The Legends Behind Bamyan I Documentary
Bamyan at first glance represents the various civilizations that have emerged over thousands of years.
Known collectively as the Bamyan Buddhas, the two monumental sculptures have amazed both Buddhist and non-Buddhist visitors for more than a thousand years. Like many of the world's great ancient monuments, little is known about who commissioned the Bamyan Buddhas or the sculptors who carved them.
Bamyan also referred to as the “Shining Light” or “Valley of Gods”, is one of the oldest cities in the Central and South Asia.

Shahr-e Gholghola or Gholghola City.
Shahr-e Gholghola was Bamyan’s last stand against the Mongols’ siege of Bamyan during the spring of 1221 AD.
The Mongols laid siege on the citadel, destroying it and killing everyone inside. The screams of the dying victims could be heard all throughout the Bamyan Valley earning Shahr-e Gholghola its current name ‘the City of Screams‘.

Deadliest Journeys - Tajikistan - Cold Fever

Tajikistan is the poorest country in Central Asia. To travel through this region made up of 93% of mountains, you have to take the Pamir Highway, the second highest highway in the world. A mythical road built by the Soviets to open up the Pamir region and subject it to the rule of the Empire. A daring journey suspended between earth and sky on what the Tajiks call the “roof of the world”. But since the Russians left in 1991, the road has not been maintained. The Pamir Highway is the route of all dangers: Rock falls, landslides, fords ... 900 kilometers on the side of the ravine. Mechanics and people are put to the test, especially in winter when extreme temperatures freeze the engines. Gheyrat, the hero of this adventure, must improvise with the means at hand to deliver his goods and above all stay alive.

Deadliest Journeys: Pakistan

Heart-stopping, adrenaline filled stories and dangerous journeys.

In this episode, we follow two brothers, Khalid and Dawoud, who travel daily along the Lowari Pass – a 150 mile road across the mountains of Pakistan – transporting sugar in their truck. Ten kilometres of this road are dubbed the ’Death Tunnel’ by the locals. Across breathtaking cliff faces and with common landslides and avalanches, any error made is fatal.

???????? APRICOT KERNEL SEED SOUP: Add water to the pot, smash the apricot kernels and add into the pot with add salt, and stir. Prepare the dough by adding salt to wheat flour, then mixing it with chicken eggs. Knead the dough and cut it into small short strings. Add the noodles to the soup pot and cook for 7 mins.

???????? DRIED APRICOT DAWDO SOUP: Add dried apricots to hot water and grounded dough. Cook for 15 minutes.

???????? GUR-E-GIALING: Make the batter with flour, eggs, water, and apricot oil. Add local butter to the hot pan, and use a piece of dough to spread it all over the pan. Pour the batter in the pan, and flip it a couple of times to cook both sides of the pancake.

2. HUNZA FOOD PAVILION

????????CHAPSURO: Knead the wheat dough into a round-shape. Add the filling mixture made with local chicken meat, coriander, mint, onion, green chilies, salt, and saffron. Cover it with another layer of dough then cook it in a hot pan. When it’s ready, cut it into small pieces and serve with panir (goat cheese).

????????MULIDA: Make chapati bread and tear it into little pieces. Add water to a pot, and add dried cow cheese, dried mint, salt, coriander, onions, green chilies, and chapati. Serve with apricot oil.

????????GIR GIR ALOO: Add the paste made from coriander, mint, and green chilies in a pot. Stir-fry it well. Add masala, water, brown lentil, salt, and potatoes. Cook for 20 minutes.

3. NASIRA’S FAMILY HOUSE

????????CHEESE CHAPATI: Make paste from cottage cow cheese, coriander, green onions, walnuts, salt and a little of milk. Make chapati and spread the paste on it. Serve with apricot oil.

???????? BUCKWHEAT PANCAKES: Wipe pan with a piece of onion, add buckwheat batter in the pan and cook till it's done.

????????MANTU: Make dough from wheatflour. Make filling using minced chicken, coriander, green onions, and green chilies and ground red chilies. Wrap the dough around the filling and steam them for 15 minutes. Apply olive oil before steaming. 

????????CHICKEN NOODLE SOUP: Add olive oil in the pot placed on the stove. Add some chopped onions, ground ginger and garlic. Add minced chicken, ginger, salt, one litre of water, green onions and coriander in the pot. On the other side, roll the wheat flour to make noodles. Add the noodles in the pot.

Afghanistan - My Kabul 3 of 3 - BBC Culture Documentary, recorded 20.02.2011

In this BBC documentary, journalist and native Afghani Tahir Qadiry revisits his hometown of Kabul. Qadiry meets with not only the historians and politicians, but also the workers, children, and homemakers who represent the over-four-million people who live in Kabul today. Ultimately, the document comes to the point that Kabul consists of many varying regions, classes of people, and amount of progress versus traditionalism.

It is evident from the documentary that Kabul is beginning to reach out to the modern age but various factors keep parts of the city from progressing. Narrow streets, hundred year old architecture, and poor sanitation systems seem to encourage old customs and little advancement. The people, though incredibly accepting and welcoming to Qadiry and his crew, still hold many of the fundamental values from Taliban occupation. With all its residents, it has become impossible to manage pollution and the documentary estimates that over 3000 people die every year from poor sanitation. Many families have to go all the way to the central part of the city just to carry water to their homes (Qadiry at one point tries to help a man to carry his water jugs but he can barely make it a few feet up a hill). Although an influx of foreign aid has begun to help reconstruct the new city, many parts have yet to see the money trickle down.

However, the most central areas of Kabul such as Shahr-e-now are not only progressive and urban but thriving, erudite and expensive. This district is much more progressive in its architecture, styles of clothing, successful corporations, building of public schools and private universities, and rapidly growing use of technology. After much music, cinema, and television had been banned under strict Taliban regime, the residents of Kabul are enjoying making progressive change and converting to a more westernized lifestyle.

Beneath Iran's Dusty Desert Lie Ancient Water Tunnels Still in Use | National Geographic

Thousands of years ago, Persians created an ingenious system to provide water across their arid landscape. They tapped aquifers at the heads of valleys and designed tunnels that utilized gravity to send the water to settlements. It's now estimated that the combined length of all the underground channels, known as qanats, in Iran is equivalent to the distance between the Earth and the Moon.

At 102 years old, Gholamreza Nabipour is the oldest and most experienced caretaker of qanats. And while they are still in use today, Mr. Nabipour worries about the upkeep in the future. He has dedicated his life to training new caretakers on how to work and preserve the ancient life-giving tunnels.
