TAY VILLAGE FEAST

1. BAC HA MARKET
ADDRESS: Bac Ha Township, Bac Ha District, Lao Cai Province

????????CORN STEAMED PUDDING: After grinding the corn and mixing with lime water, steam the corn mixture in the mold. Cut in bite-sized pieces. Add pickled cabbage, ground peanuts, pickled juice, and fresh herbs. Top with MSG and seasoning powder.

????????FIVE-COLORED STICKY RICE: Soak the sticky rice with Magenta leaves for various colors. Steam the rice in a hollow tree trunk pot. Wrap the sticky rice with a phyllium leaf and add a mixture of ground sesame seeds and salt.

????????FRIED POUNDED STICKY RICE CAKE: After pounding the rice, either crispy fry it or serve it plain. Fry two sides of the pounded sticky rice cake. Cut it into bite sizes.

????????FRIED MUNG BEAN RICE CAKE: Take a small piece of rice flour and add mung bean paste as the filling. Sprinkle sesame seeds on the outside. Deep fry until it turns golden brown.

????ROTISSERIE PIGLET: Stuff with Clausena indica leaves and season with Thai pepper, salt, MSG and ground pepper. Rotisserie for four to five hours. Regularly spray water on the skin. Take out the leaves and squeeze for dipping sauce, then cut the meat in bite sizes.

????FRIED PORK SHOULDER: Blanch the piglet shoulder in the broth with fermented rice, ginger, lemongrass, lime leaves, Thai pepper, and dried shallots. Fry it in a pan with pork fat.

????TAY TRADITIONAL BRAISED PORK BELLY: Blanch the pork belly in the broth with fermented rice, ginger, lemongrass, lime leaves, Thai pepper, and dried shallots. Pierce pieces of pork belly with bamboo skewers. Dip the meat in a bowl of vinegar and honey. Fry in pork fat and then boil in the blanch broth again. Cut into one-inch slices and season with ground pepper, Thai pepper, ginger, rice wine, Tay fermented soya paste, Tay fermented soya bean, fish sauce, MSG and seasoning powder. Stack up 8 even pieces. Put it neatly in a bowl. Add pickled cabbage on top and braise in a bowl in a steamer for 2 hours.

????????BLACK STICKY RICE: Soak the sticky rice and mung bean for eight hours. Grill the bark and “Núc nác” tree branches. Smash it to ash, and mix with the sticky rice. Season the pork belly with a mixture of prickly ash, Thai pepper seeds, MSG, salt. Add “dong” leaves or Phrynium leaves. Scoop a bowl of dyed sticky rice, mung bean, and finish with slices of pork belly. Wrap it up, and use a straw to tighten it. Cook it in boiling water for 6 hours. Allow it to cool down for 6 to 8 hours.

CEBU, PHILIPPINES - Welcome to Cebu, the capital where you’ll find the best Filipino roast pig, better known as lechon. Today we’re going on an ultimate pig tour to eat the best lechon in the Philippines - maybe the entire world! It’s going to be a day of crispy skin, juicy pork, and the action is going to be insane!

Here are all the places we went in this Philippines street food tour:

Gogoes Lechon ( - First up is Gogoes lechon located north of Cebu. We arrived at 5 am to see the process of them roasting their lechon. They fill up the belly of the pig with sea salt and a combination of spices that includes ginger and especially green onions. The pigs roast for 3 - 4 hours, carefully being turned as they roast so the skin cooks and crispfies perfectly. It was sensational and a perfect way to start this ultimate Filipino lechon tour. (Price - they wouldn’t charge us)

Ruthy's Lechon ( - Next up we headed to Talisay, known as the birthplace of lechon, and where the original lechoneros come from. Stanly first took me to Ruthy’s one of the standards of lechon - packed and they fly through the pigs. We chopped up a 3 kilo belly section of the pig. The skin was insanely crispy, salty, and full of juicy green onions. Price - 2,940 pesos

Lolo Soy's Lechon House - Finally, one of the greatest lechon’s in all of the Philippines, Lolo Soy's Lechon House. They fly through pigs and they had already sold over 20 pigs by the time we arrived. The action is out of control! We ordered a kilo and they also gave us some of the feet, plus some of the blood stew. Price - 750 per kg, we had 1 kg

Paraz Native Lechon ( - For our last stop on this ultimate Filipino lechon tour we drove down to Carcar, another famous lechon city. We went to Paraz Native Lechon where they sell over 50 pigs a day, and they use native natural pigs. The pigs are still roasted over coals using traditional bamboo skewers. They chop it up, it’s so insanely juicy and then they drizzle on the drippings with all the onions. Additionally, they are known for their chili vinegar, which is some of the best you’ll have anywhere.

This was one of the greatest days of eating pig in my lechon, Cebu lechon really is the king of roast pig!

As Adnan and Farhad explained to me, unfortunately during the Soviet period, Azerbaijan wasn’t able to develop their street food culture that much and creativity was omitted. When Azerbaijan broke away from the Soviet Union, it was the Turkish who influenced much of the Azerbaijani street food culture. So you will definitely find some similarities, and yet some differences.

We started this extreme street food tour in Baku by going to one of the oldest Soviet style cafes for a quick piroshky on the go. It was pretty oily, but pretty tasty especially when drenched in tomato sauce.

Amin Kabab - Next stop on this food tour, we went to Amin Kabab, a small neighborhood kebab grill for a quick Lyulya kebab, or chopped meat kebab.

