1. MAKOKO VILLAGE
ADDRESS: Lagos Lagoon, Nigeria

????????PANLA FISH: Wash and scale fish. Stick a piece of wood through the tail and the head of the fish, making a ring. Place them on the fire to smoke for 12 hours. Mix baking flour, yeast, a little water, salt into a ball and fry

????????ONUTCHONU: In a pot, boil cooking oil with white onion, salsa (mixture of tomato, red chili pepper and red onion) and allow to boil. Add salt and fish and mix.

????????OWE FUFLU: In a pot, add palm oil. Add red onions, a spoonful of the blend of chili pepper, tomato and onions and stir. Add crayfish seasoning (red cube, crushed), salt, dried fish and stir.

????????GALIDODO: Add cooking oil, onion and blend of chili pepper, red onion and tomato. Add more onion, water, dried fish, cassava flakes and mix. Add more cooking oil and mix until finished.

» THE MALAGASY SEAFOOD

1. MANAKARA FISHING VILLAGE: Seafood Feast
ADDRESS: Manakara, Madagascar

????CASSAVA: Boil cassava in water for 30 minutes. Once soft, mash the cassava, mixing in crushed peanuts until the texture is similar to mashed potatoes.

????BREADFRUIT: Boil the breadfruit until soft, then add a bit of salt and mash.

????SHRIMP: Sauté shrimp with onion and tomato. Add cassava leaves on top and allow it to boil in water to create a shrimp soup.

????TUNA: Cut the tuna into sections and put it in a hot steel pot. Add in fried onion, tomato and salt and allow it to steam until cooked through.

????(What the heck? Where’s the lobster emoji?) LOBSTER: Cut the lobster down the center and grill to perfection!

1.BOKKOM FACTORY
ADDRESS: Bokkomlaan

????????BOKKOM (DRIED SALTFISH):Clean the fish and separate them, preparing them for the salt bath. In a large rectangular stone tank, add the harder fish, fresh water and salt. Layer the fish and salt continue until all the fish is covered in salt. Leave the fish for one day. After leaving the fish in the salt water for a day, move them to another holding cell, placing a press made of wood on top of the stacked up fish in order to compress the air out of the fish to prevent it from going bad. Leave for 3 days. After 3 days, take a fish needle and string up a bundle of 10 fish to be hung out to dry for 5 days. After the fish is dried, peel and package it.

2. BEACH

INTERVIEWEE: Tracy-Lee Kuilders

????????SMOORSNOEK: In a pot, add chopped red, green and yellow peppers, garlic and onions. Add potatoes and spices. Add snoek and water. Cook on the fire for about 15-20 minutes.

????????WEST COAST ROCK LOBSTER: Cut the lobster in half and place on the grill. Add melted garlic butter and cook for about ten minutes. Grill lemon and serve together.

3. FALDELA’S HOUSE
ADDRESS: Bo-Kaap, Cape Town

????????SNOEK MASALA: Filet the snoek. Chop it into large pieces. In a bowl with fish masala, add garlic, cooking oil and lemon juice and mix. Add some lemon marrow (pieces) and salt. On a cutting board, lay out the snoek and marinate with the masala. In a baking pan, add olive oil. Bake for about 30 minutes or until ready.

????????DAAL: In a pot, add red lentils and masala spices: turmeric, chili powder, fennel, coriander, leaf masala, cumin & curry powder. Add a bit of water and cook on the stove until finished.

????????BOKKOM: In a pot, add a splash of water, onions, chili & garlic and brown. Add potatoes, cabbage and water. Add bokkom and simmer for 5 minutes. Serve with basmati rice.

1. KIVUKONI FISH MARKET
ADDRESS: Dar Es Salaam, Tanzania

????????FRIED TUNA: Cut the tuna into steaks and clean. Grate ginger over the tuna steaks, patting it down. Add salt. Fry for 7-10 minutes.

????????SARDINE SOUP: Slice tomatoes into with sliced onions. Place pot on fire. Add salt and mix. Peel and slice green mango. Add water and green pepperoncini.

????????FIRIGISI CHANGIMOTO: Mix together blended garlic, soy sauce, meat tenderizer and lime. In a big frying pan, add oil then add gizzards. Fry for 10-15 minutes then place in a bowl. In a new pan, add water, soy sauce, red onions and mix. Add vinegar and gizzards.

????????CHIPS MAYAI AKA ZEGE: Mix together green peppers, carrots and onions. In a small bowl, add eggs and salt. In a small omelet pan, add oil then french fries and top with veggie mix. Place on a charcoal grill. Pour an egg on top and allow it to cook.

3. COCO BEACH

????????MASHED POTATO IN COCONUT: Hollow out coconut. Add coconut cream, mashed potato and mishikaki. Remove wood skewers | Coconut cream: mix chili powder, lemon, salt, and coconut cream.

????????UROJO: In a bowl, add a hard-boiled egg, spinach, pakora, kachori, and cassava crisps. Pour soup on top | Soup: wheat flour mixed with mango juice and salt and lime.

????????BEEF MSHIKAKA: Skewer beef and grill. Mash some cassava and sprinkle salt on top. Add red juice (tomato sauce) and yellow juice (carrot, green chili, ginger and garlic and onion).

