???????????? KARA'S FAMOUS ONE POT PEANUT BUTTER RAMEN RECIPE!
I'm usually a biiiig measuring cup kind of girl, but for some reason with this recipe, I don't measure anything and taste it along the way. The ingredients change every time. Have fun with it!!! ????
This is for 2 servings (keep in mind i have no idea what i'm doing):
Ingredients:
Olive oil (or whatever you like)
4ish Garlic cloves
1ish inch fresh Ginger
2 of your favorite instant ramens
Salt
Pepper
Coconut aminos
Cayenne pepper
Peanut butter
Fresh Cilantro
Green onions
Toasted sesame seeds
Sriracha
1. Sauté the garlic and ginger with some olive oil
2. Add water (or veg broth!) and make the “sauce”
3. Add the seasoning package that comes with the ramen if you want, or make your own:
4. Add coconut aminos (Idk, maybe 1/3 cup?), salt, pepper, cayenne (if using soy sauce, you don't need as much or any salt!). You could also add the chopped green onions here to cook In the sauce
5. Stir in 1ish scoop of peanut butter
6. Add in noods and let it all cook together
7. Put in bowls and add fresh cilantro, green onion, sesame seeds, and sriracha!

Winter VanLife | We're Struggling
Hey everyone, welcome back to our channel! Winter is here and we're facing some challenges with our vanlife journey. Today, we want to share our struggles and how we're overcoming them.
First up, staying warm. The cold temperatures can be brutal, especially at night. Luckily, we have an excellent chinese diesel heater and a well insulated van!

Next, the battle with condensation. We wake up every morning to find our windows and walls covered in moisture. It's not only uncomfortable but also leads to mold and mildew issues. We quickly learned, even in winter we need to have more airflow. So, we keep a window cracked and use our Fantastic exhaust fan on the lowest setting

Now, onto power management. Winter means shorter days and less sunlight, making it difficult to generate enough solar power to keep our essentials running. Last year we added BattleBorn Batteries and connected our van battery to the house batteries via a 500amp relay isolator!

Another challenge we face is finding suitable camping spots. Many campsites are closed during winter or have limited amenities available. We've had to be resourceful, finding hidden gems in National Forests and using apps to locate free or low-cost campgrounds. Check out our favorite website/app below!

Despite these challenges, we wouldn't trade our winter vanlife experience for anything. The breathtaking snowy landscapes make it all worthwhile. So, if you're considering winter vanlife, be prepared for these hurdles but know that with determination and a little creativity, you can overcome them.

Originally from Nashville, Tennessee, we got married 2013 and were super “normal.” I was a teacher and Nate started a small business from the spare bedroom of our apartment. We discovered the world of “travel hacking” & became obsessed. So after 2 years of saving $35k and over 2 million miles and points, we sold our cars and apartment and left home January 10, 2016 for a “one year” trip around the world. Our goal was to see as many places as possible before we rean out of money and went home to normal life. We started this travel vlog to share our experiences with friends and family, but quickly fell in love with this lifestyle and did everything we could to keep going. 4 years later, we achieved our new goal of visiting 100 countries and all 7 continents. We had no plans to slow down, until 2020 forced us to ;) Which is when we bought a converted van to start exploring our own country for the first time. Van life was a major adjustment and so different than flying every week like we were used to, but we are incredibly thankful to be able to continue doing something we love every day. ????????????

This is the final episode of our Swedish winter van life series! (Norway is next don't worry) We've been living off grid now for one whole month and we've finally road tripped at the way over to the Arctic Circle and are hanging around in Swedish lapland in Northern Sweden - making van life in the winter our favourite series to date!
A huge playground for adults we park up and head off on some arctic adventures and this week we channel our inner Wim Hof and tried THE CRAZIEST Nordic Tradition - Ice Swimming in a frozen lake!
The pros and cons of this tradition is phenomenal and it certainly made us feel on top of the world!

The weather forecast said 27 m/s, 60 mph or 97 kph and the wind and snow was howling. It was a whiteout. At the end of the day I had an interesting stormy view while having my breakfast, coffee and making pan pizzas.
