An engineer by profession, Apeksha was always interested in the food business. Backed by her husband and a friend, she took the plunge a few months ago in setting up a tiny eatery in Padmanabhanagar, South Bengaluru, where the vegetarian menu is a mix of local favourites and snack items from Dakshina Kannada. Having received a few recommendations from their patrons in the neighbourhood, I ventured out one evening to meet this young, confident entrepreneur and support her fledgling enterprise, in doing so, I taste a satisfying tiffin of idli vade served with a rather impressionable sambar, a subtly-flavoured Mangalore bun, nourishing bonda soup and some more, before rounding off my meal with an organic jaggery coffee. Prabhakar Hegde moved from his native Sirsi in Uttara Kannada to Bengaluru in the nineties to earn a livelihood. He found employment at the iconic Veena Stores in Malleshwaram, and after a few years of working there decided that cooking and serving tiffin was his calling. He went on to open a tiny store in Vidyaranyapura, a far flung locality in North Bengaluru, 23 years ago, a place so remote that back then only a handful of buses would ply there each day. However today, the area has grown into a bustling suburb, and so has Hegde’s Fast Food which is now a cornerstone of the neighbourhood for its idli, vade and a couple of other thindi items. Having received a bunch of recommendations in support of this shop, I visited Hegde impromptu for a chat one evening with him, and also with the locals who have monikered this place as the Veena Stores of Vidyaranyapura.

Over 30 years ago, Dinesh Sood and his brother Deepak Sood, originally from Ludhiana, set up a tiny four-table eatery in the old market area of Balepet, Bengaluru to serve North Indian khaana to traders and travellers who would visit the area. Gaining popularity over time, Punjabi Pure Veg moved to a slightly larger first floor nook eventually, where it still stands 28 years on. The ambience, service and the decor is rather basic, but it is the rustic flavours of the food dished out by second generation owner, Aman Sood and his motley retinue of cooks that seems to hold sway over regular patrons. Also, the fact that the fare is delightfully cheap further adds to its draw. Hope you enjoy this one, visit here only for the food, nothing else.

Mrs Prema continues in the legacy of her father, Mr Venkateshwara, who began a tiny idli hut in a bylane of Hassan adjoining the main market area. Over time the eatery moved to a tiny shop down the road, but its main offering, the idli continues to be a crowd pleaser, even 36 years on! Over 1500 of these are steamed each morning, to a unique batter that incorporates kusubalakki, urad dal and sabakki, sago pearls, in equal proportion; the Idlis are soft and sponge-like in texture to drink up the ghee that is drizzled over. It is served with a unique onion palya that is only tempered with salt and turmeric, and a fiery red chilli chutney made of peanuts, red chillies, cumin and garlic. The decor here is nothing to speak of, just some benches strewn around a tiny shed, but it doesn't seem to deter its patrons from lining up in queues to savour piping hot idlis for only the four or five hours they are open for business every morning.

OG Variar & Sons Bakery, popularly known as Variar Bakery, traces its roots to 1954 when O Govinda Variar, a native of Kannur, Kerala, set up a small bakery in Guttahalli, Northwest Bengaluru, selling breads and buns. Eventually he moved to Rajajinagar in 1970 before opening a second bakery on Chord Road, West Bengaluru. What makes Variar bakery immensely popular with locals is its philosophy that “excludes artificial additives, preservatives and chemically bleached flour in its vast range of baked products.” As a result, “there is no shining in our items,” says second generation owner, Vijaya Shankar, who is currently on a quest to substitute, to the extent possible, detrimental fats with healthier options of unrefined oil, ghee, butter across most of their range, and in certain products, maida with wholewheat flour and grains. I spent the better part of a day exploring the bakery and tasting many of the must-haves at this institution that has spawned many imitators. During my last visit to this 64-year old eatery for breakfast, I learnt there were a bunch of popular dishes that were served only in the evening. And so when the opportunity to return to Gurudatta Bhavan, Hubli, presented itself on our recent drive to Goa, we jumped at the opportunity to savour these scrumptious snacks, some that though with roots far removed from the city have somehow come together in interesting avatars that the denizens of this city have fallen in love with over the decades. A couple of weeks ago, I watched a beautiful Kannada play that not only chronicled the iconic Vidyarthi Bhavan but also brought alive the emotional connect that patrons have with this institution over the decades. Amongst the brilliant characters portrayed, a pivotal performance was that of famed actor and food legend, Sihi Kahi Chandru, who gave voice to the Vidyarthi Bhavan masala dosae, the heart of a tiffin experience at the 77-year-old eatery. In the course of our conversation backstage, Chandru Sir and I quickly decided we should savour a full tiffin at Vidyarthi Bhavan soon. HR Ramaswamy Iyengar came to Bengaluru from Holenarsipur in 1956 and set up a bakery in Basavanagudi, an old market area surrounded by villages where groundnuts were cultivated. Selling a limited variety of pure vegetarian breads, buns and biscuits, the bakery fell upon hard times due to the rationing of flour and other essentials in the seventies. Faced with dire prospects, Ramaswamy Iyengar looked at the plentiful groundnut for survival and in doing so hit upon a unique recipe combining peanuts with a blend of spices that he named the Congress kadlekai, owing to the legend that during British times, secret notes were sent by Indian National Congress party workers hidden in sacks of groundnuts. I spent an afternoon with the second and third generation of the Sreenivasa Brahmins Bakery family to watch the making of the iconic Congress kadlekai and also taste some of the traditional items that make this 66-year-old institution a hit not just with locals, but also with Bengaluru diaspora across the globe who throng here for the kadlekai, nippat, khara buns, palya buns, puffs and other traditional Iyengar bakery treats.

