Originally from Satna in Madhya Pradesh and raised in Bengaluru, Jawahar Lal always dreamt of being an entrepreneur when he worked as a North Indian cook in eateries in Bengaluru. A friend pointed him to a tiny shop on Berlie Street in Langford Town, and thus began Sudha Chaats, named after his wife, 39 years ago, to introduce Bengaluru to the joys of khasta (crisp) samosas and kachoris. The couple would cook and serve their fare piping hot; alongside the North Indian treats, their masala vada, bhajji and bonda, made interestingly with samosa stuffing, too found much favour, making their shop a popular cornerstone of the neighbourhood over time. Jawahar Lal passed on two years ago, but the tradition continues with his wife, now joined by their son, Satya Narayan. Hope you enjoy this chatpata episode. Chetan Nagendra had to drop out of school in Mandya and move to Bengaluru to work in a factory due to financial hardships back home. However, he soon found himself without a job when the assembly line was automated. Desperate and dejected with no employment available, he went to work at his relatives' chaat cart for a meagre wage of 20 rupees a day. Eventually, it dawned upon him that he too could begin something of his own, where no one could fire him again. And thus began his streetfood venture peddling tikki puris in Jayanagar. 20 years on, Chetan’s Tikki Adda has amassed a popular local following for his scrumptious tikki puri and masala bun fare, some traditional and others inspired, as I learnt from a gaggle of food lovers on a recent visit to the neighbourhood. Found Most Delicious XACUTI MASALA At This Roadside Eatery In Goa! SAI ANANT PARRA | Ros Omelet

I heard from a few locals that this unassuming roadside eatery on Parra Main Road, North Goa, serves a xacuti that was worth the 20 odd kilometer drive from where we were staying in Dona Paula. But when we arrived, the chicken xacuti was over as were some other popular breakfast eats like egg chops, etc.. Nonetheless, we stepped into the kitchen to check what was available and found the remnants of a xacuti gravy that owner, Mahesh Parsekar’s mother prepares at home. The roasted spice aroma of the gravy was enticing, and so when Mahesh offered to cook a ros omelet with the gravy, I knew we had to try it. The weighty omelet was elevated a few notches by the aromatic flavours of the xacuti, and I definitely look forward to returning to Sai Anant Parra someday in the hope of tasting more of the traditional home cooked fare. Whilst many eateries are forced to cut back owing to the current situation, Bengaluru’s much-loved idli-chutney destination, Veena Stores, that began as a small condiment shop 44 years ago, has done just the opposite! It has scaled up four times in size! just so it can afford its customers more space and some relative peace of mind, valued aspects in present times, when tucking into their favourite tiffin treats here. Gone are the days when one had to struggle to order and then huddle and eat on the footpath. Instead, the store is now transformed with a dedicated ordering counter, a larger food dispensing area, indoor space, and even a traditional katte (alfresco bench) where one can sip on some coffee and take in the Malleswaram vibe. In her tiny eatery, just off the highway in Sakleshpur, Mrs. Vishalakshi Lokesh cooks homestyle non vegetarian fare - biryani, khaima unde, mutton chops, chilli chicken, etc. - to recipes she learnt decades ago from her mother in Bengaluru, but accommodating ingredients more suited to native Malenadu tastes. The result is comforting, tasty food that not only has its share of customers amongst the local populace, but also draws in travellers on the route. This enterprise that she began with her late husband, Mr. Lokesh, 21 years ago, supported by son Sujith today, may seem a bit rustic in its aesthetics, but more than makes up for it in the honest, homely appeal of a meal here. During my lunch visit a few months ago to Subbanna Mess, a 100-year-old eatery in the temple town of Melukote in Karnataka, I happened to steal a glance at the preparation of the thatte idli batter, for breakfast the next morning. I was intrigued by the high proportion of urad dal as compared to typical idlis, and so made a mental note to return. And when we did, we were rewarded with tasting one of the softest idlis that I have ever eaten, in combination with a delicious, warming cucumber gojju made. I also savoured their scrumptious no-onion masala dosae, again with an interesting twist, and their world-famous creations - puliyogare, bella pongal and sakkare pongal. OG Variar & Sons Bakery, popularly known as Variar Bakery, traces its roots to 1954 when O Govinda Variar, a native of Kannur, Kerala, set up a small bakery in Guttahalli, Northwest Bengaluru, selling breads and buns. Eventually he moved to Rajajinagar in 1970 before opening a second bakery on Chord Road, West Bengaluru. What makes Variar bakery immensely popular with locals is its philosophy that “excludes artificial additives, preservatives and chemically bleached flour in its vast range of baked products.” As a result, “there is no shining in our items,” says second generation owner, Vijaya Shankar, who is currently on a quest to substitute, to the extent possible, detrimental fats with healthier options of unrefined oil, ghee, butter across most of their range, and in certain products, maida with wholewheat flour and grains. I spent the better part of a day exploring the bakery and tasting many of the must-haves at this institution that has spawned many imitators. It’s difficult to fathom how this modest kiosk in Arapakkam, Vellore district, Tamil Nadu, manages to dish out an amazing variety of tea, coffee and scrumptious snacks all times of the day! I stopped here to taste their copper boiler tea, sukku malli kaapee, a “very addictive” khajoor cake, and snacks like vazhaipoo vadai, onion bonda, that hit the spot! If you’re on the road to Chennai, Ram’s Coffee is a definite must stop for a short but refreshing break.

During my last visit to this 64-year old eatery for breakfast, I learnt there were a bunch of popular dishes that were served only in the evening. For the best traditional Goan desserts and scrumptious savoury treats, locals swear by Mr. Baker, a 100-year-old institution that remains steadfast to its culinary roots. I met with third generation owner, Nenette Fernandes, over a leisurely tasting of bebinca, battica, risoi, croquettes, the sort of baked wares that even her grandfather, Mr. Pedro Vincent Vaz who founded the bakery, would recognise if he were around today. I also discovered a delicious surprise in the Niro, a refreshing cashew juice that took me back to memories from my childhood. Hope you enjoy this short and mostly sweet episode.