1. VINCENT’S HOUSE
ADDRESS: Deka Drum Village

???????? ZIMBABWEAN BREAD: In a bowl, mix maize meal, flour, salt, sugar, and water.
On coals, place a pot. In the pot add flour. Then pour in the mixture above. Cover with a plate and put coal on top. Let cook for 20 min.

???????? PORRIDGE: In a pot, add Sinka then pour in hot water and cover. Then place it on fire. Remove the sica and bring water to a boil. Once boiling, pour in a maize meal. Add sugar and mix.

???????? FRIED TILAPIA: In a pot, add flour. Separately, filet the Tilapia. Add salt. Roll in flour. Then place it in a pot with oil. In a separate bowl, whisk the egg. Remove fish and then roll in egg yolk. Place back in the pot to lightly fry.

???????? DRIED TILAPIA: Scale, filet, lay the fish on a rack. Dry it over a fire for 4 hours and place it in the sun every day.

???????? FRIED GUINEA FOWL: Bowl the guinea fowl and de-feather. Cut into pieces. Roll in flour and fry with a little oil.

???????? STEAMED TILAPIA: Scale the tilapia and cut it in half. Add to a pot, with salt and a little water. Boil. Add tomato seasoning and boil a bit more. Plate with sadza.

????????ANTS WITH PEANUT BUTTER: Fry ants for 10 minutes. Add peanut butter and 1 cup of water and stir. Add shallots and a pinch of salt to taste. Serve with sadza.

????????COW HEAD: Clean the cow head and remove the brain. Chop into edible sizes then remove all small bones then remove the tongue. Place pieces of meat into a big pot with salt and cook for about 4 hours. Serve with sadza and rape or kovo.

????????COW TONGUE: Boil the tongue for 30 minutes until soft. Remove from the fire, put aside and peel off the outer skin. Place the tongue on a braai stand and grill until its ready to eat.

» THE TRADITIONAL FOOD IN MADAGASCAR

1. TSENA’NY TANTSAHA TALATAMATY: Rice Porridge + Chinese Noodle Soup
ADDRESS: Talatamaty City
OPEN: 3AM - 7AM (or whenever the police shut it down)

Four miles outside of Madagascar’s capital city, Antananarivo, lies Talatamaty City. Talatamaty City is home to one of the country’s largest local morning markets, Tsena’ny Tantsaha. Sellers open up shop at 3am, selling everything from produce to fabrics. And lucky for us, the market has no shortage of food to try as well.

????RICE PORRIDGE: Zebu (Malagasy cattle) and sausage are mixed with leaves, ginger, special Malagasy rice, porridge and spices.

????CHINESE NOODLE DISH: Pasta, macaroni, potato, mayonnaise and zebu skin.

2. TALATA VOLON’ONDRY: Sausage + Koba
ADDRESS: Talata Volon’ondry
OPEN: Varies

Talata Volon’ondry is a village located just outside of Antananarivo. The village is known for producing sausage and Madagascar’s national snack, koba.

????SAUSAGE: There are typically two types of sausage being sold - zebu sausage and a halal style potato sausage. This snack is frequently accompanied by local rum.

????????KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days.

Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. The fuel from the ingredients gives people energy and helps them stay full even when walking long distances without and source of food along the way.

Place ground Kapenta and mopane worms into a powder then mix it with spice, aromatics (curry powder, ginger, garlic) then turn into a paste. Allow it to cook. Place the pig heads on a tray and pour beans and sauce over them.

????????GANGO: In a wok, add ox kidney and beef then water and salt. In a separate bowl, clean chicken gizzards then chop. Add to the wok. Allow it to cook for 10 minutes.
Separately, Cut chicken parts and add to the wok. Add water. Stir and allow to cook. Add heart, pork belly and spicy pork sausage. Add cooking oil. Add onions and tomatoes and mix. Add rape, kovo and chilies. Serve with sadza.

BEEF SAMBUSA WITH BASBAAS: Basbaas: Mix onions, jalapeños, lemon juice, cilantro, salt, garlic, black pepper and cook.| Folio (sambusa wrapper): In a mixing bowl, add water, flour, olive oil and salt. Take the dough and form balls then flatten. Rub oil on dough and stack. Press the dough to flatten. Cut the folio into four quadrants. | Beef (filling): Blend onions and mix with salt, ground cumin, ground coriander, crushed red pepper, and a dash of ground turmeric. In a big pot, add ground beef and brown it for 30 minutes. Drain the beef. In a big pot, sauté chopped white onions. Add the beef. Add the seasoning. Cook for a few more minutes. ASSEMBLE: take one quadrant and fold it into a cone shape. Stuff with beef and seal the edges.

???? WHOLE GOAT: Dry rub the outside of the goat using berbere, garlic powder, lemon pepper, cumin, nutmeg and crushed cardamom. Inside goat: Moist rub the inside of the goat with a mixture of garlic, soy sauce, lemon juice and bay leaves. Add in carrots, potatoes, celery and onions. Roast the goat for about 6 hours. Serve with Somali-style rice.
