Bengaluru loves its egg rice, a heavily indigenised variation of the fried rice fortified with an amalgam of punchy spices and fresh ingredients to cater to local palates. Whilst one will find a popular egg rice cart in almost every neighbourhood, there is perhaps none as popular as Snehajeevi Gowdara Adda Egg Rice, that thumps out enormous quantities to queues of patrons who wait patiently for the hot, spicy rice and other egg-y creations at this shop, ironically, located in the predominantly vegetarian neighbourhood of Malleshwaram. I dropped in one afternoon to take a closer look at this tasty creation and chat with the owner, Kumar Gowda, who began making egg rice in his pushcart 18 years ago when he was forced to give up the tender coconut trade. We caught up with Nanjunda and some of his happy patrons over an extended Egg rice with an amazing combination of egg chilly tasting session recently, every plate served piping hot and therefore necessitating a wait of 10 to 15 minutes is worth.

Exploring Bengaluru’s Love For The GOBI MANCHURIAN AT RAVI GOBI | Vegetarian Street Food

Armed with the recipe for a crowd-pleasing manchurian sauce that he learnt from a chinese cook, 16 year-old Ravi set out with an auto 21 years ago to serve gobi manchurian in the South Bengaluru neighbourhood of Banashankari. Two decades on, Ravi Gobi seems to rule the heart of gobi manchurian lovers in the city, as evidenced by the number of customers who throng his vegetarian sidewalk eatery each evening. I caught up with Ravi and some of his happy patrons over an extended manchurian tasting session recently, where I savoured not only his popular cauliflower and cabbage versions, but also an equally appetising, babycorn, mushroom and potato variation too. Each dish on the Ravi Gobi menu is prepared fresh to order, every plate served piping hot and therefore necessitating a wait of 10 to 15 minutes. The gobi or potato/ mushroom/ baby corn, fried fresh, dressed in a chilli-salt spice mix to make the dry version, or tossed in a savoury manchurian sauce that has the fresh zing of coriander, green chillies, ginger, garlic and onions.

It is a well-known fact that Pavithra Idli Hotel on NH 48 in Khyatasandra, just outside Tumakuru is famous for the thatte idli that they have been dishing out for 36 years now. But what I found most interesting is the meticulous attention to detail of the owner, Mr. Udaykumar, he actually refers to himself as the third owner, the first two, he says, are his customers and employees, in his well-planned and spacious kitchen, that is more than twice the size of the dining area, and could perhaps outrival most traditional kitchens on the highways of India. So confident is he about his back areas that he offers willing customers a tour without hesitation. It is no wonder then that the fare served here - the thatte idli, and also a scrumptious mini benne masala dosae that I wasn't expecting - has swarms of fans for whom a stop at Pavithra Idli is a must when on the road here.

The Bannur mutton, Karnataka’s most prized mutton, isn’t actually from Bannur. It is the meat of an indigenous variety of sheep that hails from Bandur, a village located between Malavalli and Bannur near Mysuru. Prized for its juicy tender meat, the sheep was traditionally sold in village shanties in Bannur, ergo the acquired moniker, Bannur. I drove to Bannur to learn more about this sheep and also catch a mutton meal at a family eatery, Bannur Ramaswami Military Hotel, that showcases this very special meat in its homestyle preparations. You can nose the kasoori methi (dried fenugreek) in the aroma of the biryani, there’s the warming heat of the red chillies and spices that you can taste on the palate, a touch of tang from the tomatoes… the kolam rice is tasty all in itself, also having absorbed the character of the meat. The meat is soft and moist, deep pink in its colour and veined with fat. This is a biryani you should eat hot, do not allow it to cool down for the fat tends to congeal.

Hi folks, kicking off our North Karnataka series with this short and spicy episode that we filmed impromptu enroute to Hubli. Stopping at Davanagere, a city popularly known as Benne Nagari (the land of butter) to taste an iconic benne dosae, we were told that a visit here would be considered incomplete without tasting the crowd-pleasing evening snack of mirchi mandakki. Especially the one dished out at Subbanna Mirchi Masala, a tiny shop that has stood the test of time for over seven decades now. I catch up with the locals, and also the friendly owners, brothers, Subbanna and Srikanth, whose grandfather began the Subbanna mirchi mandakki tradition! The dominant flavours in this biryani are that of the fresh ingredients, the naati ginger, garlic, coriander,mint etc., followed by a veil of the aromatic spices. Every grain of rice is imbued with its flavours, and the meat is a combination of some soft, juicy pieces and some on the bone, that calls for a bit of effort to get to every bit of it, some fat included. The spicing is gentle and warm.

