I loved my trip to Kerala, India, with @FoodNTravel , and we tried so many of the unique local Indian food dishes in this amazing southern state of India. One of the dishes that is both popular, and always hits the spot is a Kerala style Kottayam fish curry. And so today we’re going to make it, together.

We had Kottayam fish curry a number of times throughout Kerala, home cooked, in the jungle and homely restaurant, and at a legendary toddy shop, known for serving extra spicy Indian food. They were all extremely delicious.

Ok, let’s get started on this recipe:

Ingredients:

½ kg. King Mackerel
3 tbsp coconut oil

1 tbsp mustard seeds
1 tbsp fenugreek seeds
10 - 15 dried whole chilies
4 - 6 stems of curry leaves

50 grams ginger
1 head garlic
6 small shallots

20 grams dried pot tamarind - soak in 300 ml water for 15 minutes.
4 tbsp. Kashmiri chili
4 tbsp. Strong chili
2 tbsp. Coriander powder
½ tbsp. Turmeric powder
½ tbsp. Black pepper
Salt to taste

Method:

Pound ginger and garlic into a coarse paste. Slice shallots. Set all dry spices aside on a plate so you can use them quickly. Soak dry pot tamarind in water and set aside for at least 15 minutes to extract the flavor.
Begin cooking by heating coconut oil in pot. When hot, immediately toss in mustard seeds, fenugreek seeds, curry leaves, and whole dried chilies. Fry for a few seconds until smoky and fragrant.
Add ginger garlic paste and shallots and stir fry until golden and fragrant.
Add all dry spices, if it gets to dry add a little water, and make into a paste.
Add pot tamarind water, and mix into spices. You can also add some extra water to make it liquid.
Season with salt to taste.
Taste test to balance spices, pot tamarind sourness, and salt. Add more if needed.
Final step is to add the fish - and once you add it - don’t stir your curry. Make sure fish is submerged into curry sauce. Simmer to 5 - 10 minutes depending on how big your fish is.
When fish is cooked, curry is ready. Eat with rice, or tubers.

Today we’re going on an Indian street food tour to eat 5 of the most unique and unusual street foods in Bengaluru.

Raja Gobi JP Nagar ( - You come here for one thing; Gobi Manchurian. Cauliflower is battered and deep fried, then stir fried with all sorts of tangy and spices sauce and extra masala spices. The result is truly unexplainable in words, something out of this world tasty.

Madhavan Park Bajji Shop ( - I was extremely excited to try Madhavan Park Bajji Shop for their whole deep fried bell pepper (Capsicum bajji). The bell peppers are battered in gram flour and seasonings, deep fried, then sliced into pieces and sprinkled with salad, masala and lime juice. Really delicious and a genius street food snack.

Uncle Egg Rice Corner ( - Introduced originally by Kripal, this was one place I was extremely excited to try in Bengaluru. Chef has mastered the combination of egg fried rice with hard boiled egg curry. The cooking skills and knowledge of the spice combinations are incredible. A perfect example of humble everyday ingredients, transformed into something spectacular.

Jagli Tindi ( - Reviving old South Indian favorites, Jagli Tindi makes an outstanding idli that is steamed in a coconut shell. It’s something you have to try when you visit Bengaluru.

Shree Vasavi Condiments ( - Located on the extremely popular VV Puram Food Street, a glorious walking street dedicated to some of the best vegetarian Indian street food you’ll ever try, Shree Vasavi Condiments is famous for their Avarekai dosa - a dosa made with hyacinth beans among other herbs and vegetables. The dosa is made by flattening out the batter, adding a handful of the vegetable mixture, and frying with ghee, until extra crispy. It’s unlike any other dosa I’ve ever had, and incredibly tasty!

PATTANI, THAILAND - First of all a huge thank you Bang Dim and his amazing family for inviting us to their home for a once in a lifetime home cooked meal. It was outstanding, a meal I’ll never forget. #IndianFood #MalayFood #Pattani #ปัตตานี

First off, back story:

A few days before, I was with Muhammad from Papa Tagu ( and we stopped by the shop where he buys spices for his Thai Arabian food. We stopped in to say hi partly because the owner of the spice shop, Bang Dim, watches our video - and he’s the King of Spice in Pattani (his spice shop is called Muhammad and Sons: We had a great time, and enjoyed some amazing masala tea. He also gave me the ring! Anyway, Bang Dim is half from Kerala, South India, and half local Pattani Malay. He was born in Pattani (ปัตตานี). At that meeting, he invited us over to his house to make Indian style, but Malay at the same time fish head curry.

A few days later, we headed over to the house. Bang Dim, along with his wife and entire family put on an ultimate display of hospitality and welcome, cooking an unbelievable huge fish head curry. The fish head curry was a combination of South Indian and Malay, using dry spices, curry leaves, and even green sour mango in the curry. It was outstanding, sensational beyond belief. But not only was there fish curry, but there was also an entire Malay and Indian food feast - mainly seafood.

