Ask any denizen of Mysuru for the ‘tuppada dosae’ hotel and chances are you will be directed to this quaint shop that has stood the test of time for over eight decades in the bylanes of Ramachandra Agrahara. Begun by Mr Hollappa in the 1940s, this breakfast-only eatery is now run by his son, 86-year old Mahadevappa, and grandson, Mahesh. The must-try (actually one of only three items on the menu) here is the scrumptious Tuppa Dosae, roasted with liberal lashings of ‘vanaspati’ ghee, to accommodate “taste and budget” as pointed out by Mahesh. I dropped in for a quick chat and breakfast during a recent drive through the city.

In a short span of time, Dhruvathare located near Yediyur on NH 75 has become a landmark on the Bengaluru - Hassan - Mangalore route, for its vegetarian fare served in an elegant, spacious and hygienic environment that allows travellers to relax for a bit before continuing on their journey. On our recent road trip to Mangalore, we stopped here for a pleasing breakfast of typical South Indian fare - idli vada, a loaded Mysore masala dosae, neer dosae - and also made an exception for the rare breakfast indulgence of gulab jamun! This Man’s Village Butter Idli & Chutney Put PANDAVAPURA On The Map! SHIVAPPA IDLI Home, Darsaguppe

Pandavapura, located on the state highway between Srirangapatna and Melukote in Mandya district of Karnataka, would perhaps not have registered as a breakfast stop on the traveller’s map, but for an idli shop that goes back over three decades. Actually, it isn’t even a shop, but a window in 60-something-year-old Shivappa’s home from where he dispenses freshly steamed idlis (only) with home churned butter for a few hours each morning. Travellers on the route, and even those who journey from afar just to eat here, line up outside the window, even before it is flung open at 7am.

Shivappa’s enterprise bears no signboard and he employs no one, preferring to do everything himself, from preparing the chutney and the butter to the soaking and grinding of the grain, the fermentation and steaming of the idlis, helped only by his wife. When you are here, you need to abide by his “seemingly authoritarian” rules - register your order, collect a token in exchange for your payment, and wait patiently for Shivappa to steam the idlis fresh and call your token number! This may seem like a bit of a drill, until you take a bite of the spicy chutney soaked idlis, and then it all seems to make sense. Like we discovered when we drove 130 kilometres from Bengaluru for breakfast recently. Hope you enjoy this episode; take care, stay safe and happy eating.

Delicious Neer Dosa And Homemade Curries In Kottigehara Village, Charmadi At 48-Year-Old ANIL HOTEL

A tiny village located atop the Charmadi ghat in Mudigere taluk of Karnataka, Kottigehara was a mere bus stop on this old route to Dakshina Kannada. Travellers would stop here for a few minutes and if hungry, would saunter off to one of the few home eateries on this remote, narrow strip of highway. And perhaps because its quick batter, water-like in its consistency, required almost no prep when an unexpected guest walked in, the neer dosae (neer meaning ‘water’ in kannada) quickly became the staple offering of this village centered around a bus stand. Whist many neer dosa stalls have mushroomed since, the oldest home eatery here is Anil Hotel, begun by Mrs. Mary 48 years ago and now managed by her son, Baby and his wife, Theresia. Famous for its honestly-priced homestyle curries, tasty preparations and warming hospitality that I first experienced a year ago, I learnt that the eatery was recently rebuilt after being demolished in highway expansion causing untold challenges to the family. In this episode, we revisit this tiny enterprise to not just savour their fare for the day but to also support them as they make a new beginning despite having a legacy of nearly half a century.

In this episode, I explore the making of the puliyogare gojju, savour a delicious lunch and meet the family behind this eatery who state rather humbly, that they are merely preserving the culinary customs handed down by the generations that came before them.

Native to Africa and Middle East, and imported first into the country decades ago as part of a food security programme, the tilapia, a rather productive species of fish, came to be known as jilapia in native tongues, eventually acquiring the moniker ‘jilebi’ meenu or fish. And the tiny village of Buyyanadoddi in Mandya district, 90 kilometres outside Bengaluru, is making ripples with food lovers for its “jilebi” fish fry.

The fish is caught fresh from streams in the area, marinated and then tawa fried over a wood fire, slathered continuously with a spicy green chilli paste and liberal sprinklings of crushed pepper, in a clutch of home eateries here. And over the years, its appeal seems to be catching on not just with locals but also Bangaloreans looking for a tasty outing and to experience Buyyanadoddi’s rustic appeal.

The humble chicken sukka, made popular by permit rooms in erstwhile Bombay, is a rather underrated Mangalore export,, when compared appeal-wise to its more seductive siblings like the ghee roast, etc. Which is perhaps also the reason why this unpretentious eatery in Kodialbail, Mangalore, although in existence for 64 years and popular with locals, isn't much known to those visiting. I stepped in one evening for a quick chat with the affable owner, Mr. Udayshankar, and also tasted their much-sought-after chicken sukka made to a 40-year-old recipe with an interestingly named ‘Tyson’ chicken! K. N. Vasudeva Adiga’s Paakashala chain of restaurants may be relatively new, but those in the know speak volumes of his and his family’s culinary legacy that spans decades. Son of Shri K V Nagesh Rao and Smt. K N Saraswati of the iconic Brahmin’s Coffee Bar, a young Vasudeva Adiga chose to forge his own path in 1984 thereafter establishing a string of successful South Indian eateries. His relatively recent venture, Paakashala, although only a few years old, has amassed for itself a solid reputation built on “his promise” of serving tasty vegetarian fare with an eagle-eye focus on hygiene. Exactly what I discovered when I ventured out to their Mangalore highway outpost at Yediyur, a 100-kilometre drive from Bengaluru.
