TWISTED Cuban LECHON in Cuba!!! Pork Hammock!!

FULL LECHON IN VINALES

1. BATEY LOS LORENZOS (Family house)
ADDRESS: Vinales, Cuba

????CUBA LECHON ASADO: Clean and cut the pig, then place it on a hammock. In each pocket of the pig, add seasoning (garlic, onion, cumin, calamondin and lime). Add salt in each pocket as well as on the skin. Place pig over an open fire and cover it with banana leaves for 3 hours. After 3 hours, flip the pig on the hammock and cook for one more hour.

????CONGRI (Cuban Black Beans and Rice): In a big pot, add the dried black beans, water and bring it to a boil. In a separate bowl, mash garlic, cachucha pepper, cilantro and onion together. Add the spices/seasoning to the boiling water with the beans, then add white rice. Add pork fat and grease to the pot, mix and then allow to cook until water is absorbed.

????????MALANGA (Fried Taro Chips): Peel the taro. Slice into circular shaped chips and fry in pork grease. Top with salt.

????PLANTAIN (Fried Plantain Chips): In a pan, add pork grease and bring to a boil. Slice the plantain and fry.

????????YUCCA (Boiled Yucca/Cassava): Peel the yucca potatoes. Chop into large pieces and boil in water (no seasoning). Wait 20 minutes or so until cooked.

☕CAFÉ CUBANO (Cuban Coffee): Pick the beans from the tree. Lay the beans out on a large tarp and allow them to sit in the sun and dry. Mash the beans in a wooden bowl to remove the shells. Roast and grind the beans. Pour the ground beans into hot water and bring it to a boil. Pour the coffee into the filter.

CUBAN CROCODILE

1. CASABE FARM
ADDRESS: Holguín, Cuba

???????? CASABE: Peel and mash the yuca (cassava). Place in a bag and press until it’s dried and turns into a powder. Pour the yuca powder into a small circular shaped casabe mold on the grill - cook on one side for about 15 seconds. Eat with ingredients inside (like a tortilla)

????????CASEBE (with pork): Slice pork sausage and place on the casabe, topping it with lettuce and tomato. Drizzle lime on top and eat.

The facility has been open for 59 years and breeds Cuban crocodiles. There are currently 4,500 crocodiles in the preservation farm.

???? PUNTA: Fillet the crocodile tail. Slice the tail meat into thick chunks. Drizzle olive oil on the grill. Season with salt and pepper and place on the grill. Grill for a bit. Add garlic and olive oil on top. Add onions, green pepper and red pepper and continue grilling. Drizzle with more olive oil.

???? CROCODILE TAIL FILLET: Take part of the tail and slice very thin (like a butterfly cut). Pour olive oil on the grill and grill fillets. Drizzle with olive oil and continue flipping sides to fully cook. Add olive oil and garlic mixture and black pepper. Cook until ready and then add onions on top.

???? ENCHILADO: Filet and chop crocodile neck and inner thigh. In a pan, add tomato sauce, olive oil, red chili pepper and stir. Continue stirring while adding more olive oil, salt and then the crocodile meat. Add black pepper and allow to simmer. When almost ready, add onions and green pepper. Allow it to cook for 5 more minutes with the lid on. Top with onion and green pepper and enjoy

ADDRESS: Amargura #358, E/ Villegas y Aguacate, Havana

????????BANANA OMELETTE: Mix two eggs and add chopped bananas. Prepare on the stove. Add chopped avocado and tomato on the side with pepper and olive oil drizzled on top.

????????PORK: Lay out two pieces of lettuce. On top, add yucca, green onion, pulled pork, gravy and chopped onions.

????????PICO LA ESQUINA: Mix yeast, water, flour, salt and pure soy oil. Place flour on the counter. Get a ball of dough, knead it and roll it out (like pizza). Place cheese, ropa vieja and plantain maduro frita in the middle. Fold in half and cut around the outer edge. Place in the oven and allow it to get golden brown. Spread a bit of olive oil on top.

????????HABANERO ROLL: Roll out the pizza dough, add black beans, picadillo a la habanero and cheese. Roll it all up and place it in the oven to cook. Serve with salad.

ADDRESS: Calle 26, Havana

????????CUBANO: Start with baguette bread. Add gouda cheese, roasted pork, smoked pork, lettuce, pickles and spicy mustard. Put in the griddle to cook (until golden) then allow it to cool. PORK MARINADE: Marinate pork for 24 hours in orange and lemon juice, mint, rosemary, garlic, pepper and ginger

AROUND ME BD COLLABORATION IN KUSHTIA

1. FERRY
ROUTE: Dhaka to Kushtia

????CHICKEN CURRY: Chicken in curry sauce, white rice and a boiled egg

????PRICE: 70 BDT / $0.82 USD

2. SHIMULIYA VILLAGE
ADDRESS: Kushtia, Bangladesh

????????KHICHURI: In a big pot, add oil, onion, garlic, green chili and stir for five minutes. Add buffalo fat and continue stirring. Mix in turmeric, more buffalo fat, oil and stir. Add lentils and a mixture of seasonings: salt, turmeric, chili powder, coriander powder, cardamom, ginger and cinnamon.
Add water and allow it to cook, then pour into a fresh pot. Add rice and allow to cook. After cooking, pour in ghee and then serve.