In 1969, P. Ramachandra Upadhyay, then barely in his teens, migrated from Saligrama, Udupi district, to Kanakapura to work in Vasu Hotel, an eatery famous even then for its masala dosae. This form of the dosae though was a foreign concept to Ramachandra, who coincidentally came from a small village called Parampalli, where the khali dosa was prepared as an offering to Lord Maha Vishnu. Notwithstanding his lack of knowledge, the young lad worked hard in the kitchen and in a span of 14 years was handed ownership of the Vasu Hotel by the then owners who wished to retire. Nearly 50 years on, this no-frills eatery located 50 kilometers from Bengaluru still reigns supreme, not just for its sumptuous masala dosae and other old-fashioned tiffin and sweet treats, but also for its honest approach to pricing. I caught up with Mr Upadhyay and his son, Janardhan on a trip back from Mysuru.

An eatery that began the Kamat Yatriniwas group’s foray into highway restaurants twenty seven years ago, Kamat Lokaruchi in Ramanagara serves the nourishing fare of rural Karnataka in an earthy atmosphere that seeks to connect diners to the land. Traditional staples are cooked over old fashioned stoves fuelled by wood to recreate authentic flavours of yore, the culinary philosophy employed here also shuns the use of artificial color and additives. Since they first opened doors, numerous eateries have mushroomed on the Mysuru highway, but even today, over quarter of a century later, Kamat Lokaruchi reigns supreme as one of the most popular eateries on the route. I caught up with Narayan Kamat, son of the late A. S. Kamat who established the Kamat Yatriniwas group, and also explored the kitchens and some wholesome dishes here. I chanced upon this small shop tucked in a by-lane of Indiranagar, serving the hitherto unseen (in Bengaluru) flavours of Benares, Uttar Pradesh. In this quick evening stop, I made quick work of some of the must-try dishes on their menu, scrumptious samosas, a weighty, comforting dal and methi (fenugreek) poori, aloo mangodi, fresh ghee jalebis, an utterly 'khasta' kachori and more. Krishna Poojary migrated from his hometown in Kundapura to Bengaluru nearly half a century ago in search of a livelihood. After a string of odd jobs in eateries, he decided to try his hand at a bajji (fried fritter) gaadi (cart) in Jayanagar 4th block, Bengaluru. It’s been 42 years since; the location of his cart has changed from one street to another over the years, but the place that his fried wares occupy in the hearts and palates of his neighbourhood patrons remains constant to this day. Also perhaps making Kundapura Bonda Bajji Shop one of the area's oldest street food carts! I visited him one cloudy Bengaluru evening to taste all the bondas and bajjis he and his son have on offer.

Stepping into Sri Ram Bhavan at Ayodhya Hotel is akin to stepping back in time. Not just in terms of its decor but the dishes that are served here, many which are found rarely now, and that too mostly in homes that have managed to hold on to their culinary traditions. I drop in for breakfast and and make a big breakfast of many delicacies that I hadn’t tasted hitherto - like the patholi, a stuffed rice and jackfruit pancake steamed in banana leaf, thekre idli, an unusual steamed rice dumpling made with cucumber, a raw jackfruit roast, patrode, spiced and steamed colocasia leaves, and lots more. If you want to savour an old-fashioned South Canara breakfast, more specifically a GSB meal, this is the place to visit when in Mangalore. Hope you enjoy this episode. In the current climate of gloom and doom, Chefs Sanjay Tyagi and Shyam Sundar Bhaskaran, both seasoned culinary professionals with stints in some top Indian kitchens in the country and overseas, have launched a culinary enterprise to not just serve delicious fare but also, more importantly in our opinion, provide livelihoods to chefs and f&b professionals who have lost their jobs at some of the city’s top hotels. The result is Northwest Kebab & Curryhouse, a breezy casual dining restaurant in Koramangala, that is showcasing an interesting repertoire of dishes from the North West Frontier region. A trained pastry chef by profession, Kennedy Dias worked many years overseas crafting fine cakes and pastries. However, he yearned to be back home in Caranzalem, Goa. He finally returned and mustered the courage to set up a cake shop but “people didn’t understand fine pastries 20 years ago”, he says. So, after a couple of unsuccessful years, he began making puffs, pies and chops, the sort of traditional fare that locals appreciate and love. And along the way experimented with a home-smoked curry-leaf infused Goan sausage, that is now a must-try here. Since then, his tiny shop has become much popular with the locals and young students for his omelets, sandwiches, burgers, pies and interesting shakes and juices. This is the sort of honest dive that one should also visit for a true taste of small town Goa, away from the tourist trail.
