There can be no mention made of Dharwad without its most renowned export, the Dharwad Pedha. Not many know this, but the original version made at Babusingh’s Thakur Dharwad Pedha has a legacy that goes back over 150 years when a halwai (sweetmeat cook), Ramratan Singh migrated to Karnataka from Unnao near Lucknow to escape the plague. A new beginning was made in Dharwad where he would roam the markets with a tray of unique pedha to sell. It was only a matter of time before the taste of this roasted khoya creation caught the fancy of local palates, and like they say, the rest is history. Generations later, the Dharwad Pedha may be shipped across the globe, but is still handmade the old-fashioned way. I met with Karan Singh, sixth generation of the Babusingh’s Thakur family to learn more about the making of this iconic Dharwad mithai. Hope you enjoy this episode. Take care, stay safe and strong. Invented as an unfussy double roti (bread) snack in the Kutch region of Gujarat over half a century ago, the dabeli (meaning pressed, in Gujarati) has since travelled the state and beyond, gaining popularity for its delicious composition - potatoes enlivened with a medley of spices, fruit, condiments, crunchy nuts and fritters, stuffed into a pav - that tingles with the sharpness of sweet, spicy and sour flavours. And like every other crowd-pleasing culinary creation, the dabeli too has spawned multiple avatars, this street cart that I visited had over 10, including a decadent double butter, cheese and dry fruit loaded version too. But it was the original, non-pretentious Kutchi Dabeli, resonating in its myriad flavours and textures, dished out by Yogesh Rathod at his Dabeliwala.com streetfood enterprise that made the most memorable impression on my palate. In 1948, Chikkaveeranna opened a sweetmeat stall in Vijayapura, then a sleep hamlet located fifty kilometres from Bengaluru. The stall would travel from village fair to village fair selling mithai and khaara made of pure country ghee. 72 years on, village ghee may no longer be easily available, but Suresh Chikkananjundappa, his grandson, tends to the traditions of his ancestors in the ghee sweets and savouries that he personally prepares with his family and dedicated workers. Their mysore pak is hugely popular, made to a special technique where the gram flour is lightly roasted with some ghee, before finding its way into the paaka or sugar mixture. However, the tuppa jilebi, with the batter fermented overnight in clay pots, the rich badam halwa made with homemade khoa, and a seriously addictive red rice avalakki mixture, all made with pure ghee, are also must-haves when at this tiny sweet shop. Made of a batter that is fermented overnight in a clay pot, and fried in pure ghee, the result is a white jilebi that crackles with a sticky bite and unburdens its ghee-laden sweetness with just a tinge of sourness.

The hero ingredient in this mithai though is the ghee that makes it Sri Chikkaveerana’s most popular mithai for over seven decades.

When in Arcot, Northeastern Tamil Nadu, those in the know make a beeline for Chettiyar Mittai Kadai, home of the legendary makkan peda that was first made here nearly two centuries ago by Govindasamy Chettiyar, inspired by a mithai that he tasted in the palace of the Nawab of Arcot. I caught up with his fifth generation, Mr. Sundaram, to find out what goes into the making of this flour and khoa dumpling stuffed with a mixture of 11 dry fruits and nuts, before being fried gently in oil over a wood fire until golden brown and then left to soak in sugar syrup. The fertile black soil of North Karnataka yields a rich bounty of vegetables and grain, and this delicious, fresh produce is best experienced in a traditional Jolada Rotti (jowar rotti) vegetarian meal at a khanavali (eating house) in the region. And the most popular jolada rotti oota seems to be the one served at Basaveshwar Khanavali, a string of vegetarian eateries in Dharwad, Hubballi and now, Bengaluru, that date back to 1963. We visited their main branch at Chennamma Circle in Hubballi, where we met the Ganachari family that is committed to serving sumptuous North Karnataka meals, and also discovered an interesting technique that makes their jolada rotti special. It is a well-known fact that Pavithra Idli Hotel on NH 48 in Khyatasandra, just outside Tumakuru is famous for the thatte idli that they have been dishing out for 36 years now. But what I found most interesting is the meticulous attention to detail of the owner, Mr. Udaykumar, he actually refers to himself as the third owner, the first two, he says, are his customers and employees, in his well-planned and spacious kitchen, that is more than twice the size of the dining area, and could perhaps outrival most traditional kitchens on the highways of India. So confident is he about his back areas that he offers willing customers a tour without hesitation. It is no wonder then that the fare served here - the thatte idli, and also a scrumptious mini benne masala dosae that I wasn't expecting - has swarms of fans for whom a stop at Pavithra Idli is a must when on the road here.

Dharwad Pedha - The Legacy of TRU MISHRAS - A Mother's Day Special

Staying in mood with the Mothers Day, I'd like to share this enduring story from my hometown in India, Dharward.

Nestled in a nondescript region of North Karnataka, Dharwad is home to many famed educational institutions, yet unknown to most Indians. A backwater town nestled in leafy green environs with a slow molasses like lifestyle, it served as an administrative capital from the time of my great great great grandmother, the Queen of Kittur, Rani Chenamma. For history buffs, Rani Kittur Chenamma predated Rani of Jhansi by 100 years and fought British colonial rule valiantly.

Many decades later, history was being remade in a different way. Fast forward to the early 20th century and an entrepreneurial mindset was brewing - in the 1920’s, Shri Dwarka Prasad Mishra arrived here, a stranger in his own country.

On a recent visit to Dharwad the sole purpose being to spend a few weeks with my ailing father and mother, the last remaining scion of that royal lineage, I had the pleasure of meeting Rishab Mishra, grandson of Dwarka and the torch bearer of the Tru Mishra brand. I recall eating Mishra pedhas since I was a toddler and standing in line at 5AM to purchase the daily quota of 500 grams! Such was and is the popularity of this delicacy.

Rishab graciously provided a sneak preview of the enduring story of ‘Tru Mishra Pedha’ - it started on a day when Dwarka Prasad, disillusioned by his role as an IPS officer decided to make pedas, a generic term for savory sweetmeats, based on a recipe from his hometown in Northern India. He sold his home made peda’s on street corners at the local bazaar in Dharwad. Selling only 2 to 4 pedas for a minuscule price of 5 annas, he continued to ‘master the art of peda making’. Slowly, the melting flavor of the brown sugar coated pedas gained popularity in the local community. Encouraged, he reinvested his meagre returns to increase production and expanded his footprint to nearby towns with the help of his sons. Thus began the journey of ‘Tru Mishra Pedha’, and it has been delighting Indians ever since.

Over the past 100 years Tru Mishra Pedha has evolved from a street side vendor to an established modern-day bakery with franchises. Rishab enthralled me with the story of his ancestors as he guided me through his modern yet traditional production process. Staying true to the authentic recipe formulated by his granddad, young Rishab continues to source ingredients from local farmers with stringent guidelines. The legacy of ‘Tru Mishra Pedha’ is in his able hands. No visit to Dharwad is complete without a stop at an outlet to stock up on this childhood delicacy. My mouth waters!