Thank you again to Bang Dim and your entire family for this unforgettable Indian Malay meal in Pattani.

KUSHTIA, BANGLADESH - During our trip to Kushtia we spent an entire day home cooking… and it was one of the greatest food days of our trip to Bangladesh. Not only in Bangladesh, but all around the world, the greatest food experiences are often home cooking. Today we’re cooking an all out Bangladeshi fish feast from morning to night!

When you think about Bangladeshi food, you might think about the rich goat and beef dishes, but really, the most common of all foods that’s consumed daily is fish and rice. Bangladesh is blessed with an abundance of river, and seas, and fish is common around the country. So today, we’re focusing the entire day on eating Bangladeshi fish dish specialties. In the morning we had day old fermented rice with ilish, the national fish of Bangladesh. Then we went to the Kushtia market and especially headed to the fish market section to buy a variety of different fish to cook for lunch and dinner.

Aunty is such an amazing cook, she’s the person you want to be cooking for you when you’re in Kushtia! I loved how she’s so natural at cooking, from the look in her eyes you can tell that she enjoys cooking and the joy it brings to others.

One of my favorite dishes of the entire trip, in all of Bangladesh, is ilish fish cooked with fresh mustard paste and mustard oil. It’s like mustard on top of mustard and the pungent flavor is so incredibly tasty when smashed into rice.

Another incredibly special day of Bangladeshi food in Bangladesh. Thank you to Rasif’s family for the incredibly warm hospitality and delicious food!

Traditional Kerala Fish Curry Recipe, Black Pomfret Curry, Spicy Curry, Avoli VaruthaRacha Curry, Green Pepper Mackerel Fry, Ayala Valli Kurumulagu, Poricha Pathiri, The Raviz Kadavu, Kozhikode, Chef Arun Ramanunni Nair

In this episode of Gourmet On The Road, Food Lovers Editor, Kripal Amanna goes fish shopping with Chef Arun Ramanunni Nair of The Raviz Kozhikode, after which he watches the chef cook up a delicious sour and spicy fish curry with black pomfret. This Avoli Varutharacha curry is then savoured with a scrumptious Poricha Pathiri and boiled rice.

Chef Nair also serves up a unique mackerel fry, Ayala Valli Kurumulagu, flavoured with strings of green pepper pearls at Garam restaurant in the lush settings of The Raviz Kadavu, a stunning resort nestled on the banks of the legendary Chaliyar River just outside Kozhikode.

AYALA VALLI KURUMULAGU
This delightful twice-cooked fish is moist and flavoursome. I've never tasted mackerel prepared like this before. you taste the tartness of the lime, the whisper of the cheriya pepper, sweetness of the shallots and the flavour of the fish that rounds off everything. Eat with the pumpkin leaves if you're looking to get some fiber into your system.

AVOLI VARUTHARACHA CURRY
The fish has soaked up the robust flavours of roasted, hand-ground masala, you can taste the toasty, creamy notes of the coconut, the earthy flavours of the coriander and the sharp edge of the tamarind. The poricha pathiri makes for a scrumptious accompaniment to this delicious fish curry, as would some local boiled rice.

RECIPE FOR AVOLI VARUTHARACHA CURRY
Serves 4

For the fish marinade:
Black pomfret 500 gms (after cleaning)
Rock salt 1 ½ tsp
Tamarind water 100 ml

For the ground masala:
Coconut oil 30 ml
Shallots 50 gms
Garlic 25 gms
Desiccated coconut 200 gms
Coriander seeds 40 gms
Whole dried red chilli 4 nos.
Curry leaves 10 gms
Turmeric powder 1 tsp
Coriander powder 2 tsp
Chilli powder 1 tsp

For the fish curry:
Coconut milk (50ml) at the finish to balance the dish.
Tomatoes, 2 nos.
Curry leaves 5 gms

For tempering:
Coconut oil 30 ml
Mustard seeds 10 gms
Fenugreek seeds 5 gms
Thin slices of shallots 30 gms
Bits of coconut 25 gms
Curry leaves 10 gms
Whole red chilli 2 nos.

Method of preparation:
Marinate the fish with rock salt and tamarind water. Keep aside for 30 minutes.
Saute the ingredients for ground masala till golden brown. Add turmeric, red chilli and coriander powder into the mix.
Remove masala mixture from fire and allow it to cool down.
Make a fine paste, mix this masala into the marinated fish. Add two whole tomatoes, quartered into mix it well add curry leaves.
Put back on fire and allow it to simmer on a medium flame.
Occasionally, gently stir the curry until the fish is cooked.
Finish the preparation by adding coconut milk to balance the flavours.
Make a tempering with the ingredients and ladle over the curry. Serve with hot rice or pathiri.

