Exotic BUSH FOOD in TRINIDAD!! Curry Armadillo & Iguana in Caura, Trinidad!!

After trying lots of more common Trinidadian foods, I took a walk on the wild side with some exotic Trinidadian bush food in Caura, Trinidad!

My friend Chef Jason Peru and I headed to Caura in rainforest in the northern part of the island for this unique food experience.

We met up with some friends, who showed us all the fruit trees nearby. They had lime, grapefruit, tangerine, mango, coconut, and guava trees. There are over 200 types of fruit trees here!

I started with an unripe guava, which was a little sour but sweeter near the center. The tangerine was also amazing. Then, a guy climbed a tree and got me a coconut, which I drank the water from.

It was so refreshing! Next, Jason and I tried a sweet and sour clementine and a vibrant and tart grapefruit. Then, I had a fruit that was a unique cross between a lime and an orange!

Next, it was time to cook! The guys here were making fish broth, curry goat, chicken pilau, curry iguana, and armadillo!

Next was a pomerac, which is a waxy apple- or pear-like fruit that grows throughout the Caribbean. I followed that with some wild chadon beni (culantro).

Then, we walked to the river, which was crystal clear! Nearby was some sugarcane, which was the ultimate sugar rush! You chew it, suck on it, and then spit it out.

Back at the house, we had fish, pork and chicken, as well as a soup cooking. They added spices to the goat curry, which smelled amazing.

They had some kingfish broth going as well. While it cooked, we took some shots of alcohol and watched them cook duck, chicken, a rich-looking pilau, potatoes, and more.

Then, I watched them chop up the iguana! He floured it to clean it and then rinsed it before adding garlic, pepper, ginger, chadon beni, and tomatoes.

Everything smelled incredible. I tried some of the kingfish broth, which also contained noodles, carrots, sweet potatoes, dumplings, garlic, celery, onions, pimientos, peppers, and other vegetables.

Then, they added a lime and spicy pepper to it, which enhanced the flavor so much! It was bursting with flavor and easily the best fish soup I’ve ever had!

Next, I headed back down to the river to see how the iguana was cooked. They added garlic, pepper, ginger, chadon beni, onions, and tomatoes to it. They steamed it in a pot over stones by the river.

Nearby, they were getting ready to cook the armadillo in another pot over stones. First, they toasted cumin seeds, green habanero peppers, pimiento, onion, garlic, jeera, saffron, and curry powder.

Then, they added water, let it reduce, and then added the armadillo meat. The curry was tasty and light. Adding coconut milk really enhanced it and tied it all together!

The iguana meat was tasty, gamy, and muscular, and the flavors were amazing. Next, they prepared some snapper with the spices and ingredients.

The armadillo was also very muscular. The meat was creamy, and I loved the dry roast. It was too good. I loved the fat layer under the shell!

Both of them were unreal. Next, we headed back up to the house to try the tippy tambo, which are little waxy potatoes and a local fruit called peewah.

The curry goat was fatty and meaty, with so much flavor. I also loved the pilau. It reminded me of Latin-American rice dishes I’ve had.

I loved the brown sugar, pigeon peas, and chicken in it and mixing in the gravy from the curry goat was amazing. The curry goat was so great, I had to get more!

I finished with some chewy and spongy goat belly curry, and a tender, buttery, and light steamed snapper with tomatoes!

PORT OF SPAIN, TRINIDAD AND TOBAGO - Welcome to Port of Spain, the Capital of Trinidad and Tobago islands in the Caribbean! I’m so excited to finally be here. So many of you have written to me over the years inviting me to visit for the amazing food and culture, so it’s really an honor to finally be here and to explore the incredible food. Let’s get started eating, we’re jumping straight into a massive 20 hour day of eating local street food!

And here’s everything we did in the video, and all the food we ate:

Central Market - We started off today at the Central Market in Port of Spain, bright and early in the morning before 7 am. And with Baidawi and David, who go to the market every weekend to do their shopping and have breakfast, we were in the right hands. After exploring the market and the amazing produce and ingredients that go into food in Trinidad and Tobago we then headed to the food court for some local fish broth and cow heel soup.

