105 Small Nethili Fish Fry | Simple Nethili Fry Recipe | Village Style Hungry Foods
Anchovies are small fish packed with essential fatty acids, protein, calcium and other nutrients. This fish is eaten along with bones.
The fresh anchovies can also be cooked in spicy-sour gravy (nethalla pulusu) which tastes heaven with steam rice.
Soak the dry fish in warm water for half an hour. Remove the head and intestine (black part) and wash the fish properly.
Heat oil in pan, add chopped onions, curry leaves and fry till onions turn transparent.
Add ginger-garlic paste and fry for 2 min on a medium flame.
Add all the dry spices, saute for a while on low flame.
Now add the drained dry fish, saute for 2-3 min on high heat, add 1 cup water and mix well.
Cook covered for 4-5 min, or until all the moisture is evaporated.

Street Food at Home - Kerala style fish curry recipe! Cook and eat #withme #Kerala #IndianFood #India

I loved my trip to Kerala, India, with @Food N Travel by Ebbin Jose , and we tried so many of the unique local Indian food dishes in this amazing southern state of India. One of the dishes that is both popular, and always hits the spot is a Kerala style Kottayam fish curry. And so today we’re going to make it, together.

We had Kottayam fish curry a number of times throughout Kerala, home cooked, in the jungle and homely restaurant, and at a legendary toddy shop, known for serving extra spicy Indian food. They were all extremely delicious.

Ok, let’s get started on this recipe:

Ingredients:

½ kg. King Mackerel
3 tbsp coconut oil

1 tbsp mustard seeds
1 tbsp fenugreek seeds
10 - 15 dried whole chilies
4 - 6 stems of curry leaves

50 grams ginger
1 head garlic
6 small shallots

20 grams dried pot tamarind - soak in 300 ml water for 15 minutes.
4 tbsp. Kashmiri chili
4 tbsp. Strong chili
2 tbsp. Coriander powder
½ tbsp. Turmeric powder
½ tbsp. Black pepper
Salt to taste

Method:

Pound ginger and garlic into a coarse paste. Slice shallots. Set all dry spices aside on a plate so you can use them quickly. Soak dry pot tamarind in water and set aside for at least 15 minutes to extract the flavor.
Begin cooking by heating coconut oil in pot. When hot, immediately toss in mustard seeds, fenugreek seeds, curry leaves, and whole dried chilies. Fry for a few seconds until smoky and fragrant.
Add ginger garlic paste and shallots and stir fry until golden and fragrant.
Add all dry spices, if it gets to dry add a little water, and make into a paste.
Add pot tamarind water, and mix into spices. You can also add some extra water to make it liquid.
Season with salt to taste.
Taste test to balance spices, pot tamarind sourness, and salt. Add more if needed.
Final step is to add the fish - and once you add it - don’t stir your curry. Make sure fish is submerged into curry sauce. Simmer to 5 - 10 minutes depending on how big your fish is.
When fish is cooked, curry is ready. Eat with rice, or tubers.

Thai Street Food - Pla Pao (Roasted Fish) at Central World Street Food Stalls in Bangkok!

One of the best things about visiting Bangkok is taking advantage of the incredible array of Thai street food available. It's nearly everywhere you look and it's mostly quite sanitary, affordable, and most importantly, it's incredible delicious. There's Thai street food all over Bangkok and throughout the entire country. One of the most popular shopping areas in the city is known as Pratunam, an area that's just a short distance from Siam shopping area and just a short walk from Central World mall. Everyday, thousands of pedestrians pass this little stretch next to Central World and for that reason, there's an abundance of wonderful street food available. Starting at about 5 pm each day, there are a series of full Thai street food restaurants that set up just outside of Central World shopping mall in Bangkok. The place that I ate at in the video goes by Ratchaprasong Thai Food (ราชประสงค์ ไทยฟู้ด). They specialize in mostly Isaan cuisine from the northeaster part of the country, but they also have some other stir fried Chinese style dishes as well. But when I go, I mostly go with an intent to eat a few of the items off the grill!

Plan chon pao (ปลาช่อนเผา), or roasted snake head fish, is the top reason to visit these street stalls. The grills are absolutely packed with this ugly, yet tasty creatures. To prepare them Thai style, the fish is first stuffed in the mouth with lemongrass and herbs and then rolled in a thick layer of salt. The fish is then slow roasted on open charcoal as it slow cooks. The result is a flaky fish that's a gem of Thai street food. Served with a seafood sauce, called nam jim seafood, it's amazing. The fish is flaky and remains moist and flavorful from the cooking process. I also tried their grilled chicken, known as gai yang in Thai. It was indeed flavorful, but my only complaint is that it was slightly dry. However, that's just sort of the way street food may be, some pieces of chicken might be dry and others nice and moist. Lastly, now Thai meal on the street like this would be complete without a helping of green papaya salad. I asked for it spicy, and they didn't fail to load it with spicy chillies. Made with fresh ingredients, the green papaya was crisp and mixed with a tomatoes, dry shrimp, chillies, garlic, palm sugar, fish sauce, and lime juice. It was excellent. Along with the other dishes, I also enjoyed a few plates of Thai sticky rice to bring the meal together!

Sitting on the side of the busy road and with countless pedestrians that walk past every minute, Ratchaprasong Thai Food (ราชประสงค์ ไทยฟู้ด) doesn't have the greatest ambiance. But it sure is convenient and the Thai street food there is quite appetizing!