TODDY - Toddy is the name of palm wine, but really the sap that is tapped from the freshly cut flowers of a palm tree - it’s the sweet juice nectar. From a coconut palm, it’s totally different from the coconut fruit, or coconut water. It’s the sap of the flowers. One of the reasons you won’t find it bottled up or sold far away from the palm trees, is that it spoils and ferments extremely fast.

In Kerala, especially in the backwaters area, coconut toddy is a very popular local beverage, and there’s an entire South Indian, Kerala, culture that revolves around it - including very spicy food. I was thrilled to have a chance to learn about the coconut palm toddy culture of Kerala, taste some toddy, and especially eat some food to pair with it.

First, we started off on a boat, and visiting a toddy tapper. The best coconut palm toddy comes from coconut palms that lean over the water, and the best toddy is from brackish water palms. He showed us the process of slicing the flowers, and draining the sap into a ceramic vase to collect the juice. The sap ferments so fast, in just a few hours, it already turns alcoholic. We had the chance to sample fresh toddy, the juice right out of the flowers. It was sensational, much different from coconut water (from the fruit), and sweeter. Then we continued to a Toddy Shop.

Toddy Shop - Rajapuram Kayal Shop ( - About a 2 hour boat ride, we arrived at Rajapuram Kayal Shop, an amazing location, on its own island in the middle of lakes and lagoons. They were already starting to cook the amazing spicy food, including fish head curry, beef and pork chili fry. Toddy shops are known for cooking very spicy Indian food, with lots of spice and strong flavors, that pair well with coconut toddy. The food was unbelievably spectacular, and one of my favorite dishes of the day was the duck mappas.

For the toddy, we had a fresh toddy, a slightly fermented toddy, a grape infused toddy, and most importantly, and best of all, a chili and ginger toddy.

It was an extremely fun day to learn about Kerala food and culture and meet some amazing people!

Kozhikode (also known as Calicut), Kerala, India - Another amazing in Kerala, India, known for their food, is Kozhikode. I was excited to explore the South Indian food, and to eat as much as possible. Turned into an outstanding day of eating, the highlight being the extreme lava fish fry. #IndianFood #Kozhihode #Calicut #streetfood

Amma Hotel - If there was one single restaurant you could choose to eat at in Kozhikode, it would be Amma Hotel for their unbelievable fish fry. We arrived at the peak of lunch when things were busy and they were frying huge batches of fish. The fish is smothered in a masala paste of spices, ginger, and garlic, then fried in huge amounts of coconut oil and curry leaves until it’s juicy and oily and filled with a ridiculous amount of flavor. They had both king fish and pomfret, both of which were delicious. When you sit down to eat, you’re served an entire South Indian meal on a banana leaf of rice and curry and your choice of fish. One of the best meals I ate in Kerala. Total price for 6 people - 1,500 INR ($21.01)

Zain’s Hotel - Kozhikode is known for their afternoon tea and snacks, and so we stopped by Zain’s Hotel for some snacks in the afternoon and a tea.

Soy Protein - When it comes to vegetarian Indian street food, this is about as tasty as they come. The soy protein chunks were filled with spices and curry leaves, and almost tasted like meat. It was insanely delicious. 50 INR ($0.70) - Price per bag

Fruit snacks - Finally we headed to the Calicut beach for some street food snacks - during the night it turns into a slight festival of street food and people hanging out. The environment is fantastic. We had fruit and chutney standing around. 5 INR ($0.7) - Price per piece

Shave Ice - But the best Indian street food of the night was the shave ice, filled with pickled beats and cucumbers, and especially a scoop of spicy chilies. 20 INR ($0.28) - Price per cup

Fried snacks - Finally to end this Indian street food tour of Kozhikode (Calicut), we had some classic Kerala fried street food snacks. 200 INR ($2.80) - Price for everything

Another incredible day of food in Kerala, with the most amazing fish fry I’ve ever had!

THIRUVANANTHAPURAM, INDIA - This is one of the largest southernmost cities in India, and it’s a city of so much character, great people, and delicious food. I loved the relaxed feel of the city, the vibrant spices, and varieties of dosa, and the amazing chicken curry jacuzzi. For this Indian food tour, we started in the evening the first night, and continued onto the next day with more meals and more delicious food.

Kerala Traditional Restaurant - We pulled up in the van to a Kerala Traditional Restaurant, just outside of Thiruvananthapuram, and they were about to make one final pan of their famous huge pan of country chicken curry. It was absolutely stunning to watch them make an entire pan of curry from the start. The flavor was unbelievably tasty. Again, I loved the relaxed feel and laid-backness of Thiruvananthapuram, and the incredibly tasty food!
