Thanks to #AirbnbExperiences on @Airbnb, I met Nonna Nerina, a 83 year old Italian grandma who opens her kitchen to teach handmade pasta recipes to travelers. I thought I’d be learning pasta cooking Italian style from one Italian grandma, but upon arrival I discovered I’d be cooking with four Italian grandmothers! I learned how to make traditional handmade pasta without a machine - fettuccine, gnocchi, ravioli. I’m thrilled to be partnering with Cooking on AirbnbExperiences, who sent me to this Rome cooking class.

Cooking with Nonna Nerina has become such a popular cooking class for making fresh pasta by hand, that it is growing with more nonnas around Italy wanting to teach Italian style handmade pasta to travelers.

Location: Palombara Sabina, its a cute Italian medieval town located on a hilltop, about a 30 minute train ride from Rome, Italy

Places to see in ( Rome - Italy ) Basilica di Santa Sabina

The Basilica of Saint Sabina is a historical church on the Aventine Hill in Rome, Italy. It is a titular minor basilica and mother church of the Roman Catholic Order of Preachers, better known as the Dominicans.

Santa Sabina is perched high above the Tiber river to the north and the Circus Maximus to the east. It is next to small public park Giardino degli Aranci (Garden of Oranges), which has a scenic terrace overlooking Rome. It is a short distance to the headquarters of the Knights of Malta.

Santa Sabina is the oldest extant Roman basilica in Rome that preserves its original colonnaded rectangular plan and architectural style. Its decorations have been restored to their original restrained design. Other basilicas, such as Santa Maria Maggiore, are often heavily and gaudily decorated. Because of its simplicity, the Santa Sabina represents the crossover from a roofed Roman forum to the churches of Christendom. Its Cardinal Priest is Jozef Tomko. It is the stational church for Ash Wednesday.

Santa Sabina was built by Peter of Illyria, a Dalmatian priest, between 422 and 432[1] near a temple of Juno on the Aventine Hill in Rome. The church was built on the site of early Imperial houses, one of which is said to be of Sabina, a Roman matron originally from Avezzano in the Abruzzo region of Italy. Sabina was beheaded under the Emperor Vespasian, or perhaps Hadrian, because she had been converted to Christianity by her servant Seraphia, who was stoned to death. She was later declared a Christian Saint.

In the 9th century, it was enclosed in a fortification area. The interior was largely renovated by Domenico Fontana in 1587 and by Francesco Borromini in 1643. Italian architect and art historian Antonio Muñoz restored the original medieval appearance of the church (which had served as a lazaretto since 1870). The bell tower was built in the 10th century and remade in the Baroque period.

Saint Dominic, Pope Saint Pius V, Blessed Ceslaus, Saint Hyacinth and St Thomas Aquinas are among those who have lived in the convent adjacent to the basilica of Santa Sabina. Pope Honorius III approved in 1216 the Order of Preachers, now commonly known as the Dominicans, which was the first order instituted by the Church with an academic mission,.

It pours like a golden cascade...

Drop by drop...the undeniable aroma comes from one of the most admired oils in all of Italy.

Sabina DOP Extra Virgin Olive Oil

Pressed from a variety of rich colored olives and carefully harvested from an area that is older than Rome. An area that at one time spoke the ancient language - OSCO -- and spreads like a tablecloth of olive trees and oak woods sun-kissed to perfection.

A hidden gem that shines with purity. From medieval towns to castles and monasteries, the Sabina area represents one of the few regions unspoiled by mass tourism --

But you would never know this ancient, Roman countryside exists since its neighbors are grand, impressive and dominating symbols of the Roman empire. To the right is the most recognizable structure in the world - the Coliseum.

To the left is the enchanting town of Tivoli that holds UNESCO world heritage sites - Hadrian's Villa and Villa d'Este.

However, for the Sabine people. It wasn't structures or masterpieces that gave them their strength and longevity. Instead it was their land people relied on. A land that holds its own importance and continues to give families today, its well-being while supplying the Eternal City with its primary source of extra virgin olive oil for more than 2,000 years.

Stazzano Vecchio (Palombara Sabina-RM) rises a handful of kilometers northeast of Rome, in the heart of Sabina, and it is one of the most unknown and at the same time fascinating ghost towns in Lazio.
Its origins are uncertain. According to some, the etymology of the name derives from the Latin statium, a term that would refer to a probable function of access station to the mule tracks that led to the mountain farmhouses. According to others, however, the name derives from the Roman family of the Stazzi who had lands and their rural villa here. The first real housing agglomeration was built in the 10th century at the behest of the powerful Roman family of the Savelli. Subsequently, around the 16th century, the village became property of the Borghese family. For Stazzano the unfortunate fate took place on 24 April 1901 when a strong earthquake, with its epicenter in nearby Montelibretti, caused such damage as to determine its rapid abandonment.
