Amazing Fish Cutting Skills. Singapore Street Food in Geylang Serai Wet Market

Geylang Serai Market is one of the biggest and busiest wet markets in Singapore. Since 1964, this market has been a focal point for the local Malay community, with a good selection of Malay and Indian-Muslim specialties on offer.
Reopened in 2010, the new Geylang Serai Market has become brighter and cleaner but the atmosphere of the old traditional market is still maintained.
After renovation, this market is dressed in a cultural suit - a traditional Malay kampong house. Either on weekday or weekend, it is always vibrant. Especially, middle-aged shoppers come here to do their daily shopping, plus flocks of young people come for good foods at weekends.
This market is a source of ingredients for Malay Singaporeans to prepare traditional dishes and supplies all sorts of Malay spices and a variety of Middle Eastern ones as well. Pork is not on offer at this market. Prices here are among the lowest in Singapore, especially fish prices
The second floor of Geylang Serai Market is home to hundreds of food stalls with main focus on Malay and Indian cuisine. This is the best food court to enjoy Malay dishes such as asam pedas stingray (spicy stingray), beef rendang (spicy beef), ikan terubok (fried fish) and goreng pisang (banana fritters).

The Noryangjin Market opened for business in 1927, making it Seoul’s oldest fish market. Located in Seoul’s Dongjak District, the market sits slightly south of the Han River. It is the largest fish market in the country and is open 24 hours a day. If you are looking for an especially exciting experience, head to the market early in the morning to watch the bustling fish auctions. You can see everything here: shrimp, crab, squid, stingray, octopus, mackerel, tuna, lobster, clams, mussels, scollops, etc. Not only you can buy fish and crustaceans, you can also eat it on the spot ; various vendors prepare a fresh meal for you right there at the market. Visitors can also have their fresh purchases prepared at one of the restaurants located on the second floor.

Singapore Street Food. Great Skill. Cooking Fried Carrot Cake

This savoury carrot cake has no carrot, at least not of the orange variety. Instead, the core ingredients of the cake are rice flour and white radish which some call white carrot. The mixture is steamed, then cut into cubes and fried with garlic, eggs and preserved radish called 'chai poh'.
Commonly referred to as 'chai tow kway' in the Teochew dialect, these smooth and soft fried rice cakes can be found in almost every hawker centre. It is served black (fried with sweet dark soya sauce) or white (original).
The simple dish has its origins in Southern China’s Chaoshan province. There, it is known as 'chao gao guo' (fried starch cake) which is made mainly with rice flour. Fish sauce and black sweetened soya sauce are used to marinate the rice cake before it is cut and fried with eggs, oysters and prawns.
Brought over to Singapore by Teochew immigrants, it was known as 'char kway' (fried rice cake), which was simply cubes of rice cakes fried with dark soya sauce.
Teochew hawker Ng Soik Theng claims to be the first to have called this dish 'chai tow kway' in the 1960s when she added white radish to it. Another hawker, Lau Goh, is said to have popularised the white version

SINGAPORE - Today I’m hanging out with the one and only KF Seetoh, a legend of Singapore street food and hawker culture. We’re going to take you on a born and bred food tour of Singapore - dishes that were invented right here in Singapore.

Here are all the places we ate at in this Singapore food tour:

Bak Kee Teochew Satay Bee Hoon ( - First we headed to Bukit Merah, also known as Red Hill. It’s a huge neighborhood complex, market and hawker center. There’s a massive selection of food to choose from, but KF Seetoh took me first to eat satay bee hoon, or thin angel hair vermicelli covered in seafood and pork, and a ladle of creamy peanut sauce.

Hong Seng Curry Rice ( - Within the same Red Hill hawker centre you’ll find Hong Seng Curry Rice, where you can enjoy another popular Singapore street food - Hainanese curry rice.

Geylang Lorong 29 Hokkien Mee ( - Continuing on this food tour we drove over to Geylang to eat one of the best versions of Hokkien fried prawn mee, a stir fried noodle dish that’s one of the most beloved in Singapore. They make it by the batch and we had the chance to see the entire process of how it’s made. Delicious!

The Original Vadai ( - Next up over to Joo Chiat to eat at the Original Vadai - a Sri Lankan origin - yet transformed in Singapore to be more light and fluffy, totally different texture and flavor. They are so addictive and one of the best things about them is that you bite a green chili and then follow it with bites of the prawn vadai.

Sha Zah Confectionery ( - Finally to complete this food tour with KF Seetoh we headed over to Sha Zah Confectionery for their giant curry puffs. A perfect way to end this delicious Singapore street food tour!