EatAhFood - Baidawi makes fantastic food videos, especially recipes, and so we bought ingredients and headed back to his house to cook Callaloo, an Afro Caribbean food of simmered down taro leaves and pumpkin and coconut milk. It was so good!

Roti - One of the greatest of all Trinidadian foods is roti - different from anywhere else. The rotis are huge and fresh and then stuffed with pumpkin, potato, and curry of your choice. An afternoon bulging roti with Zaak, was absolutely delicious.

Queens Park Savannah - Port of Spain - To continue on with this street food tour in Trinidad and Tobago, we went to Queens Park Savannah for a coconut and then continued on to the evening street food market to sample a bunch of different local foods - everything from doubles to pholourie and roast fish.

Yousef Gyro ( - Trinidad and Tobago is so diverse and there’s even a local Middle Eastern population including Yousef Gyro, owned by descendants of Syrian immigrants. They make all sorts of wraps and gyros and combinations you won’t find anywhere else. This is the ultimate late night food in Trinidad!

Dass Doubles Factory ( - We did have a quick doubles at the street food night market, but we went to Dass Doubles Factory for the real deal late night doubles. They made the barras fresh and load them up with heavy peppa sauce and delicious curry chickpeas.

Hadco Phase II Pan Groove Orchestra Pan Yard ( - Finally to complete this day we were treated to a panyard lime to see the ultimate instrument of Trinidad and Tobago - steel pan! It was so cool to see and an amazing way to wrap up this ultimate street food tour - and they have delicious food!

Breakfast with Carion - We’re beginning in Les Coteaux, Tobago, a small town in the mountains that’s known for preserving its tradition and cultural heritage. Carion and her family are preparing an amazing local breakfast of coconut bake, saltfish, and cocoa tea. Seeing the process and being able to hang out and eat was extremely memorable. Uncle’s singing and drumming was also a highlight.

Chef Danielle - Next up on this Creole food tour in Tobago we met Chef Danielle, from Frontline Flavours who specializes in preserving authentic Creole cuisine of Tobago. She cooked a pot of curry fish, callaloo, and cornmeal. The food was outstanding, so fresh and so flavorful.

Tom Tom’s - Tobago is also very well known for their sweets, and learned about a few of the local sweets including beni balls and coconut fudge - one of the local favorites.

Seahorse Inn Restaurant ( - Finally to wrap up this day for food we headed to Black Rock and ate at Seahorse Inn Restaurant, one of the well known restaurants.

Sunday School - Buccoo, Tobago - Lastly, we headed to Sunday School for some live steel pan music!

It was another outstanding and memorable day on the beautiful island of Tobago!

TRINIDAD AND TOBAGO - One of the favorite food pastimes in Trinidad is to go to the river and have what’s called a “river lime,” where you hang out with friends and family, cook some delicious food, and enjoy nature all at the same time. Today we’re heading to Caura River, where Kev is going to cook up some delicious curry goat!

We drove out to Caura River to first have our river lime. Kev was already busy in the setup tent kitchen along the riverside. On the menu, the main event was the Trinidadian curry goat, but we also had chana and potatoes, and curry duck. What I love so much about the Trinidad and Tobago curries are the layers of flavor - from the curry powder to the onions and garlic, to all the green seasoning like shadow beni and green onions and thyme. The recipes are amazing. We had an amazing feast, and I especially loved the curry goat and curry duck!

Nanan's Caroni Bird Sanctuary Tours - Next in the afternoon we headed out to Nanan's Caroni Bird Sanctuary Tours for a boat tour and dinner at the amazing bird sanctuary, where scarlet ibis roost for. It was an amazing experience, and even better because we had dinner on the boat!

And that completes another amazing day of food and sightseeing in Trinidad, food and nature at its best!

SOUTH TRINIDAD - The Indian ethnic community makes up one of the largest parts of the population of Trinidad and Tobago. Today we’re going on an Indian food tour in South Trinidad - and while many of the foods are Indian in origin and cooking method, they definitely have adapted to become completely unique on their own - Indian Trinidadian food! It’s going to be a delicious day with lots of food and lots of peppa!

