We start the day with runbing, a fresh Taiwanese spring roll which is very similar to popiah which can be found in Malaysia, Singapore and Indonesia. A wheat flour wrapper encloses a number of ingredients including crisp, blanched cabbage, tofu, slices of pork belly, broad beans and a peanut and sugar mixture. It’s fresh, filling and delicious.

We then head to a popular local spot to sample their fried milkfish and oily shrimp rice. Milkfish is really popular in Taiwan- it’s a mild tasting fish with a fatty belly almost akin to the texture of pork belly. It’s mouthwatering. The accompanying oily shrimp rice is tasty too- oiled grains dotted with small, meaty shrimp.

Our next stop is pretty special. We eat a beef soup from a stall which obtains a delivery of beef straight from the slaughterhouse twice each evening. The beef is thinly sliced and dunked in a beef broth before being served with shredded ginger. It’s incredible. The meat is super tender and flavoursome, the broth light and subtle. This is a must eat in Tainan!

Onwards to our final stop for a Tainan specialty- shrimp rolls. Juicy shrimp, spring onions and cabbage are encased in caul fat before being deep fried and served with pickled ginger and a wasabi and soy dipping sauce. These are SO. GOOD. We visit a really local spot- every table has a plate of these shrimp rolls and we can see why! The shrimp mixture is perfectly cooked and dotted with spring onions whilst the outer is crispy. We devour the whole plate. Another must eat in Tainan!

Beef soup from 鄭牛肉湯, No. 2, Lane 47, Section 4, Jinhua Road, West Central District, Tainan City, 700. Open Tuesday to Saturday 5:00pm to 2:00am, Sunday 5:00pm to midnight. Closed Monday.

Shrimp rolls from 黃家蝦捲, No. 268, Xihe Road, West Central District, Tainan City, 700. Open daily 2:30pm to 8:00pm.

Eat Like A Chef: Tainan

Chef Hiroyasu Kawate of two-starred restaurant Florilège in Tokyo was invited by Chef Ryogo Tahara of two-starred restaurant logy, in Taipei who was his right handed-man back in 5 years ago, for a small venture in South Taiwan and visit the iconic city of Tainan - a city that burst with history, culture, creativity and great food.

Taiwanese Street Food: Eel Noodles ~ 鱔魚意麵

There two ways to prepare eel in Taiwan, both ways can be seen in the video of this sideway restaurant in the city of Tainan - the old capital of Taiwan. The eel with soup and noodles version costs about 4 USD, the just eel with noodles version costs usually around 5 USD as it contains more finger-licking tasty eel. The eel there is so fresh, you could probably eat it as Sushi - Don't do it though! Eel blood can cause cardiac arrest!

We start the day with an oyster omelette, one of the most popular street foods in Taiwan. Briny oysters, an egg, beansprouts, lettuce, minced pork and potato starch are cooked on a hotplate in front of us before being served up with a couple of sweet sauces. The resulting plate of food is fresh and moreish.

We then eat a bowl of milkfish congee- a really popular breakfast in Tainan. The congee is of the Teochew style where the broth and the rice grains are separate. The butterflied milkfish is mild but has a beautiful fatty belly and it complements the broth of the congee. Simple but filling!

Our next stop is pretty memorable. A fourth generation biscuit/cookie maker who uses a really unique rotating iron pan oven to make miso biscuits shaped like a folded up tape measure. They also make a basic egg flavoured biscuit. We buy a couple of packets and find them to be sweet, a little savoury, crisp and tasty.

Next up we stop for a bowl of grass jelly and aiyu jelly (fig seed) topped with shaved ice and sugar syrup. It’s very refreshing, a little bit bitter and sweet. Perfect for beating the heat!

Onwards to our final stop a savoury rice pudding called wa gui. A ceramic bowl is filled with pork, salted egg yolk and mushroom before being topped with a ground rice batter. It’s then steamed and then once cooked is topped with a gluggy, sweet sauce. We add raw garlic and it makes for a delicious snack. A must eat when in Tainan.

Milkfish congee at 阿星鹹粥, No. 289, Section 3, Minzu Road, West Central District, Tainan City, 700. Open 5:00am to 1:00pm. Closed Monday.

Biscuits at Long Tih Tong, No. 54, Chongan Street, North District, Tainan City, 704. Open Monday to Friday 8:00am to 8:00pm, Saturday to Sunday 8:00am to 6:00pm.

Shaved ice and jelly at 22.997316,120.201112 (Google co-ordinates).

Wa gui at No. 140, Section 2, Fuqian Road, West Central District, Tainan City, 700. Open 9:30am to 4:00pm. Closed Wednesday.

Taiwanese noodles are to die for! In this Taiwan food video guide, we try THREE delicious street noodle soups at a local night market in Taipei.

This night market is called Tonghua and it's one of my favorite ones to go to in Taiwan! More local and have all the traditional Taiwanese foods we love.
