???????? GENOVESE RAMEN: For the veggies: Heat up a hot pan with cooking oil. Add cabbage, bok choi, onions, carrots and mushrooms. Stir-fry them in the pan for 2 minutes.
For the genovese noodle bowl: Add noodles in a bowl with pai-tan soup (chicken bone and pork bone soup), salt-base sauce, genovese sauce and pepper. Next, add the vegetables. Then, top up with char siu pork, bamboo shoots, spinach, green onions, soft boiled-egg marinated in soy sauce, mirin and ito-toragashi (thread hot peppers). Finally garnish with Italian parsley.

$100 Ramen Experience:

???????? $100 RAMEN: The wagyu: Cut the wagyu into steak piece. Prepare a hot pan with cooking oil and add minced garlic and stir. Remove and place in a small bowl. Place wagyu piece in the pan and sprinkle salt and pepper. Let it fry for 10 seconds on all sides. Add mixed sauce in the pan and cook for 1 minute. Remove the wagyu meat out and wrap it in tinfoil.
The sukizaky (long beef slices): Prepare a hot pan with soy sauce, sugar and seaweed. Dip the beef in the pan for 5 seconds then remove and put in a dish.
The flavored oil: Add flavored oil with onion, garlic, ginger and sugar in a pot and heat up for 5 mins.
$100 noodles bowl: Prepare a big bowl with soy sauce paste, salt base sauce and milky oyster sauce. Second, pour the broth in and add noodles in the bowl. Add in the flavored oil, wagyu steak, sukiyaki meat, naganegi, white asparagus, half of seasoned egg in the bowl. Then, add some truffle oil on the beef. Finally, add bonito (dried fish flakes) and gold flakes.

Asakusa is reminiscent of an older Tokyo, lined with traditional craft shops and street-food stalls along Nakamise Street, near the ancient Sensō-ji Temple. Mid-19th-Century Hanayashiki Amusement Park has thrill rides and cafes, while riverside Kuritsu Sumida Park hosts regular festivals and firework displays. Casual izakaya bars dot the neighborhood, as well as yakitori restaurants serving grilled meat skewers and beer.

Day in the Life of a Japanese Ramen Chef

This is Tokyo life working in Japan at a Japanese Ramen Shop as a Ramen Chef. Japanese workers are often portrayed as Salarymen but in this video we focus on Japanese food services industry and what it is like to work in a Japanese restaurant. This is a day in the life of a Japanese Chef, Tetsuya, 41 years old, working in Japan at a ramen store, karashibi miso ramen Kinkanbo. It's a popular spicy ramen shop in Tokyo Japan serving a devil ramen. We see Japanese working hours as well as Japanese workers in a Tokyo ramen restaurant, a peek into Japanese life. Tetsuya starts the day in his apartment and as an average Japanese worker, he commutes to work in Tokyo via train. It only takes him 20 minutes to get to work, but soon after arriving, he's busy working at the Japanese food restaurant and preparing Japanese ramen noodles for customers. His main duty is the manager of the ramen shop, but he also creates new gentei limited time menu items as a Japanese ramen chef. Life in Tokyo is amazing and part of this is because we have dedicated workers in Japan that keep the city running. To be a Japanese chef you must really have a passion for what you do. If you are ever looking for a spicy food challenge or spicy ramen challenge in Tokyo, then the Kikanbo ramen shop should be you first destination. But don't worry, if you can't eat spicy ramen, the ramen shop also prepares non-spicy version of the ramen bowl. Customers can choose their level of spiciness from low all the way to Oni level, aka Devil ramen. Enjoy this Japanese food tour of a Japanese ramen shop.

» THE WAGYU BEEF

1. MI-TOBARUNIKUTARASHI (MEAT BAR NIKUTARASHI): Raw Beef + $500 Beef BBQ
ADDRESS: 1-34-3 Yoyogi Shibuya-ku, Tokyo 17th Kikuchi Building 1F
OPEN: 5:30PM - 11:30PM

Japan is famous for their wagyu beef, with the different types of beef ranging from A1 (lowest grade) to A5 (highest grade). The restaurant we visited today specializes in A5 wagyu beef yakiniku (grilled at the table). They update their menu daily and are locally renowned as serving some of the tastiest beef in Japan.

????VARIETY OF BEEF: We sampled Hokkaido beef, which head chef and owner Mr. Hirashima prepared for us; wagyu sashimi, a special off-menu delicacy; and 5 varieties of wagyu including: Zabuton (Chuck Flap), Beef Tongue, Sankaku Bara (Chuck Short Rib), Kamenokou (Knuckle) and Misuji (Top Blade), all served with side sauces of soy sauce, lomon and a special apple sauce.

????PRICE: Wagyu Sashimi 18.22 USD/2,000 JPY | 5 Varieties Wagyu Beef 36.26 USD/3,980 JPY

2. RUYURIYA: Sukiyaki + Shabu Shabu
ADDRESS: 5-18 Maruyama-machi, Shibuya-ku, Tokyo 2 Sogezaka Square Building 2F
OPEN: Mon - Fri: 12PM - 3PM | 6PM - 11PM
Sat: 12PM - 3PM | 5PM - 11PM
Sun: Closed

Ruyuriya has been a staple in Japan for 13 years, famous for their 101 different varieties of hotpot.

????SUKIYAKI: There are two ways to eat sukiyaki →
1. Dipping Sukiyaki: First lite the stove with the pan on it, placing the beef fat in the hot pan and continuing to move it around. Remove the beef fat and add tiny sugar cubes. Then pour in the mixture of soy sauce, cooking alcohol and sugar, mixing everything together. Poach the beef in the pan, allowing it to absorb the sauce. Finally, dip the beef into a raw egg and then eat!

2. Sukiyaki Hotpot: Begin by pouring in the mixture of soy sauce soup, then add sugar, onion, leaks, tofu, radish, konnyaku (konjac jelly), scallion, shitaki mushroom, enoki mushroom, tungho and wagyu beef. Mix it all together and enjoy!

????SHABU SHABU: This beef dish comes from Matsusaka, Japan, a region known for their high-quality beef that has a high fat-to-meat ratio. Typically, this meat is served with sides of soy sauce and vinegar or sashimi sauce. The beef is often poached in boiled water for 5-10 seconds before being dipped into the sauce and eaten.

Wakakaisekiyamatokan has been serving some of the finest beef in Tokyo for 27 years. They are famous for their private space, where guests have a private room with a private chef preparing their food right in front of them.

????This restaurant offers three mains kinds of wagyu beef: Kitasasuma beef from Kagoshima, Hida beef from Gifu and Yonezawa beef from Yamagata. They also offer Washoku, traditional foods of Japan, typically including rice, miso soup and seasonal side dishes.
