Taste Polynesia: Cooking with Hot Rocks

Come to the Samoan Village where our good friend, Fune, preps his outdoor kitchen. Then see Executive Chef Felix Tai stop by to try out his famous “hot rock sauce,” which he makes by pouring freshly squeezed coconut milk and brown sugar directly onto glowing hot stones pulled from a roaring fire. Chef Felix then takes a turn cooking with this unique stove, searing fresh Kona kampachi over the red-hot rocks before adding his own twist to Fune’s sweet and earthy sauce with a blend of South-East Asian herbs and spices.

Visit my website at - breadfruit (Artocarpus altilis) is a species of flowering tree in the mulberry family (Moraceae). The tree originated in New Guinea and was spread across the Pacific Ocean by the ancient Polynesians. Today it can be found worldwide throughout the tropics.

The fruit is usually picked slightly before ripening when it is still hard. Once cooked, it has a flavor and texture resembling boiled artichoke hearts. When ripe. the soft fruit can be eaten raw, though it isn't very flavorful and typically has a mushy texture.

I went to Bora Bora in French Polynesia and was invited by the beautiful Four Seasons Bora Bora property to learn the story of how the Polynesian staple, Poisson Cru is made!
