Steamed Malay Cake(Ma Lai Kuih)马来糕-用蒸制方法而无需使用烤箱制作蛋糕，香港人叫马拉糕。
今天想和大家一起分享好久没吃的红糖/黑糖马来糕，
马来糕起源来自马来西亚，原是马来族人爱吃的一款点心，
是一种蒸制而成的蛋糕 ，原名叫马来糕，
据说是英国人统治马来半岛后，仍保留下午茶进食糕点的习惯，
后传入香港及广东一带，被广东方言称为“马拉糕”
材料: Ingredients:
3~4粒 鸡蛋 - 3~4 eggs
160克 淡奶 - 160g Evaporated milk
3汤匙 班兰汁 - 3 tbsp Vegetables Pandan juice
180克 自发面粉 - 180g Self-raising flour
150~190克 紅糖／黑糖 - 150~190g dark brown sugar
1 茶匙 酵母粉 - 1 tsp yeast
少许盐 - dash of salt
1 茶匙 苏打粉/小苏打 - 1 tsp baking soda
50克 牛油 - 50g butter
少许瓜子 - dash of Melon seeds
注 NOTE:
1要记住使用耐高糖的酵母。普通酵母无法承受高糖
2.适量的糖和酵母粉结合能起到促进发酵的效果
但过量的糖反而会抑制酵母菌的发酵

The manager was a Tamil person, so was very polite and helpful.