????????BUFFALO BIRIYANI: In a big bowl, mix cumin paste, white pepper paste, peanut paste, black pepper paste, almond paste and ginger paste. Divide this into 7 separate bowls and add cardamom seeds, black pepper corn, cinnamon, MSG, chili powder and salt. In a separate big bowl, mix together alu bukhara, cinnamon, pistachios, almonds and special cumin. Fry some onions for garnish and flavor. In a big pot, add oil then add buffalo meat. Add fried onions, the seasonings, sour curd, tomato sauce, green chili and garlic. Add the master spice (cinnamon, cardamom, cumin, mace, nutmeg and black pepper), garam masala, ghee, salt and fried onions. Cook rice with a mixture of cardamom seeds, cinnamon and saffron, powdered milk, ghee, salt, green chili, oil and fat from the buffalo meat and stir. Allow to cook. Add meat to the rice.

???? FRIED ANTS WITH PEANUTS: Smash the peanuts, place them in a bowl with smashed garlic and chilli. Saute mixture in a pot and add turmeric powder, peanut, garlic, chilli, ants and salt.

???????? BEEF JERKY: Marinate the jerky with garlic, chilli and salt and place on grill. Slightly mash the well cooked meat to soften it. Place everything in a mortar and crush it with more garlic and chilli.

????GRILLED BIRD: Clean the bird and place on skewers. Marinate it with salt and grill it.

????????MUSTARD & BEAN SOUP: Boil the chicken bones with beans until the beans are tender. Then just before serving, add salt and freshly picked mustard leaves.

» KILIFI SWAHILI VILLAGE

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali
ADDRESS: Koleni, Kilifi, Kenyan Coast
OPEN: N/A

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

????JAJA BALI (Balinese Cakes): Place black sticky rice, cassava, rice flour filled with palm sugar, wheat flour, sago and sweet potato on a banana leaf and top with shredded coconut, palm sugar syrup.

Then rub it with the baste with turmeric. Plug the neck using coconut husk to stop the flavor from coming out and to keep the color from changing. Then rub the pig with coconut water and a touch of Coca Cola. Put it on the fire and rotate while roasting for 2.5 hours | Cut the cheek skin, Blood sausage and egg sausage (intestine filled with egg).

1. BIG BOB GIBSON BBQ: Beef Brisket + Alabama White Sauce + Spitfire Chicken + Mac & Cheese

???? BEEF BRISKET: Marinate brisket with salt and pepper and put brisket in smoker to cook overnight for 12-14 hours at 250 degrees. Slice into thin pieces and enjoy.

????ALABAMA WHITE SAUCE: Mix together apple cider vinegar, cayenne pepper, salt, mayonnaise and lemon in a large bowl.


????SPITFIRE CHICKEN: Season chicken pieces with salt and place them on the grill. Dip chicken pieces in chicken oil. Sprinkle ground pepper on the chicken and allow it to cook. Roast chicken 1 ½ hours on each side and then dip chicken in Alabama white BBQ sauce.

???? MAC & CHEESE: Cook noodles until al dente. Drain noodles and return to pot. Add butter and stir. Add Muenster, cheddar and velveeta cheeses until melted. Stir in half and half and salt. Top with soft layer of shredded cheese, salt and pepper and place in oven for 25-30 min.

???????? BAKED BEANS: Pour beans, pepper, bacon, ketchup, onions and other ingredients listed above in full size and pan. Then place in oven for 1 hour at 500 degrees

????SAUSAGE GRAVY & BISCUITS: Refrigerate ingredients for 15-20 minutes before preparing. Whisk together unsalted butter, vegetable shortening, self-raising flour and salt in a bowl. Add buttermilk. Flatten the dough using a rolling pin. Cut circles out of the dough using a cookie cutter and place in baking pan an inch apart. Put butter on top and refrigerate. Place the biscuits in the oven to cook.

????PORK BRAINS SCRAMBLED EGGS: Soak pork brain into a brine. Rinse using plain water. Season brains with salt and pepper and saute in a pan for a few minutes. Add eggs and saute until fully cooked.

A trip to Cuba can be done on a budget but also in an expensive way. We focus mostly on basic things you need to get or do while in La Havana Cuba.

Internet in Cuba - you have to go to ETESCA Office on Obispo street where you need to purchase Nauta card for 1 CUC. Bring your passport. I think you can get only 3 cards per passport.

Bigote de Gato - our favorite bar in Old Havana for a very reasonable price. Only 1,95 CUC per cocktail and absolutely amazing Pinacolada.

Hotels - definitely stay in Casa Particulars. You can book through Airbnb.

BEST Egyptian SEAFOOD MARKET! SEAFOOD & TRADITIONAL BREAKFAST in Alexandria Egypt

I went to Alexandria Egypt and the first place we went to was a local Egyptian market in Alexandria where I met the friendliest people who sold me seafood at local prices and then took it to get cooked and head an amazing seafood feast! Next, it was to try an Alexandria staple, liver sandwiches! These little sandwiches were INCREDIBLY flavorful and you need to eat at least 10 to feel satisfied. Next day went for a traditional Egyptian breakfast and ended the trip with some traditional local desserts

????????RED BOUDIN SAUSAGE: Load the massive cooking pot with cut up pork and water. Cook overnight. Debone and grind the pork. Season the pork to taste and cook. Add rice and pigs blood to the mixture. Stuff mixture into the sausage casing and then link the sausages. Poach to cook the blood.

???????? CRACKLINS: Fry pork skin and fat into small pieces.

???????? FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.
