The origins of Macau's famous Portuguese egg tart

BBC Lord Stow – The legacy of Macao’s iconic dish

Transformation is at the heart of the story of Macao as epitomized by Andrew Stow, the larger than life baker behind the city’s own version of Portuguese Egg Tart.

Sift through history to appreciate Macao’s famous egg tarts

When British-born Andrew Stow – who was neither baker nor lord – filled in the paperwork for a bank loan to establish a roadside bakery in Coloane Village, he had to list all the goods he’d be selling. Stow, who was 34 at the time, wrote down various types of bread, Chelsea buns, birthday cakes, and so forth. Then, right at the bottom, he scrawled two fateful words: egg tarts.

Fast forward more than three decades later, and these egg tarts have earned the status of edible icon in Macao.

Any local tour guide worth their salt will point visitors in the direction of Lord Stow’s Bakery – biting into what Stow used to call “the perfect marriage between crispy shell and wibbly wobbly filling” while soaking in the peaceful charms of Coloane Village is a quintessential way to experience Macao.

Macau's Lord Stow's Bakery: Macau Culinary Tourism, Martime Trade & History

An appetizing mixture of East and West--that's the Portuguese egg tarts in Lord Stow's Bakery. Lord Stow, a Brit living in Macau, was not a lord, but his clients called him that for the noble tarts he invented, an original variation of those served in dim sum restaurants and European bakeries. His version is even more decadent than those, with its wickedly rich custard filling in buttery pastry shells.

Portuguese egg tarts, also known as pastéis de nata, originated in Portugal and consist of flaky pastry filled with a custard-like mixture.

Cantonese egg tarts, on the other hand, originated in Hong Kong and have a buttery, crumbly crust filled with a smooth, creamy egg custard.

Lord Stow's Bakery Macao

My brothers recipe for egg tart is a marriage between the Portuguese 'Pastel de nata' and the English custard tart, so the feeling is very rich and the pastry has just the right thickness to make that perfect balance when you bite into it. My brother called it the wibbly wobbly filling delicious.

Lord Stows Bakery was founded by Andrew Stow (Eileens brother) in 1989. Sadly, Andrew passed away unexpectedly in October 2006. Today, his family carries on the legacy of his business for future generations to enjoy.

Saving Macau’s Dying Language

Macau is best known today for its casinos, but 20 years ago, it was a colony governed by the Portuguese, who had been there for over 400 years. Many of the Portuguese traders married Chinese women, and their children developed their own distinct food, culture, and language.

But now this mixed-race group, known as the Macanese, makes up less than 1 percent of Macau’s population, and their language, Patuá, is dying.

The Best Pastel de Nata in Lisbon, Portugal | Eating Portuguese Egg Tarts

Come join us on a quest to find the best pastel de nata in Lisbon, Portugal as we visit three different establishments eating Portuguese egg tarts all over the city. Pastéis de nata first originated from Santa Maria de Belém in the 18th century by Catholic monks at the Jerónimos Monastery where they are called Pastel de Belém (plural) or Pastéis de Belém (singular). Requiring egg-whites to starch clothes it was common to use the leftover yolks for baking which resulted in these tarts being created. Fortunately, we had the chance to visit Belem to sample the original ones along with two other places. They are typically served warm with icing sugar and cinnamon sprinkled on top. I should also note that the Portuguese egg tarts are popular in both Brazil and Macau as well. The following is a list of the 3 places where we tried them from:

1) Fábrica de Pastéis de Belém
Rua de Belem n0 84 a 92
84 A 92 Lisbon 1300-085, Portugal
+351 21 363 7423

2) Confeitaria Nacional
Address: Praça da Figueira 18B, 1100-241 Lisboa, Portugal
Phone: +351 21 342 4470

3) Manteigaria
Address: Rua do Loreto 2, 1200-108 Lisboa, Portugal
Phone: +351 21 347 1492

Out of the three we thought the best pastel de nata was at Manteigaria although we'd highly recommend all three spots as the quality was excellent throughout the range of establishments.

The Best Pastel de Nata in Lisbon, Portugal | Eating Portuguese Egg Tarts Video Transcript:

Hey guys, greetings from Lisbon and that means only one thing because we need to eat some local food from here and the local food that is really a specialty is the Pastel de nata which is the Portuguese egg tarts.

It was invented here in Lisbon and we are going to go 3 different places. No less than 3 different places to try it. Let's just get started. Let's start eating.

We got ourselves a little sweet treat. The line was long but they are super efficient in there. We went to Pastéis de Belém. It is like right next to the Jerónimos Monastery. The original. It is the original. They've been making these pastries since 1837. They look so good.

We bought four. Poof. And a fly just flew by.

My parents have the other two by the way. We easily could have had two each. We could have. And the price was a Euro and ten cents for each. They are quite small. I wish they were a little bit larger because this is like a two biter.

Oh my are they good. This is not our 1st time to try these. No, we've had these before. About two years ago on our last visit.

They gave us two little packs. This one has cinnamon this one is icing sugar. You just sprinkle a little bit on.

So good. It has got like a pudding texture doesn't it? I love it. The exterior is super flaky. And buttery and after walking around for hours

Our quest for Portuguese egg tarts continues. This is the 2nd spot we're trying. And this one is Confeitaria Nacional. This place is another like older establishment. It has been around for I think since the 19th century. We're going to have to look at the actual year. It has been a while. I will show you (1829) it was on the outside of the place.

What is different this time is that we have them in different sizes. So this would be the regular size. This is like the mini me size.

How is that? That is really good. It is really flaky and crispy and then you have that like pudding like eggy consistency but I think compared to the 1st place this one tastes a little bit sweeter.

Okay third shop. This one is called Manteigaria and we went in with the intention of only getting two tarts. We've walked out with a pack that holds six. Before we forget they were what a 1.10 Euro?

This may be the best one so far. You think so? This is warm. Fresh out of the oven. Ticks off that box. It is pudding like and creamy. It is really sweet.

You can just eat these all day. That is it from Lisbon and we will see you guys with more food and travel videos soon.

This is part of our Travel in Portugal video series showcasing Portuguese food, Portuguese culture and Portuguese cuisine.

Macau | Egg Tart Wars, Pork Chop Buns and a Surprising National Dish!

I travelled to Macau for a food hunt. But this was a food hunt with a purpose. My focus was to discover more about the history of theLas Vegas of the East, Macau, beyond the casinos, by eating. It's amazing how much about history you learn when you start to examine a region's food (and it's a much more fun way to learn history if you ask me).
There were three foods in particular that I was on the lookout for; the egg tarts (Lord Stow's egg tarts to be precise), the pork bun (a little like the Portuguese Bifana) and the national dish of Macau (which is quite surprising)
