????FISHBALLS IN CURRY SAUCE: Use a press machine separate the flesh from the bone. Place the fish meat in a blending machine. After it’s been blended, put fish meat, salt and ice in a pounding machine for 45 mins. Shape the fish paste into shapes of balls. Deep fry the balls and serve with curry sauce.

????CUTTLEFISH SASHIMI: Cut and clean the cuttlefish. Prepare a bowl full of ice and add watercress and cucumber on it. Slice the cuttlefish and place slices on top of veggies. Add lettuce, lime and flower on the bowl and serve with soy sauce and wasabi.

????DEEP FRIED CUTTLEFISH HEAD: Chop the cuttlefish head into small pieces and place in a bowl with douban sauce, secret salt and pepper powder and egg flour liquid. Soak the fish in cornstarch and deep fry. Serve on a plate with chopped cabbage. Add fried garlic, fresh chilli and coriander on top.

????DEEP FRIED MANTIS SHRIMP: Clean and season the mantis shrimps with garlic and secret ingredient. Deep fry in oil for two minutes until golden brown. Add salted chilli powder, garnish with herbs and serve.

????FRIED SLIPPER LOBSTER IN EGG YOLK SAUCE: Cut, clean and season the lobster. Prepare a wok and deep fry the lobster in cooking oil. In a separate pot, cook the special egg yolk sauce and then place the lobster in the sauce for 1 minute. Add flour and salted egg yolk powder and serve when ready.

Hong Kong SEAFOOD HEAVEN ???????? $125 Cantonese Food at Hong Kong’s ONLY Floating Fish Market!

Hong Kong is OBSESSED with seafood and I am finally back here to experience it all! This city knows how to eat and thats why we’re here! Today we are heading to the town of Sai Kung, famous for its floating fish market. You can find any seafood you can imagine here in Sai Kung. Choose from the boats or head to one of the many seafood restaurants and choose from their tank!

After heading back to Hong Kong central we stopped for a bowl of beef noodles and got ready for our scenic harbour cruise aboard the Aqualuna Junk Boat!

Place lobsters in a bowl and sprinkle the chili sauce (including garlic, chili, cilantro, fish sauce, MSG and sugar) on top. Put them back on the grill for another 2 minutes.

????????PANLA FISH: Wash and scale fish. Stick a piece of wood through the tail and the head of the fish, making a ring. Place them on the fire to smoke for 12 hours. Mix baking flour, yeast, a little water, salt into a ball and fry

????????OWE FUFLU: In a pot, add palm oil. Add red onions, a spoonful of the blend of chili pepper, tomato and onions and stir. Add crayfish seasoning (red cube, crushed), salt, dried fish and stir.

????????GALIDODO: Add cooking oil, onion and blend of chili pepper, red onion and tomato. Add more onion, water, dried fish, cassava flakes and mix. Add more cooking oil and mix until finished.

????Takamaru Fresh Fish Store serves some of Tokyo’s finest fish delicacies. Among their delicacies is monkfish, a very rare fish that is hard to find in Tokyo, even in big fish markets. Monkfish liver (ankimo) is typically considered the tastiest part of the fish and was even listed on CNN’s 2011 list of the World’s 50 Most Delicious Foods. We were fortunate enough to get a taste of this dish, which is not a typical menu item at Takamaru Fresh Fish Store. Monkfish hotpot is a bit more common than monkfish liver, frequently eaten during the winter months in Japan.

????DOJO NABE: First cook the fish for 20 minutes in a pressure cooker, allowing it to soften (with the bones in). Then add the fish to a platter, mixing it with soy sauce and radish broth and allowing it to cook on a mini-stove. Wait for the broth to boil, then add green onion on top. That’s it, ready to eat! Continue to add broth as you like while eating.

????Fugu is one of the most celebrated and notorious dishes in Japan. Due to its tetrodotoxin, it can be lethally poisonous, which is why there are strict rules around the preparation and serving of this dish. Fugu preparation is controlled by Japanese law, with chefs undergoing specific training for a minimum of three years. Our chef, Mr. Nakase, received his certification and has been lawfully serving some of Tokyo’s most delicious fugu for the past 14 years.

1. TALAD KAO MARKET: Mrs. Pan’s Bug Cart

????The night before Mrs. Pan cooks the bugs she will later sell in the market, her son goes to Khlong Toei, Bangkok’s largest wet market, to purchase a variety of insects. She begins cooking each morning in order to make it to the market and set up her cart by 2pm. To cook the bugs, Mrs. Pan first adds oil and chopped pandan leaves to a frying pan. The pandan leaves add a nice fragrance to the bugs while cutting the bitter taste. She adds her first round of bugs and allows them to fry for roughly 30 minutes. She allows the crickets to cook for only 15 minutes. To enhance the flavors, she does not clean the pan between bugs. Then she’s off to the market, to fill hungry bellies with bugs!

????Toy Kuay Teow has been serving up boat noodles for 50 years and is on its third generation. To make one of Bangkok’s most beloved noodle soups, combine chilli dressing, pork, meatballs, vermicelli noodles, pork blood, pork soup, scallions and herbs, bok choy, fried pork skin and fried flat noodles (optional). Beef boat noodles include beef blood, rather than pork blood.

3. J'KHAI SEAFOOD: Horseshoe Crab Eggs
ADDRESS: 1300/3-4 Prachachuen Road, Bangsue Bangkok
OPEN: 3PM - 12AM

J’Khai Seafood started when the owner began selling food from a small cart 34 years ago. It is now a multi-story restaurant in Bangkok, and their signature “Thai curry steamed horseshoe crab eggs” recently won Wongnai Users’ Choice for best dish.

????To make this tasty meal, they first steam the horseshoe crab, cutting open the lower part of the crab to remove all of the eggs. Separately, create the seasoning, mixing Thai red curry paste, sugar, MSG, oyster sauce and carnation milk. Add the seasoning to an oiled, heated pan before adding chicken egg and finger root. Allow to stir-fry for a bit, then scoop everything back into the horseshoe crab shell. Take the horseshoe crab and grill it over hot charcoal until bubbling. Top it off with coconut milk, sliced lime leaves and carrots before diving in.
