Franklin BBQ in Austin- When a restaurant lives up to the hype!

A bit of a throwback on this episode! Back when we spent three weeks in Austin we were told we weren’t legally allowed to leave the city until we had eaten at Franklin BBQ...which is a lie, but still good advice. Afterall, Franklin BBQ has a reputation as the greatest BBQ to found in the US (and therefore the world).

A trip to Franklin BBQ (or Franklins as many call it) starts with putting together a plan of attack. If you want in on the prized BBQ, plan on an early morning. We woke up at 6:30 AM and made it to the front door by 7:15. BBQ for breakfast? Afraid not- the doors don’t open for lunch until 11 but when they’re sold out of food for the day, they’re done. This has lead to a tradition in which Franklin hopefuls create a line that wraps around the block in anticipation of when the BBQ spot opens.

One of the people we met who was first in line had been there since shortly after 5AM.

Since you’ll be waiting in line for quite a bit, do it like a pro:
Chairs- If you get there early enough, Franklin has about 50 stadium chairs that you can borrow to make your wait more comfortable.
Shade- Another benefit of showing up early is that there is enough shade under the porch roof for about the first 75 people depending on how many chairs and coolers are in use that day. Really important for that Texas sun!
Beer- Yes, you can tailgate the BBQ line. A few cold beers in the morning feels right when all you have to look forward to is the best brisket you’ll ever have.


If you want to skip the line (and the anticipation) , you can actually order ahead online and just pickup your order as long as you get a five lbs minimum of meat. Yes, you’ll save some time but you never get that imaginary swagger that come from putting in your time in the tailgate line.

The best thing about this experience is that the food at Franklin lived up to the hype. It truly tasted like we were eating something incredible and even the takeaway order of brisket that we were enjoying freshly reheated of the grill a few days later while camping was incredible. It’s seldom that a restaurant puts out incredible food at a decent price that is truly memorable.

We’re not foodies so I can’t write in depth about it with all the nuances it deserves. I have eaten countless pounds of various BBQ’d meat in my life and I can tell you that Franklin is the new high mark by which others will be judged.

On top of that, the staff at Franklin was top notch. They welcomed people in the morning, invited those in line to use the bathrooms before it opened, and generally did what they could to add to the experience.
Inside, the staff cutting brisket and serving up food to those in line were incredibly nice. They didn’t make you feel rushed even though hundreds of people were in line behind you while getting your order.

So, if you find yourself in Austin, you owe it to yourself to spend half a day for a food experience that you won’t find anywhere else.

The Original Black’s Barbecue is the oldest in Texas, run by the same family since 1932. 3rd Generation Pitmaster Kent Black slow smokes all Barbecue the way his grandfather did in 1932. A simple rub, local Post Oak Wood and patience is the secret. Their brisket is truly legendary.

???? HOMEMADE SAUSAGE: Black’s BBQ’s 80 year old recipe and techniques remain the same as each ring is hand stuffed and hand tied, then smoked to perfection. Take the brisket trimmings and chop them up, then place them in a mixer. Along with the chopped meat, add the mixture (salt, pepper, and a flour based binder) and water. Fine grind it so it comes out looking almost like hamburger meat. Pour into the stuffer. Stuff the casings with ground meat. Cut and tie them. Place in the smoker and allow them to smoke for about an hour.

????PRICE: $3.99 per ring

???? BRISKET: Take raw brisket and trim off the fat. Begin by cutting some of the lean end off (this meat is used for sausage). Trim off the edges to make it round and make it more aerodynamic, which helps give the brisket less chance to burn. Cut off 2/3 of the hard fat. Continue trimming. Add Blacks secret seasoning, which includes special salt and pepper, red pepper, cayenne and secrets, and massage into the fibers of the meat. Place the raw brisket in the smoker and allow it to smoke for 6 hours. After the first cook, let the meat rest by removing the brisket and placing it in a walk-in cooler to dry-age for a few days. After dry-aging, it’s time for the second cook. Place the brisket back in the smoker for another roughly 6 hours, until your brisket is mouth-wateringly perfect. Don’t forget to enjoy it with Black’s infamous Norma Jean’s Original BBQ Sauce!

Franklin BBQ's reputation for serving the absolute best in Texas means that folks start queuing up in the dead of night just for the chance to taste what they're renowned for – their mouthwatering Brisket.

Today, I'm diving into the excitement and taking my place in that line. I'm eagerly looking forward to trying out all the delectable meats they're cooking up, and I really hope I get there early enough to savor their famous Brisket. I'd love for you to join me in this delicious adventure!

In 2009, Aaron Franklin launched the restaurant in a trailer. The restaurant has sold out of brisket every day since its establishment. Franklin Barbecue moved to a brick-and-mortar location in 2011. The building was painted in the same color scheme as the original trailer Franklin started in. The restaurant appeared on Anthony Bourdain: No Reservations in September 2012. In July 2014, President Barack Obama visited the restaurant and bought lunch for those in line behind him. The restaurant is prominently featured in a scene from the 2014 Jon Favreau film Chef, with speaking cameos by owner Aaron Franklin and general manager Benji Jacob.

Welcome to another day with MrBucketlist as this time I'm in Austin Texas trying out the world Famous Terry Black's BBQ!!! Here I give you all a quick tour of the restaurant and a full review of my meal and some tips as well. Spoiler if your anywhere near this area YOU HAVE TO TRY IT ATLEAST ONCE!!!

Terry Black's BBQ in Austin, Texas

Texas is known for delicious barbecue and in Austin, Terry Black's BBQ is one of the very best! As a first time visitor to Texas and a lover of all things BBQ I went and tried it for myself. It was DELICIOUS!! While visiting I also tried Cooper's Old Time Pit Bar-B-Que Austin and it was great as well!

Where is your favorite Texas BBQ?

(unfortunately I didn't have the time to try Franklin's as I hear it is the best, but the lines take forever.)

Insanely Delicious 6 BBQ in Austin Texas

Roy, the Lotz of BBQ, came with me to check out all top BBQ restaurants! The BBQ restaurants have been featured many times by BBQ magazines, articles, news, awards, goes on. I just had to get Roy involved due to his BBQ knowledge, so it gives us a better insight on why each restaurant is incredibly good at BBQ!

Blacks BBQ:

The Black family has been actively serving the barbecue community for over three generations, originally making a name for themselves at the Black's BBQ family-owned restaurant in Lockhart, Texas.

Valentina's Tex Mex BBQ:

It has been a long-standing family tradition to BBQ at getting together and holidays, where every family member plays a role in creating the menu and preparing the made from scratch foods. Fresh hand-rolled flour tortillas, spicy salsa, avocado, cilantro, and lime are a family favorite when it comes to accompanying the BBQ. Miguel brings this spirit and tradition to Valentina's.