Singh's Doubles ( - Debe, Trinidad - Our first stop on this Indian food tour is at Singh's Doubles. The entire town is known for their doubles, something you have to eat when you pass through. However, along with doubles, I was very excited to try something called a Saheena - a wad of taro leaves rolled up with dal flour and deep fried then filled up with curry chickpeas and all sorts of chili pepper sauce. Amazing!

Gewandass Doubles ( - Mosquito Creek, Trinidad - To continue we headed to Gewandass Doubles for their extra spicy “Diamond Doubles.” This might be one of the spiciest doubles you can eat in Trinidad and Tobago, where the barra (fried bread) is actually dipped in chili pepper sauce and a few more pepper sauces are added - there was way more pepper sauce than chickpeas. It was so tasty!

Aunty Doll's ( - Fyzabad, Trinidad - We continued south a little more to Aunty Doll's, a Queen of Indian Trinidadian food! She cooked the traditional way over clay chulhas and open fire and she’s just so cool. She cooked an insanely huge meal that included over a dozen different local Trinidadian dishes and roasted coconut chutney and buss up shut - slapped roti! It was one of the most memorable meals in Trinidad and Tobago - the flavors were incredible, and it was so interesting to see the combination of Indian food and ingredients combined with the green seasoning and flavors of the Caribbean. Makes for an incredible and unique food culture!

CPL Tournament - Finally to complete this day of food in Trinidad and Tobaog, we happened to be there at the time during the CPL cricket tournament. It was so cool to go to a match… and of course eat some more food!

Castara, Tobago - We’re beginning this food tour today on the beach with a fish and breadfruit roast. This is something I truly love, being connected with nature, cooking over fire, and seeing the entire process before eating. The breadfruits were some of the best I’ve ever had and the fish was marinated and grilled. The fish broth was also spectacular. What a way to begin.

Backyard Dirt Oven - Next up we met up with Ms Moore & Wendell for a backyard dirt oven experience. Dirt oven baking is something that’s traditional in Tobago and they are keeping the tradition alive. I especially loved the garlic bread and pumpkin bread with cheese.

Miss Trim's Kitchen ( - It there’s one dish that’s the most famous and a dish you can’t leave Tobago without eating, it’s crab and dumplings. The crab is curried and the dumplings are hearty and doughy. The combination is delicious!

Block 22 - Finally to complete this Tobago food tour we tried the fried chicken sandwich wat Block 22 - one of the late night staples.

Viewcations Caribbean Destination - Caura River - Trinidad

Caura River is located in the Caura Valley in the northern range of the island of Trinidad in the Caribbean and is a 20-minute drive from the main road at El Dorado. There were plans in 1943 to construct a dam at this spot but it never came to fruition with only the shell of the pump house building remaining on-site as a reminder of the ambitious project. It is now a renowned spot among locals for having rivers limes and curry cookouts, especially on Mondays and weekends, as well as performing religious ceremonies which are conducted in the lower reaches of the river. There are generally 2 spots, aptly named Pool 1 and Pool 2, which are generally frequented by patrons to this watering hole. Apart from the usual chirping of the wildlife in the groves of arching bamboo which span the banks of the river there is a seemingly permanent melody of the alluring tunes of East Indian artists being played through car stereos or DJ equipment. A sure sign that you are in the right spot is the aroma of fire-side curry which whiffs through the air on the slightest breeze stimulating the senses as well as salivating the mouth. This area is best visited and enjoyed with a cup in hand, a plated filled with freshly curried meats and a suitably attired bathing trunks. The river with its invigorating and lucid waters serves as the perfect avenue for cooling down during the harsh tropical heat and one of those rivers which you should visit. As always be sure to take photographs and leave with only satisfying memories of the famous Caura river.

We spend an amazing day at Matura Beach (home of the nesting turtles)! What an Awesome beach and Beautiful River! Breakfast by the beach Bacon and Eggs! The Boys had a Football match Wait to you msee who won! Lol Arianna catches an awesome fish in the river! Then we cook lunch - Barbeque burgers with Jalapeno peppers for a little kick! According to Brendan our nephew...they are better than any Gyros Man's burgers! Cherry Ann Can't contain herself!!! What an awesome day at the beach cooking and fishing!
