■ SRI LANKA, GALLE: Before the steamed vegetables and fried fish arrives at your dinner table at Galle's five star hotel restaurant, Le Grand, they were sourced locally two different fresh markets nearby. These places can be highly entertaining and chaotic when you go alone. So I decided to take Le Grand Galle's master chef up on his offer to join him on his morning round to them both.

After procuring the ingredients it was back to the kitchen to see how it all comes together before sitting down on the edge of the Indian ocean for a most unique five star dining experience.

■ SRI LANKA, HIKKADUWA: New year's eve for Sri Lankans doesn't fall on December 31st, but April 14th. The occasion is marked by a family feast with some rather unique sweets that are prepared in the days before. Having gotten a thorough insight into what Sri Lankan villagers eat in the last 3 weeks of the year, I was eager to see what they cook up to mark the beginning of a new one.

More importantly I was eager to see if I could become a Sri Lankan Master chef. Needless to say things didn’t go according to plan....... ????????????‍♂️

????????PORK CURRY: De-bone the pork and then cut the pieces into small slices. Place curry powder in a big pan to burn. Add cooking oil and mix with curry powder. Place the pork slices into the pan. Add turmeric powder, roasted curry powder, chili powder, black pepper, salt, cardamom, garlic paste, Garcinia cambogia, a liquid mixed with oil, cinnamon, ginger, garlic, fried lemongrass and curry leaves.Stir and cook for around 20 minutes.
????????JACKFRUIT CURRY: Chop the jackfruit flesh into small pieces. Place pieces into a pan, then add coconut milk, chopped onions, green chilies, curry leaves and Pandan leaves. Add salt, turmeric powder and curry powder. Add some pieces of cinnamon and mustard paste.Mix and cook for around 20 minutes. Add more coconut milk. Place chopped dried red chilies and chopped garlic into hot oil, mix, add turmeric powder and dump this mixture into the pan of jackfruits.

????????CRAB CURRY: Pour coconut milk onto the cut crabs, then add liquid salt, tamarind juice, Jaffna curry powder, chopped onions, curry leaves, and ginger-garlic paste. Put the pot on the fire and cook for 20 minutes. Mix the curry. Add more coconut milk. Cook for 15 minutes.

????????STIR-FRIED CUTTLEFISH: Place fenugreek and fennel seeds in hot coconut oil. Add garlic and mix. Add curry leaves, chopped onions, liquid salt, and green chilies and put into the pot. Keep mixing. Place the cuttlefishes in and add salt liquid, ginger- garlic paste. Mix and close the lid. Add Jaffna curry powder and tamarind juice. Mix and allow it to cook for 15 minutes.

????????RAAL SODI (SHRIMP CURRY SOUP): Pour coconut milk into a pot with chopped onions, green chilies, salt liquid, and turmeric powder. Squeeze chopped tomatoes and put them into the pot with lime juice. Place the pot on the fire and then put shrimp into the pot. Cook for 15 minutes.

????????STRING HOPPER: Add hot water to liquid salt and pour into rice flour. Mix well. Place the dough into a string hopper maker. Stack the hoppers into a steam pot for 5 minutes.

The Amazing Story of Chef Manel, and an Invite Into Her Kitchen: Curry Crawl vol. 1

OTR introduces the first in a new series where we explore the origins and global spread of curry, by learning the preparation of local specialties from across the world.

This week takes us to Manel Lanka, where Chef Manel walks us through how to make an authentic version of Sri Lankan Dhal (vegan lentil curry).

The recipe:

INGREDIENTS:
Dal Masoor (Red Lentils)
Water
Red Onion
Tomato
Mild Green Chili Peppers
Turmeric Powder
Chili Powder
Chili Flakes
Indian Curry Powder
Salt
Coconut Milk
Unsweetened Lime Juice
Raw Garlic
Coconut Oil

PROCESS (Approximate Proportions- adjust to taste!)
1. Wash 1 cup dal under running water
2. cover dal with 2.5 cups water, and place on stovetop over high heat, bringing water to a boil, then reducing heat to medium-low to maintain a rolling boil, stirring occasionally
3. chop 1/2 red onion, one small red tomato (or 1/2 large tomato), and 4 whole mild green chili peppers, and add to the boiling water
4. spoon in 1 tsp salt, and 1 tbsp turmeric powder, curry powder, and chili powder
5. Allow mixture to boil for approximately 15 minutes, or until desired consistency is achieved
6. then add in approximately 300 ml coconut milk (see video for desired consistency) and stir over lowest heat setting for 3 minutes
7. add 1 tbsp unsweetened lime juice, then spoon in spice mixture (detailed below), stir to combine, then serve with rice.

SPICE MIXTURE:

1. slice remaining 1/2 of red onion and place in sauce pan or pot with 2 cloves raw garlic, chopped pandan leaves, and ladleful of coconut oil
2. fry mixture over medium heat, stirring frequently
3. after onions soften, spoon in 4 tbsp of mild chili flakes, and continue to stir together until ingredients combine into paste. Lower heat if necessary to avoid burning.

????????PEACOCK (MASSA DISH): Use three sticks to make a tripod and fold some sticks to make a rack. Put the tripod on the fire and place the peacock meat on the rack to smoke.

????????PEACOCK (BOILED DISH): Place the meat in a water pot. Season with salt and chili powder. Add more water and pepper. Put the pot on the fire and squeeze some lime on top. Add more flour liquid.

????????PEACOCK (PRESERVED): Cut the smoking meat,, then put honey on the meat & keep the meat for up to a month

In this video, we are invited to what I believe is the best Japanese restaurant in Sri Lanka, Nihonbashi to have a tasting dinner with Chef Dharshan Munidasa.

Dharshan is a Sri Lankan chef, restaurateur and television host. He founded Nihonbashi and the Ministry of Crab, two of Sri Lanka’s most successful restaurants, both of which are the only Sri Lankan restaurants on Asia's 50 Best Restaurants List. His efforts in promoting Japanese Cuisine in Sri Lanka earned him recognition from the Japanese Government for which he was awarded The Minister’s Award for Overseas Promotion of Japanese Food for the year 2014.

This video was originally filmed a couple of months ago, but was never released as the restaurant temporarily closed for the lockdowns.

I kept a copy of the footage to release during our next Colombo trip which we thought was going to be much sooner, but ended up being postponed.

Big thank you to Chef Dharshan Munidasa for a wonderful dinner and truly amazing authentic Japanese cuisine. Make a reservation to Nihonbashi next time you're in Colombo if you want to experience amazing food and sake like we did.