Hours: 5 pm - 2 am daily
Prices: 100 - 200 THB per person for a full meal, the meal we ate above came to 300 THB

How To Get There: Take the BTS to Chit Lom station, walk towards Ratchaprasong road and then cross the street to Central World shopping mall. Procee to walk past the mall and on your way to Pratunam, and it would be impossible to miss these Thai street food stalls. I go to the first one. Open only after 5 pm.

PATTANI, THAILAND - Welcome to Pattani province, in the deep South of Thailand! Today, along with my friend Muhammad from Papa Tagu ( visited two communities - one for a famous durian in the mountains. And two to the sea to a community that specializes in fourfinger threadfin fish, which is also called an Indian salmon (ปลากุเลา)!

Durian Monthong Sai Khao (ทุเรียนหมอนทองทรายขาว) - First we headed to a village called Sai Khao, which is a beautiful place on the side of the mountain. They are known for their fruit and especially for durian. They grow a type of “monthong durian” which is found around Thailand, but their version is slightly different and known to be the best quality in Thailand. It was exceptionally creamy and perfectly sweet, rich, and thick. Definitely the best monthong I’ve probably ever had. Still, I do prefer the small “durian baan” which usually have a stronger, smellier, and bitter taste. But it was a great experience and great to see the durian at the source.

Fourfinger Threadfin (Indian Salmon ปลากุเลา) - Next, we took a short drive to a coastal community where they fish for Fourfinger Threadfin (also known as Indian Salmon ปลากุเลา), and they preserve the fish in this village and then sell it. You’ll find this fish all over Thailand, and most of it comes from the coast of Pattani and Narathiwat. They set up a makeshift kitchen and deep fried pieces of the fish and finished it off with a huge amount of lime juice, chilies, and shallots. It was one of the greatest bursts of umami ever - so much flavor and age in that fish. If you close your eyes you might have thought it was a very mature aged cheese.

100 Small Fish || Nethili Fish Pakodi Recipe || Village Style By Raju Master II Hungry Foods

This is such a wonderful recipe with a thick tangy masala coated all over the fish. You can make this in bulk and keep it in fridge and enjoy for a whole week. The orginal recipe says that we can store this in room temparature for 3 to 4 days. But i was scared to keep it out, so i pop this in fridge and use it accordingly
Preparation Time: 10 mins
Cooking Time : 40 to 45 mins
Serves : 4 to 5
Ingredients:

Anchovies / Nethili Meen - 300 grams
Oil - 1/4 cup + 1/4 cup
Fenugreek Seeds / Methi / Vendayam - 1 tsp
Garlic - 2 sliced thinly
Chilli Powder - 2 tsp
Coriander Powder / Malli Podi - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Salt to taste
Tamarind Pulp - 4 tblspn or to taste
Curry Leaves - a small handful

For Grinding:
Shallots / Sambar Onion - 20 peeled
Tomatoes - 2 large chopped
Garlic - 10 cloves
Whole Pepper - 1 tsp
Green Chilli - 2

Method:

Take all the ingredients in a blender and make it into a fine paste. Set aside till use.

Heat oil in a heavy bottom pan. Add in 1/4 cup of oil and add in fenugreek seeds and sliced garlic. Let it sizzle for a min.

Add in the pureed masala and mix well. Cook it for couple of mins.

Add in salt and all spice powders, mix them well.

Cover and cook till oil separates.

Now add in the tamarind pulp and mix well. Cook till the mix is thick and looks like a masala.

Add in anchovies fish and mix well. Cover and cook for 5 to 8 mins till the fish is tender and cooked.

Now drizzle in the remaining oil all around the sides of the pan and swirl the pan to coat the oil on all sides. Cook this for 5 to 8 mins

Throw in a handful of curry leaves and swirl the pan. Keep the flame on low and cook it for few mins. Don't stir the masala at this point, if you stir it, the fish will break. So always swirl the pan.

Cook all this till oil separates and the mix is thick.

Serve with rice.

Notes:

1)Once the fish is added and cooked, dont stir the fish with spoon. Always swirl the pan. I strongly advice you to use a nonstick pan with plastic handles.

2)Cook this till oil separates and floats on top.

3)This dish will keep well for 4 to 5 days. I keep this in a air tight container in fridge and take small amount as needed and reheat it while serving.

????AMUSE-BOUCHE: Steam the fish for 15 minutes at a rising temperature up to 100 Celsius. Mince the shiitake and hedgehog mushrooms. Season with salt. Add mushrooms in a bowl with tofu and mix. Add the cobia fillet to the mixture.. Season with Vietnamese Sichuan pepper and prickly ash. Shape them in balls, and put it in a blast chiller at -18 Celsius. ????STARTER: In a pan with butter, saute bits of cobia meat. Prepare the pumpkin puree (cooked for 3 hours) and crustacean jus - Crab, lobster, shellfish stock (cooked for 4 hours). Start plating crustacean jus, pumpkin puree, dried ants, cobia meat, roasted cacao nibs and thyme.

????SOUP: Prepare the broth using mushrooms, purple onions, lemongrass, ginger, dried shiitake mushrooms, turmeric, garlic, coriander, chillies in a pot. Sear the ingredients and then add water, black pepper, coriander seed and star anise. Repeat the process and then filter the broth. Add soy sauce and vinegar to the broth and leave overnight. Pan sear the cubed fish meat and flambe with Vermouth. Pan sear the hedgehog mushroom with butter. Start plating by adding the fish on the plate, mushroom, fermented black trumpet mushroom, and serve with mushroom broth.

????MAIN: Season the cobia with salt and oil then grill it on charcoal for 8 to 10 minutes. Dice the zucchini. Put the fish on the lard to melt. Sautee the zucchini with salt and pepper. Prepare the emulsion. Plate and serve.
