Omakase Sushi Dai Guide in Tsukiji Fish Market - vlog #030
Today we're going to go visit the legendary Sushi Dai in the Tsukiji Market. I've seen this place covered all over youtube, food shows, and blogs and today is finally the day where I get to go there. I've eaten at dozens of sushi places all across the U.S. from coast to coast and the midwest and at some michelin rated sushi places. I'm hoping this place lives up to hype and that it was be amazing.
This will sort of be a guide on Sushi Dai. You really need to kind of plan out your day if you plan on eating at Sushi Dai. The restaurant opens at 5AM but you will have people waiting in line as early as 2:00AM. If your hotel is not at Tsukiji most likely you'll need to take a train there, and trains end at midnight, so I recommend you leaving before that so around 11PM.
There are a few places that are open 24 hours near Tsukiji market such as Jonathan's and Dennys which are diners. Mcdonald's is open 24hours, however they close for about 2 hours starting at 1AM. Most of the convenience stores are open and there are also some late night eats available if you want to hang out at a bar.
Sushi Dai is a bit hard to find, but in the video I have a map of what the area looks like to find it. By the time I got there, there was actually few people who have been lined up since 1AM, but if you are like me I rather just go early to get in as the first group to eat at 5AM. Sushi Dai seating is limited and each group that goes in has about 45 min-1 hour in order to eat their food. There's about 10 seats or so and you can estimate how long you will have to wait before you can eat.
The omakase here is a steal and is about 40,000 yen 10 pieces + one piece of your choice. Great for those on a budget and don't want to splurge on high end omakase. The atmosphere here is very friendly and I never felt rushed while eating my meal here. Be sure to bring cash in order to pay for your meal! Overall thoughts on Sushi Dai, this is by far trumps all the sushi places that I've eaten at such as Sushi Yasuda in NYC purely on taste alone. Personal favorites are the Kinmedai Golden Eye Snapper & Sanma Pacific Saury.
The wait is long, however I think it was worth it as a food enthusiast. There was a Japanese couple who I was talking to who told me that although you see a lot of tourist waiting to eat here you may think it's hype, but there are a lot of Japanese people who want to eat here too. They simply just don't have the time to wait or take time off from work. They come once every year just to eat here and have been going for the past 10 years. Sushi Dai is rated a 3.92/5 on tabelog and it is well deserved.
I ate at some other establishments in Tsukiji in the next part of the video and they are also really good. So if you don't have time to wait don't be afraid of trying out some other restaurants at Tsukiji.
Sadly Sushi Dai may be closed soon due to construction for the Tokyo Olympics, be sure to check to see whether it is open before going!

I traveled to Matsuyama where I had the privilege to visit Dogo onsen. Dogo onsen truly blew me away and the city of Matsuyama in Ehime, Shikoku is definitely undervalued and should be visited.
Join me on my solo adventure traveling through Shikoku where I discover what Matsuyama has to offer. From fantastic indoor shopping malls to castles and onsen (hot spring).
Japan is full of hot springs and this one is worth the visit which is why it attracts so much tourism.
I had to escape seek shelter during a typhoon but Matsuyamas tourist spots and excellent city views kept me occupied even playing pokemon go in the rain!

今回は2021年3月に南フランスのアルルという街を訪れて、そのマルシェで買い物している様子をご紹介します！
アルルはアヴィニョンから南西に40キロほど行った場所にある街です。

今回のマルシェはとにかく大きくたくさんのお店が出ていて目移りしてしまいました。
特に見どころはオリーブの木で作られたキッチン用品のお店と、大人気だったパン屋さんです。
お店の人との会話もぜひ見ていただきたいです♪
マルシェの後はアルルにある日本人パティシエのお店にてケーキも買いました。
最後に5分ほど街歩きの様子も載せたと、購入商品を実際に試食していますのでぜひ最後まで見ていただけると嬉しいです！

【愛媛観光】道後温泉で食べ歩き！松山グルメ鯛めしが美味すぎた！
◆概要
今回は愛媛の紹介です。
結論、想像以上に良く、非常におすすめな旅行スポットです！
今回のコースは以下の流れです。
①しまなみ海道→②道後温泉→③道後温泉食べ歩き→④松山市内で夜ごはんに鯛めし→⑤翌日道後温泉→⑥昼ご飯に鯛めし→⑦松山市内散策・グルメ
道後温泉は本館が工事中でしたが、別館も非常に綺麗で楽しめました。
加えて名物グルメの「鯛めし」がめちゃくちゃ美味しかったです！今まで旅行で食べた中で少なくともTOP3には入るレベルです！

Masaki Sugisaki secret off menu WAGYU KATSU SANDO recipe is epic. This how to make Wagyu Katsu Sando vid, is the ultimate Wagyu Katsu Sando recipe. Full stop. Masaki has given the recipes to the Wagyu Katso Sando and Milk Bread along with the Miso Demi Glace sauce below.
MISO DEMI GLACE SAUCE
⁃ 2kg Sake ⁃ 40 grams Kombu
⁃ 1.4kg Cherry tomato (lightly dress with olive oil then slow roast in Josper)
⁃ 2kg Tomato (cut into 1/4, lightly dress with olive oil then slow roast in Josper)
⁃ 1kg Onion (roughly cut into 5cm square, lightly dress with olive oil then slow roast in Josper)
⁃ 1kg Wagyu beef fat (cut into 5cm cube then slow roasted in Josper)
⁃ 400 grams Tomato puree
⁃ 2kg Sake
⁃ 300grams Haccho-miso
⁃ 1kg Mirin ⁃ 400grams Tamari soy
⁃ 120grams Honey
⁃ 300 grams Butter
Methods
1. Soak kombu in sake and infuse for overnight.
2. Roast Wagyu beef fat, tomato, cherry tomato and onion in Josper as above. (Each items to be roasted separately to control timings)
3. Once 2 is ready, place roasted Wagyu fat with tendered fat in large pot and cook off tomato puree.
4. Once Tomato puree has been cooked off, add Kombu sake with Kombu. 5. Let them GENTLY simmer until all the vegetables are completely cooked to almost melting
consistency. take off kelp before it start to melt. Stir well once every 5-10 mins to avoid bottom of the pot to be burnt.
6. Add Haccho miso (Dark miso but NOT Sakura miso), mirin, Tamari soy and honey and mix well.
7. Bring them back to boil on gentle heat. Once start to boil, add butter and mix well to emulsify.
8. Keep simmer for further 1 hour over GENTLE heat. Stir well once every 5-10 mins to avoid bottom
of the pot to be burnt.
9. Blitz well with hand blender.
10. Pass through chinois with soft spatula. Squeeze out all possible liquid you can.
11. Bring them to boil again and adjust consistency and flavour.
SOBA MILK BREAD
800 gr whole milk (temperature should be between 10 and 15C)
960 gr white flour (all purpose)
100 gr powdered roasted soba
65 gr sugar
20 gr fresh yeast
Mix for approx 5 min
Add
20 gr salt
Mix for approx 3 min
Add
130 gr butter (room temperature)
Mix for approx 5 min
Windowpane test
Proofing is done at room temperature for about 3h both time.
Bake at 190C for 10min with lid, then take off the lid and cook a further 25min at 180C

The prefecture includes both high mountains in the inland region and a long coastline, with many islands in the Seto Inland Sea. The westernmost arm of Ehime, the Sadamisaki Peninsula, is the narrowest peninsula in Japan.
