Street food in Italy - Today I will take on a street food tour in Bari, Italy, to eat some of the most unseen Italian food in Italy.

To start our street food tour in Bari, we went to the local fish market to eat raw fish for breakfast which is something totally unseen.

To continue our street food tour in Bari, we had the most famous dish of the city, the focaccia barese or Bari pizza.

After that, we had a next-level sandwich and a fried burrata cheese.

Moving on with our street food tour in Bari, we finally managed to eat the iconic orecchiette pasta which is one of the symbols of the city.

Bari is the capital city of the Metropolitan City of Bari and of the Apulia region, on the Adriatic Sea, in southern Italy. It is the second most important economic centre of mainland Southern Italy after Naples (and the third after Palermo, if Insular Italy is included), a port and university city, as well as the city of Saint Nicholas. The city itself has a population of 320,257 inhabitants, over 116 square kilometres (45 sq mi), while the urban area has 750,000 inhabitants. The metropolitan area has 1.3 million inhabitants.

Bari is made up of four different urban sections. To the north is the closely built old town on the peninsula between two modern harbours, with the Basilica of Saint Nicholas, the Cathedral of San Sabino (1035–1171) and the Hohenstaufen Castle built for Frederick II, which is now also a major nightlife district. To the south is the Murat quarter (erected by Joachim Murat), the modern heart of the city, which is laid out on a rectangular grid-plan with a promenade on the sea and the major shopping district (the via Sparano and via Argiro).

COSA VEDERE IN PUGLIA: Bitritto centro storico Chiesa Santa Maria | Segreti e Bugie

Nella ricostruzione della storia di Bitritto, innumerevoli sono i fili che legano le vicende del paese a quelle del territorio di cui fa parte, cioè la conca barese: si comincia dalla descrizione della grotta Mapane , analoga, per assimilazione territoriale, agli insediamenti antropici protostorici tipici di tutto il territorio di Bari.
Le prime comunità umane residenti nella zona dell’attuale Bitritto dovevano dunque essere presenti in ipogei carsici, successivamente trincerati e poi agglomerati in villaggi (vici), corrispondenti alle antiche contrade oggi denominate San Marco, San Giovanni, Randa ed altre; villaggi di età greco-peuceta di cui esistono testimonianze archeologiche .
Nell’evoluzione dal sistema vicano a quello paganico, si ipotizza quindi l’esistenza dell’antico pagus di Bitritto nella zona attualmente nota come il Pendìo, che doveva verosimilmente essere l’acropoli, il punto più alto, meglio difendibile, più salubre, il meno soggetto al ristagno di acque meteoriche, ben collegato al reticolo viario, vicino alla fonte d’acqua di due rami di una lama e nelle immediate vicinanze di terreni fertili .
Il pagus protourbano del Pendìo, sviluppatosi intorno al VII - VI secolo a. C., a un certo punto, intorno al IV secolo, doveva però essere diventato insufficiente a contenere l’aumento della popolazione che, analogamente all’esempio della vicinissima Ceglie, si sarà inurbata a ridosso dell’acropoli, cioè a nord-ovest , dando vita ad una civiltà di rilevante sviluppo, come testimoniano i reperti vascolari della necropoli di Sant’Andrea.
In età romana, poi, sorse una villa nella zona corrispondente all’attuale castello: ci sono infatti chiare tracce dell’esistenza di torchi, vasche per la lavorazione e contenitori per olio e vino sotto l’ala nord-est del castello.
L’importanza di questo insediamento produttivo romano sicuramente era dovuta anche al fatto che era collocato in prossimità del passaggio del decumano massimo del territorio di Bari (l’ager varinus) e che poco lontano passava anche il cardo massimo, corrispondente alla via Cardo-Carrera .
Trae allora ancora più forza ed efficacia la tesi, già argomentata in passato, dell’origine del toponimo di Bitritto dal termine latino Vitaritum (vigneto): la domus romana presso la quale si svolgeva la lavorazione di olio e vino, sita in prossimità di importanti vie di comunicazione, aveva attorno a sé ricche campagne prevalentemente coltivate a vite, che d’altra parte accanto all’olivo e al grano era la più antica coltivazione mediterranea, e ricavava la sua forza economica proprio da questa attività.
Successivamente alla caduta dell’impero romano e alla guerra greco-gotica, sorgono insediamenti longobardi, come la prima elevazione, a livello del basamento, della Casa - torre sita in piazza Leone, originariamente posto di guardia a difesa dell’abitato.
Nel periodo bizantino, Bitritto si espande poi, con le caratteristiche di un villaggio (chorion) nella zona a sud dell’antico pagus del Pendìo, con reticoli viari (tra via Minghetti, via Monaco e via Loconte) di ascendenza sia araba che bizantina, una comune koinè urbana panmediterranea ).
E’ il periodo in cui si sviluppa, anche a Bitritto, il culto di San Michele Arcangelo e si costruisce l’omonima chiesa, sita fuori del centro abitato come attestano anche i documenti dell’epoca.

In epoca normanna, Bitritto ha nuovamente cambiato fisionomia: è ora un centro fortificato, cinto da solide mura, all’estremità delle quali, sul sito della precedente villa romana forse demolita o andata distrutta, è stato edificato un poderoso castello. Castello che assume il ruolo di edificio-simbolo negli anni successivi: nei secoli che vanno dall’XI al XV, le vicende del castrum bitrittese sono uno spaccato della storia del Basso Medioevo nell’Italia Meridionale. Le secolari dispute, sia militari che giuridiche, che testimoniano quanto dovesse essere ricca e fiorente l’economia bitrittese, se era in grado di scatenare interessi così tenaci, si concludono definitivamente con l’attribuzione del feudo all’arcivescovo di Bari: e si apre così un lungo periodo della storia di Bitritto, che fino all’età moderna condividerà con Cassano il singolare titolo di possesso feudale della curia barese.
Nel Cinquecento e nel Seicento il paese appare dunque dominato dalle figure vescovili e dal clima della Controriforma tridentina: all’erezione della Chiesa Matrice, dedicata alla Madonna di Costantinopoli e legata alla fine dell’epidemia di peste, seguono l’istituzione di confraternite laicali e la costruzione di nuove chiese, oltre alle visite pastorali dei vescovi Puteo e Riccardi.
Alla fine del Settecento, come accade d’altra parte in tutto il Regno di Napoli, la presenza laica diventa in effetti emergente ed inizia ad acquisire un’importanza, sia economica che politica, sconosciuta in passato.