The only dish made at Mani Dum Biryani, is unique in its aroma that is redolent of an amalgam of spices combined with meat. Each grain of the rice has absorbed the procession of spices that go into the pot and the fat that is rendered from the meat, this is the sort of biryani that leaves behind a spicy impression on the palate. You can taste the heat of green chillies, and the flavour of the secret spice mix that’s made in Mani’s home. Some of the meat is laced with fat that melts in the warmth of one’s mouth, some pieces though can have a bit of a bite. This is a spicy biryani, and the mosaru bhajji, onion and cucumber raitha helps cool things down.

In happier times, Bhagya Kulkarni’s conversations with her husband, noted television personality, Sanjeev Kulkarni, often revolved around bringing the street food of Hubballi, their hometown to Bengaluru. Their trips back home always included tasting forays to the eateries of Durgadbail and incessant recipe experimentations to perfect the robust masalas of Hubli street fare. When he fell ill, she set up a small business catering Uttara Karnataka meals out of their home in South Bengaluru to support the family. Unfortunately, he passed on, but Bhagya Kulkarni was determined to fulfil their dream, and thus was born Agraane Kitchen, a tiny shop that serves up the Durgadbail girmit, mirchi, avalakki usli, bun bonda, cut mirchi, etc., in addition to typical breakfast offerings and an austere but wholesome jowar rotti meal during lunch. I visit them on a rainy evening to savour the spicy, snacky street fare that I missed on my recent Hubli expedition, and to also support this enterprise that in a manner of speaking, is this brave lady’s culinary tribute to her late husband. It would be an understatement to say that current times have been especially tough for street food vendors, most who manage to earn barely enough for the day without much of a safety net to fall back upon. Against this backdrop, we were moved to hear of the struggles of a young engineering student who almost single handedly, with his mother, embarked upon a street cart venture to rescue his father and family from a crippling financial setback. And in the course of doing so, reconnected his father with a delicious North Karnataka snack tradition. In this street food episode, I stop by at Chitradurga Girmit Mandakki Centre to meet Ullas Basavaraju and his father, and also taste the Chitradurga mirchi in a scrumptiously delicious spicy avatar, some girmit mandakki masala and a rather intriguingly named ‘operation bajji’! Orphaned at a young age and in search of a livelihood, Huchappa migrated from his village to Bengaluru in 1950. He found employment with UP Brahmins who were dispensing paani poori from streetside carts. Having learnt the trade, he struck out on his own with a pushcart in Nagarathpet in 1950, infusing North Indian style chaats with local flavours. His son, Kumar continues the tradition under the shade of a temple peepal tree, which also gives his very popular chaat shop its name, Arali Mara, peepal tree in Kannada. For the last 43 years, the soft, fluffy idlis and crisp vadas at Sri Raghavendra Stores have lured passengers alighting at Malleswaram railway station in Northwest Bengaluru. The tiny space abutting the train station that this shop occupies belies the immense popularity of its tiffin fare. I catch up with the family that operates this much-loved eatery and savour most of the seven or eight items on the menu. When members of the Subbanna family from Lakkondahalli, a village near Hoskote, settled in Bengaluru, they kept their connection to their land alive in the food that was served at home. Wanting to share their rustic cuisine with Bengaluru, they set up Naati Sogadu in Sahakar Nagar, North Bengaluru, a restaurant that quickly became popular for its homestyle non vegetarian fare, cooked almost entirely by the family. In this episode, I return to Naati Sogadu, post lockdown, to meet and support the Subbanna family and also savour dishes that I had not tasted during my first visit. Whilst we receive many messages, pictures, videos and comments on how an eatery is faring post a Gourmet On the Road episode, we rarely ever return immediately after the video is aired. However, we learnt that Chitradurga Mirchi Mandakki, an inspiring street food story, was overwhelmed with customers after our video, so I decided to venture out to see this response for myself and to also encourage the family behind this enterprise. I got to interact with many of our viewers, and along the way also met another inspiring street food vendor, Mrs. Muthulakshmi, who cajoled me into tasting her crunchy gobi manchuri. A café set in a home, Eat Repeat is IT professionals turned entrepreneurs, Kannan and Sangeetha’s ode to their Iyengar heritage. Made to authentic traditions, the vegetarian dishes here are devoid of onion and garlic, but pack loads of flavour, as I discovered in the Puliyogare, Chakkara Pongal and some of the other tiffin items that I tasted. The fare is simple yet wholesome, made and served with the sort of love, conversation and attention that one would expect as a guest in someone’s home.
