The Hyderabadi Biryani needs no detailed introduction. This glorious delicacy is a staple for the locals and the go-to dish for the tourists. Hyderabadi Biryani is characteristically distinct from its popular counterparts because of its distinct aroma, taste, texture and the mode of preparation.

With the essence of Turkish, Mughlai and Arabic influences in it, the Hyderabadi Biryani has been an integral part of the Hyderabad’s culinary tradition since a long time. In this culinary exploration, we have set out to savour the dazzling aura of this majestic dish at some of the most famed destinations across the city. We are happy to be accompanied by our gracious host Sankalp Vishnu who is an acclaimed food critic and food expert.

We tried Hyderabadi biryani at two eminent places-The Lucky restaurant and the Bawarchi restaurant. Our intention was to understand the nuances or fine tuning of the variations in the Hyderabadi biryani as adopted by these joints.

Our first stop was the Lucky restaurant that serves one of the best versions of the Kachi Gost Ki Biryani. We got the opportunity to witness the making of a batch of Hyderabadi Biryani at their wonderful, aromatic kitchen. The seemingly easy procedure entails an astute understanding of the dynamics of its cooking, perseverance and dexterity. The genial owner for Lucky restaurant walked us through the process sharing all the details of their prized preparation. We then tried the Nalli Biryani along with some other delectable meaty wonders. The feast ended with the lusciously amazing Khubani ka Meetha a dessert that’s exclusive to the city.

The next day we went to the acclaimed Bawarchi restaurant to try their version of the Hyderabadi Biryani. In recent years it has emerged as favourite destination for the same. The beautifully done Chicken Biryani was worth all the reputation. It ticked all the boxes of parameters that make the magic of a biryani work. A distinct feature of the biryani here was the pleasantly notable presence of the shah jeera flavour in it. Here we also tried the Hyderabad famous Double Ka Meetha and the Kaddu ka kheer. The latter one was the best.

While winding up this Hyderabadi biryani trail we couldn’t but wonder at the flamboyant stature of this apparently royal dish that rules the heart of the masses in and beyond this city.

When Mr Mohammed suffered business losses in Bengaluru 18 years ago, he was on the verge of retreating to his hometown, but his wife, Mrs Asiya Khan prevailed upon him to stay back and begin a home-cooked biryani enterprise, based on a recipe she had learnt from her mother-in-law in Hyderabad. She would cook the biryani at home and her husband was entrusted with the task of selling these in supermarkets. Little by little, they grew their biryani business, moving to a tiny shop with space only for a counter and three tables eight years ago. Over time, the reputation of Noon’s Biryani grew and built for itself a loyal clientele, many of whom would order takeaways. However, the current situation has seen their business dwindle down to less than half, and it was in this context that they reached out to us, seeking assistance to help spread the word. I paid a surprise visit and liked what I tasted, compelling us to return later to film this episode. We visit the elderly couple at their home, watch the making of a chicken and mutton biryani, before making a delicious meal of these at their shop. Chicken Biryani
Each grain of rice is separate and every piece of meat is cocooned in the biryani masala, much like how Hyderabadis like their biryanis. The heart of the masala is the brishta, fried onions, and the spices that make their presence felt in the aromatic warmth that wafts through the palate. The meat has a bit of richness thanks to the khoa that goes into the making of the chicken biryani here, and makes for a worthy partner to the rice.

Mrs. Mohammed’s mutton biryani benefits from a generous measure, as compared to the chicken biryani, of the fried onions and spices to complement the richness of the mutton on the bone, its meaty flavours fortified by some fat clinging on to the pieces. The rice glistens in its moistness and greets you with a gentle embrace, the edge of the spices tamed by the character of the meat, that also lends the rice depth of flavour. The meat is tender in parts and with a bit of a bite in others, its flavour delicate and warming, shining through the spices. If you are the sort who doesn’t like your biryani to assault your tastebuds with a spicy jhatka, this is certainly a biryani that will please your palate.

They are world known for making the world famous hyderabadi biryani and I found a restaurant in Mexico City with a very talented Indian chef that prepared an authentic Hyderabadi dum biryani for me. He made a chicken dum biryani the traditional way dum style which keeps all the flavors sealed inside the pot while the food cooks. Sophie decided to try the biryani with me and was surprised by the taste. In this video you will see the way to make Hyderabadi dum biryani from scratch. It had been a while since I had filmed a biryani making episode. And so when the opportunity arose to film the complete process of a biryani whose recipe has remained constant for over a century, I lost no time to head to Taj Hotel Shivaji Nagar, an eatery that dates back to the early 20th century, and today churns out over 500 kilos of biryani each day. I met with the third and fourth generation of the family of the late Janab Abdur Rahman, who are committed to preserving the ancient traditions that go into the making of their biryani, including cooking it over a wood fire only.

With a culinary legacy that spans 130 years and four generations, Rahamaniya Briyani Hotel is considered to be the home of the Ambur Briyani. Spelt Briyani by the denizens of this bustling town, this dish has spawned many a biryani shop across the region.

In this episode of Gourmet On The Road, Food Lovers’ Editor, Kripal Amanna meets three generations of the Ahmed family and gets exclusive insider access to the kitchens of Rahamania Briyani Hotel to watch the making of an Ambur mutton briyani from scratch.

this biryani is seductively subtle in its aroma. you taste the luscious flavours of the aqhni in every grain of the flavourful jeera samba rice. The juicy meat pieces are small, allowing you to savour its meaty goodness in almost every mouthful of the briyani. If you like your briyani a little spirited and slightly spicy, taste it with the eggplant salan. I personally love this 'briyani' just by itself.

