add “dong” leaves or Phrynium leaves. Scoop a bowl of dyed sticky rice, mung bean, and finish with slices of pork belly. Wrap it up, and use a straw to tighten it. Cook it in boiling water for 6 hours. Allow it to cool down for 6 to 8 hours.

I Found This In A Vietnamese Village

After teaching English to the kids in the village here in Vietnam I try to take the motorbike for a spin and either visit a new village, or head to a new lake or mountain in the afternoon that I haven't visited yet and checkout some of the amazing views of Vietnam. It gives me time to meditate and reflect on life and my goals and dreams.
Love the Vietnamese village life, the people, the food and their culture.

Trapped in Remote Vietnamese Village

Got trapped in Yen Minh which is a remote Vietnamese Village on the Ha Giang Loop! Now we are having to deal with the aftermath of landslides and flooding....

We were on the ha giang loop and got caught in an awful mudslide that left us trapped. The mudslide was so serious they had to evacuate everyone from Yen Minh, which is a village in the ha giang loop. The flooding that the mudslide caused was so serious it was up to everyone's knees. This Yen Minh mud slide was definitely a travel mishap and quite the experience. Vietnam mudslides are no joke. If you're going to the Ha giang loop, just be aware that that it's not the safest during monsoon season and that there could be flooding.

If you had told me a year ago that we were going to sell all of our stuff to start backpacking the world, I would have called you a liar. Decisions like the one we made start with an inflection point. A point where you realize that life can never be the same anymore. The Chase Begins
We moved in with our parents, sold everything we own including our cars, and paid off $70,000 worth of debt. We worked 70hrs/week over the last year trying to save up $15,000 to make our dreams come true. Now, we are travel journalists who showcase the beauty in different cultures and inspire others to chase their dreams through our YouTube Channel and website Chase for Adventure. We want to show others that if they want something bad enough, they’ll figure out how to get it; show people who are struggling that they can make the light at the end of their tunnel. Chase for Adventure is more than just a travel vlog and blog; it’s the chronicles of what it’s like to have a dream and do whatever it takes to attain it.
