Cassava Bread Making
When I think of cassava bread, I immediately associate it with the Garifuna culture of Belize. Cassava is a delicacy and a staple food for them.
If you have not tried cassava prepared the traditional way of the Belizean/Garifuna, you just have to. No better time to sample it and immerse in the Garifuna culture in November when they celebrate the arrival of their ancestors and settlement in the country.
Great Belize Cooking - Episode 1: Orange Walk (Tacos)
The first episode of Great Belize Cooking travels to the Orange Walk district for a taste of its famous and unique tacos, which may considered to be works of art by some. See the traditional preparation of Belize's favorite spice: recado & homemade corn tortillas in the village of San Jose Palmar in the Orange Walk District in Belize. Host & chef, Sean Kuylen, then cooks up his own inspired Belize cuisine using these two very Belizean ingredients.

Sean Kuylen travels to Burrel Boom Village in the Belize District to experience the painstaking process of making charcoal, and pays a visit to the Belize City sauce maker Maria Villanueva of Marvilleous Sauces. Then, Chef Sean Kuylen makes his own Inspired Belize Cuisine grilling and braising deer meat & roasting vegetables.

Garifuna Cuisine, Dangriga, Belize - Hudut Soup & Fish Fillet, Tomato/Rum Sauce, Cassava Fries

Recently in Dangriga, Belize I met up with Madeline at the Riverside Cafe. I joined her in the kitchen where she taught me some Garifuna recipes.
The Garifuna are descendants of African shipwrecked slaves who interbred with the local Carib and Arawak people of St Vincent. When the British took over St Vincent from the French, the Black Garifuna were exiled and ended up settling all along the Belize, Honduras and Guatemalan coastline.
Madeline prepares Hudut - a fish soup with a coconut milk base which contains okra and green plantain dumplings.
Madeline also prepares the Riverside cafe Specialty dish - Grilled Fish Fillet with Cassava Fries with a unique rum, tomato and soy sauce.
If you are in Dangriga, make sure you drop into the Riverside cafe to sample Garifuna food, maybe the rarest cuisine in the world! Madeline is a great help and source for any local information.

San Ignacio is cool, the town itself isn't a must see, in fact, most people stay a few miles out of town where there is more nature. There is a bustling market on Saturday, and the Green Iguana Conservation Project is here. Located in western Belize , San Ignacio is a small town in the Cayo District. The town sits across from Santa Elena, separated by the Macal River.