NAATU KOZHI BRIYANI
prepared in the same fashion as the mutton version, the flavour of the rice is very similar to the mutton briyani sans the flavour of the fat in the latter. The flavourful country chicken has a bit of a bite, typical of its character. If you love your naatu kozhi, you will love this briyani too.

Marinated deep-fried leg of chicken, fried to the perfect crisp outside yet retains its juicy moistness within. relish it with the toasty, herbaceous flavours of the curry leaves that are fried alongside the chicken.

Encased in a robust masala that’s rich in its fenugreek flavour notes, the seer fish fry is a tasty distraction from the legendary briyani here. The savouriness of the curry leaves and the acidity of the lime definitely perks up the flavours of the fish.

To tell about myself ,
I belong to Telangana ,the youngest state in the country,and to be specific i am from Hyderabad.
So,I was wondering,how yummy would it be is if started my food journey with a biryani.
In this video i have covered Hyderabadi Mutton dum Biryani Making and Hyderabadi chicken dum biryani tasting
Why only biryani?
Think about Hyderabad,what do U see huh ???isn't the aromatic and yummiest biryani that has popped in your head !!!yes so let’s stop over for a biryaniville????
Well,Hyderabad biryani is usually believed to have originated in the kitchen of the Nizam's Greatest & Richest kings ever.
Hyderabadi biryani is a staple food of indian cuisines.Where ever you go such as partying or a family function anywhere in India ,biryani is a stipulation,agree? why not :)
So that my first station is mehfil ,a well known chain of cusines in hyderabad and across india,is especially craved for its biryani and quintessential non-veg lunch pullover in town

Highly known for its aromatic biryani made out of basmati(Long grain) rice,unlike the typical boiled rice used in other place in telangana,this is a mandatory stop
over fellon..... it once.

They claim that its biryani is what brings the patrons back.

And the service,oh my god it was a tailored service for every customer
who steps in
A mandatory onion and cucumber salad would be there as a side.

How amazing the place is!!!
you are in hyderabad ,the place where biryani is born....if you are in hyderabad&you are not aware of what mehfil biryani is ,then you gotta kick it up a notch guys cos the biryani is smoking hot ..
!!! Let’s dig in ...
Let’s talk at length about the biryani that we get at Mehfil..

They take the cleanest and tenderest chicken into the bowl ,add mint and coriander leaves to it ,green chilli paste ,shajeera, and all herbs including ginger-garlic paste ,turmeric,red chilli powder ,lemon juice ,salt,onion ,deep fried onion ,and a little oil(the one which we used to deep fry the onions )..mix it up..now the enhancer Mr.Yogurt ....mix it up and marinate for 2 hours ..strict to the recipe ,no compromise guys here !!!
2 hours are done !!
Now just take a look at the chicken ,it’s so tender that you just want to devour it all but not yet cos the best part is not out yet !!
Now they cook the rice ..proportion is 200 kg rice and 200kg chicken ...
In this rice cooking water ,add biryani leaf and all herbs !!!
Why the Mehfil is top notch cos here comes the trick !!!
They Don’t cook the rice fully..maybe do it half ..then add this rice to the saved chicken ..Then the best part which is famously called “DHUM” !!!They add ghee and Saffron and seal the lid by which the DHUM happens (every ounce of essence is saved by this seal) and after around 30min,you unseal and get a whiff of the yummiest biryani !!

I am in Hyderabad, India, the true meat heaven, with my dear companion @Tasty Drips. We came to the kitchen of the Sarvi Food Court to report on the preparation process of their famous mutton and chicken biryani.
Get ready for the most thrilling chicken and mutton biryani in Hyderabad, India!
The aroma of onions, coriander, and yogurt mixed with the chicken and mutton will leave you craving for more.
The preparation process is a sight to behold. The onions are peeled and chopped using an old onion chopper device. The onions are fried to perfection, and the mutton is mixed in, followed by extra oil and yogurt. Coriander is added, and the mixture is stirred well to ensure that the chicken and mutton are flavored to perfection. The rice is cooked separately in a large pot with salted water, and once done, it is poured over the chicken and mutton mixture. Saffron is sprinkled on top. The pots are then placed on the stove, and charcoal is sprinkled on top of the lids to infuse the biryani with a smoky flavor. Once ready, the chicken biryani and mutton biryani are served on plates, topped with fried onions and coriander. The combination of flavors and textures is simply divine, making this dish a must-try for anyone visiting Hyderabad.
First, they served us the Hyderabadi chicken biryani. It was one of the best chicken biryanis I've ever tasted; it was truly gorgeous. Alongside, there were onions, raita, and green chili sauce, which made an incredibly rich and delightful combination.
Then I tried my favorite biryani, the mutton biryani. It was bone-in meat that was very well marinated and well-cooked; it was unbelievable.
Later, I tried their famous traditional dessert made with apricot, called Khubani Ka Meetha a famous and delicious traditional dessert from Hyderabad. It is made by heating apricots with sugar and syrup until they mix well together and take on a beautiful red color. The dessert is served with almond kernels on top and is often paired with Karak tea, a popular tea from Iran and Baluchistan made with milk and tea. The combination of Khubani Ka Meetha and Karak tea is truly unique and makes for an excellent dessert experience. Overall, Khubani Ka Meetha is a masterpiece dessert that is sure to delight anyone with its sweet and flavorful taste.