Eskulap Restoran - If you’re looking for one of the best local Azerbaijan kebab meat restaurants in Baku, this is the spot. Adnan explained it’s a legendary restaurant he’s been coming to since he was a kid. They specialize in all things lamb, and along with a variety of stews and braised dishes, one of their specialties is the Khan Kebab, lamb liver wrapped in caul fat and grilled. I also loved the lamb braised in sour plums and barberries and the insane dessert kebab of ground walnuts and lamb fat. What a meal!

To continue this extreme street food tour in Baku we headed to a lamb street where lambs hang on the street, you choose your cut from nose to tail. The organs and jaws are some of the most popular items here. We tried lamb jaws and testicles - both of which were pretty tasty.

Köz Halil Usta - Finally to complete this food tour, we had to eat at Köz Halil Usta for tantuni, a Turkish in origin food, but one of the most popular street foods in Azerbaijan. They fry up beef slices with spices and sunflower oil and wrap into your choice of bread or lavash. It’s something you could watch all day being made and it’s so incredibly addictive.

And that wraps up Azerbaijani food tour in Baku. It’s an incredible city and the lamb and meats are spectacular!

Wong Sifu, the master chef at Wong Mei Kee, has been running his shop for almost 40 years now, and over the years has perfected the craft of cooking super crispy pork belly (siu yuk) and Chinese char siu BBQ pork. Located in Kuala Lumpur, he’s known to locals and tourists alike for having the best crispy pork belly and Chinese char siu BBQ pork in the city. This definitely needs to be on your list of street foods to eat in Kuala Lumpur!

We were super lucky to be invited into Wong Sifu’s restaurant to watch the preparation and cooking of his super crispy pork belly siu yuk and Chinese char siu BBQ pork. His unique method of cooking in huge drums at the back of the shop was incredible to watch.

The unique street food in Malaysia never ceases to amaze us! After hours of preparation and cooking, Wong Sifu produces the best, most super crispy pork belly siu yuk and Chinese char siu BBQ pork in Kuala Lumpur. Melt in your mouth fat, tender meat, and crispy pork skin, coupled with the gooey and sticky BBQ pork, we were in heaven!

When I was in Dubai, I had the privilege of hanging out and eating with my friend Peyman ( He’s from Dubai, he loves to eat, and he knows some of the best food spots in Dubai. So in this Dubai food tour, we went around and ate Emirati food, rice and lamb, street food, karak tea, and finally ended with home cooked Emirati food at Peyman’s home.

One thing I want to quickly mention, and Peyman and I discussed this in the video as well, is that Emirati food at restaurants is still not very common in Dubai. This is because there are so many international restaurants in Dubai, and local Emiratis typically just eat their food at home. But things are changing and there is starting to be a higher demand for Emirati food in Dubai.

Al Fanar Restaurant - One of the only full Emirati food restaurants in Dubai. We ordered Luqaimat, Tharid, Madrooba, Balaleet. All the food was fantastic, and it’s a nice environment.
Total price - 280 AED ($76.21)

Karak - 0.50 AED ($0.14) per cup - This is originally adapted from India, but it’s a full part of the culture in UAE, and you can get cups of karak tea right to your car.

Al Marhabani Restaurant - Mandi is one of the greatest Arabian food dishes, originally from Yemen. It includes rice and meat that’s traditionally cooked in an underground oven. The lamb here was outstanding.
Total price - 200 AED ($54.44)

Al Labeeb Grocery - Regag bread - This is a little gem of a shop that Peyman took me to. They make some Dubai street food style crepes with cheese and fish sauce, and it’s awesome.
Price - 6 AED ($1.63) each

Machboos - Finally at Peyman’s house for dinner, he cooked machboos, one of the national dishes of UAE. It was a great way to end this Dubai food tour!

Today we’re going on a Thai street food tour where we’ll eat some of the crispiest pork belly cooked in a giant earthenware jar - similar to a tandoor oven. Then we’ll eat some more Thai street food including Thai rice and curry, northern Thai rice noodles, and a legendary place for sweet roti. Let’s go eat!

Neng Earthen Jar Roast Pork เหน่ง ไก่ย่าง หมูกรอบอบโอ่ง ร้านลับ ต้องโดน ( - This is the main spot, on the side of the road you’ll find half a dozen huge ceramic jars, which are used similar to a tandoor. The jar ovens are heated with charcoal on the bottom and all the pork belly and chicken hangs on the sides. The crispy pork belly is insanely tasty, and so crispy. The cooking method allows the meat to cook from the inside out and the skin to fully crispify. Amazing place, highly recommended when you’re in Chiang Mai.

Nam Ngiaw Loong Pong น้ำเงี้ยวลุงพงษ์ ( - Price - 40 THB - Easily one of the most popular and local comfort foods of northern Thailand is nam ngiaw (น้ำเงี้ยว), a porky tomato stew that’s eaten with soft rice noodles. Uncle Pong cooks one pot a day and when it’s gone it’s gone. It’s a traditional taste and a very friendly place.

O-Rote Ded โอรสเด็ด ( - Next up on this Thai street food tour we’re going to O-Rote Ded โอรสเด็ด, which is famous for their Thai rice and curry. Everything is ready, you just go up to the front choose what looks good and try it. Make sure you arrive sometime in the morning 8 - 9 am is good to get the best selection.

Black Car Coffee ( - Right across the street, you’ll find P’Anchan who sells amazing coffee out of his old car.

Rotee Pa Day (โรตีป้าเด) - - Finally to complete this amazing Thai street food tour in Chiang Mai, we’re going to Rotee Pa Day (โรตีป้าเด), where Aunty Day has been making roti for over 39 years - she’s a legend! One of the things she does differently is use only coconut oil for frying her roti which makes a huge difference. You can taste the cleanness of it. She’s also been recognized in the Thailand Michelin guide.
