Guatemala is crossed by a large chain of volcanoes. Between Mexico in the north and the neighbors to the south (Honduras & Salvador), there are no less than 300 volcanic structures, of which 37 are recognized as volcanoes. Three of them are active today!

Their imposing silhouettes follow us for a throughout part of the journey, overlooking the high plains, Lake Atitlan and the colonial cities. They offer a rich playground for lovers of hiking, mountain biking and all kinds of sporting activities.

Guatemala is considered the best destination for observing volcanic eruptions. The fumaroles, lava flows, even explosions create special memories.

There is a town on the coast of Guatemala that can only be accessed by boat. The small fishing village of Livingston is not like the rest of the country because here is the home of Garifuna people that are also called Black Caribs.
They are basically descendants of African-Carib populations from Caribbean Islands and they speak their own language, they have their own traditions, food and music!!

Guatemala Tikal Ruins and Pyramid - Around the World Adventure with Jim Rogers

Jim Rogers - 150 Countries, 150,000 Miles in three years - Ruins at Tikal Guatemala

Tikal is one of the largest archaeological sites and urban centers of the pre-Columbian Maya civilization. It is located in the archaeological region of the Petén Basin in what is now modern-day northern Guatemala. Situated in the department of El Petén at, the site is part of Guatemala's Tikal National Park and in 1979 was declared a UNESCO World Heritage Site. The closest large modern settlements are Flores and Santa Elena, approximately 64 kilometres (40 mi) by road to the southwest.

Tikal was one of the major cultural and population centers of the Maya civilization. Though monumental architecture at the site dates to the 4th century BC, Tikal reached its apogee during the Classic Period, ca. 200 to 900 AD, during which time the site dominated the Maya region politically, economically, and militarily while interacting with areas throughout Mesoamerica, such as central Mexican center of Teotihuacan. There is also evidence that Tikal was even conquered by Teotihuacan in the 4th century. [2] Following the end of the Late Classic Period, no new major monuments were built at Tikal and there is evidence that elite palaces were burned. These events were coupled with a gradual population decline, culminating with the sites abandonment by the end of the 10th century.

Tikal rising above jungle canopy

The ruins lie among lowland rainforest. Conspicuous trees at the Tikal park include gigantic ceiba (Ceiba pentandra) the sacred tree of the Maya; tropical cedar (Cedrela odorata), and mahogany (Swietenia). Regarding the fauna, agouti, coatis, gray foxes, spider monkeys, howler monkeys, harpy eagles, falcons, ocellated turkeys, guans, toucans, green parrots and leaf-cutting ants can be seen there regularly. Jaguars, jaguarundis, and cougars are also said to roam in the park. For centuries this city was completely covered under jungle.

The largest of the Classic Maya cities, Tikal had no water other than what was collected from rainwater and stored in underground storage facilities (termed chultuns). Archaeologists working in Tikal during the last century utilized the ancient underground facilities to store water for their own use. The absence of springs, rivers, and lakes in the immediate vicinity of Tikal highlights a prodigious feat: building a major city with only supplies of stored seasonal rainfall. Tikal prospered with intensive agricultural techniques, which were far more advanced than the slash and burn methods originally theorized by archeologists. The reliance on seasonal rainfall left Tikal vulnerable to prolonged drought, which is now thought to play a major role in the Classic Maya Collapse.

Oaxacan Mole Negro - THE MOST MYSTERIOUS Mexican Food in Oaxaca Village, Mexico!

Cooking Oaxacan mole negro from scratch was one of the best food and cultural experiences I’ve ever had. On top of that, we didn’t really know what we were going to do when we set off in the morning… but things worked out for the best. Thank you to Javier and his family for inviting us into their home to cook amazing Oaxacan food!

So in the morning the plan was
Rent a van for the day
Drive to a village
Find a market
Ask a nice Grandmother or Aunty to cook us some authentic Oaxacan mole negro

Now, mole negro is one of the most complex and mysterious of all the Oaxacan Mexican food dishes. There’s such a huge mix of random ingredients in the dish, and no one knows for sure how it was invented or how it came about - there are only legends.

After renting a van for the day, our driver Javier came to pick us up and we started talking with him to see if he knew anyone that would make us Oaxacan mole negro from scratch. He called his Mom, and she agreed!

We picked up Mom in a place called Tlacolula de Matamoros, and we went straight to the market to buy all the ingredients for mole negro. Tlacolula de Matamoros is a predominantly Zapotec town, an Indigenous pre-Columbian civilization from the Valley of Oaxaca

We got back to the house and started preparing all the ingredients. Let me tell you, mole negro has to be one of the most complex and mysterious of all Mexican food. It includes so many random and seemingly odd ingredients. It was a lot of fun to learn how to make it.

The end result of the Oaxacan mole negro, was supreme. The sauce was so rich, chocolatey, and you could taste all the random ingredients in it - the nuts and dried fruit. It’s deliciously complex.

Mole was amazing, and having the chance to hang out in a traditional Oaxacan village to cook was priceless.
