This is behind the counter at Japan Okonomiyaki restaurant in Tokyo. Today, we’re going to a Tokyo hidden gem family owned, father and son Okonomiyaki Teppanyaki restaurant, called Saya in Sendagaya Tokyo. The restaurant was opened 27 years ago, and Yusuke, the owner’s son, runs the shop these days with plans to carry on the family business in the future. In the morning he first prepares the Osakayaki, an osaka style okonomiyaki which takes about 30 minutes to cook. It’s a popular dish that many customers order so he starts cooking it in advance to minimize customer wait times. Okonomiyaki itself is a Japanese-style pancake. It’s usually made with flour, eggs, yam, cabbage, and any other proteins as one prefers and it’s often flavored with dashi. It’s eaten as a meal or snack in Japan. It appears simple and easy enough to make but even slight differences in how it’s cooked and the ratio of the ingredients used can quickly yield an inconsistent dish. Only a true chef can create a consistent okonomiyaki that their customers can come to enjoy time after time. And hence why each okonomiyaki restaurant is unique in itself.

Opened in 1965, Ajinoya Honten (味乃家 本店) is a family run business that has been passed down through four generations. Ajinoya is known for their cabbage-heavy okonomiyaki that has a soft and fluffy texture. This Osaka okonomiyaki restaurant was even recognized by the Michelin Guide 2016 and 2017, receiving the Bib Gourmand rating, which refers to recommended restaurants that provide high-quality dining for a moderate price.

While this is not a DIY okonomiyaki place, the owner lets Shizuka behind the teppan to try her hand at making okonomiyaki!

Located in the Naka-ku central ward of Hiroshima, Nagomitei Tanakaya is the place to savor the local delicacies of the prefecture, like succulent oysters, at a reasonable price. Headed by Tanaka Katashi, a chef with over 35 years of experience, guests are sure to enjoy the freshest local seafood, prepared with the utmost diligence and care.

Two of the specialty dishes at Nagomitei Tanakaya are the overnight-grilled conger eel (quite possibly the only restaurant where you can try this dish in the entire prefecture), and the “hitori-nabe” (hot pot for one) which welcomes solo diners to enjoy a hot, comforting meal at the counter.

In today's video, we're spending the entire day exploring the beautiful city of Hiroshima. We dive into the history, as well as the things that make Hiroshima a can't-miss destination for anyone visiting Japan. If you are looking for a video highlighting the best things to do in Hiroshima then this video is for you!

We begin our day grabbing coffee at one of Hiroshima's best coffee spots before heading to the Hiroshima Memorial Museum. After learning & reflecting on the past, we shift our focus to the present with some amazing food in the most popular foodie area of Hiroshima, Okonomimura. After eating some delicious Hiroshima-style Okonomiyaki, we walk things off in the Shukkeien Garden before exploring the grounds of Hiroshima Castle. Finally, we end our day by cheering on the Hiroshima Toyo Carp at Mazda Zoom-Zoom Stadium. A Hiroshima Toyo Carp game is a MUST if you're visiting Hiroshima during the summer months!

You may be a little surprised at how many izakaya (Japanese pubs) there are in Hiroshima's drinking areas. To help you find the best spots, I've created this tour, along with my specially-recommended bar hopping map! With this map and a friendly local guide, you won't miss out on great, authentic izakaya in Hiroshima. There are a lot of delicious and genuine izakaya foods to be found around the Nagarekawa area, such as Hiroshima-style okonomiyaki, horumon tempura, oysters, and much more! Of course, most places will have a vegetarian menu to choose from, too.

If you're coming to Japan for the first time, going to an izakaya might be difficult because of some rules you don't know about or items on the menu you're not sure of, so our local guide will be with you to explain how everything works. Our guide will also share local stories with you, and you can, of course, ask any questions about Japan while sharing a drink! It's just like hanging out with a group of familiar friends.

We'll select where to eat and drink based on the special bar hopping map, so let your guide know your preference and mood. Based on how the group is feeling, the guide will make some excellent choices! If you have dietary restrictions (allergies, non-dairy, etc.), feel free to let your guide know, and they'll definitely find something for you, don't worry!

FAMOUS Okonomiyaki Restaurant - Since 1937! | Sometaro Tokyo

Come experience Sometaro, arguably Tokyo's most famous okonomiyaki restaurant. In operation since 1937, the interior of the Showa-era house isn't just a restaurant—it feels like a museum to a side of Tokyo you hardly see these days. It has a really unique vibe, and I definitely recommend it as a must-visit on your food journey through the city.

What is okonomiyaki? Some call it a Japanese pancake, others a Japanese pizza. It's a savory grilled dish comprised of batter, an egg and various ingredients of your choosing, typically but not restricted to: bacon, squid, shrimp, octopus and cabbage. Top it with a sweet and savory sauce, Japanese mayo, bonito flakes and nori flakes, and you have a really unique and delicious dish that is uniquely Japanese.

Yummy Okonomiyaki in Hiroshima, Japan!

In this week's video, we make a brief stop and take a little walking tour of Hiroshima Japan. We also stop by Hassei to try some Hiroshima okonomiyaki which a well known Japanese savory pancake street food dish. This dish is prepared on a teppanyaki grill with lots of choices of toppings and filling! You have a choice of soba or udon noodles as well as seafood, vegetable or meat toppings.

Hiroshima Okonomiyaki Pancake Experience

Okonomiyaki (お好み焼き, o-konomi-yaki) is a Japanese savory pancake containing a variety of ingredients in a wheat-flour-based batter; it is an example of konamon (flour-based Japanese cuisine). The name is derived from the word okonomi, meaning how you like or what you like, and yaki meaning cooked (usually fried). Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan, but is widely available throughout the country. Toppings and batters tend to vary according to region.

In Hiroshima, the ingredients are layered one on top of the other and are typically batter, cabbage, pork, and optional items such as squid, octopus, and cheese. Noodles (yakisoba, udon) are also used as a topping with fried egg and a generous amount of okonomiyaki sauce.

The amount of cabbage used is usually three to four times the amount used in the Osaka style Okonomiyaki. It starts out piled very high and is pushed down as the cabbage cooks. The order of the layers may vary slightly depending on the chef's style and preference, and ingredients vary depending on the preference of the customer. This style is also called Hiroshima-yaki or Hiroshima-okonomi.

The restaurant in the video is named Okosta and is located right outside Hiroshima Station. This establishment allows customers to not only learn but also cook their own Okonomiyaki with the assistance of a professional cook. Japanese Street Food | Hiroshima Okonomiyaki at a Tokyo Festival

One of the popular variants of okonomiyaki (Japanese savory pancake) is the Hiroshima style, which is layered rather than pre-mixed and includes noodles and a fried egg topping. You can find this street food served at any Japanese festival, where they'll go for roughly $6 US a pop.

This video was shot during the cherry blossom festival at Yasukuni shrine in Tokyo, Japan. To visit the festival, come in late March or early April when the sakura are in bloom.
