How to make Vietnamese Pickled Carrots and Daikon

Pickled Carrot & Daikon

Ingredients

1 large daikon
5 large carrots
2 tables spoons kosher salt
2 tablespoons granulated sugar

[Pickling brine]

1 cup white distilled vinegar
1 cup sugar
3 cups water
2 tablespoons kosher salt

Directions:

1. Begin by washing and cutting the carrots and daikon into 2-inch long julienne strips.

2. Transfer the prepared vegetables to a mixing bowl and rinse them thoroughly under cold running water.

3. Once rinsed, drain the vegetables.

4. Sprinkle granulated sugar and kosher salt over the carrots and daikon, giving them a gentle toss to ensure even distribution. Allow the mixture to rest for 15 to 20 minutes, allowing the flavors to develop.

5. After the resting period, repeat step 3 by rinsing the carrots and daikon once again under cold water.

6. Prepare the brine by combining all the necessary ingredients in a separate bowl, stirring until everything is completely dissolved.

7. Transfer the rinsed carrots and daikon to a suitable container, followed by pouring the prepared brine over them.

8. Seal the container and store it in the refrigerator overnight, allowing the pickled flavors to infuse into the vegetables.

Tabasco Factory Tour: I Tasted the Scorpion Sauce!

Took the family to Avery Island, Louisiana to see where the world renown Tabasco Brand Pepper Sauce is made. My wife and I went 17 years ago but this was the first time my kids had been. The tour used to have guides, now it is self guided with sign markers and a few video displays. Therefore, on this video tour I will be your tour guide!

Avery Island is a marsh island, an area of land surrounded by bayous, basically a high point in the low lying marsh land of Southern Louisiana. Tabasco sauce has been made there over a hundred and fifty years ever since 1868 with salt from the island’s own salt mines. Avery Island also has a wildlife preserve called Jungle Gardens. Unfortunately we were not able to see that this trip. So we have to return soon.

Roasted Habanero Oil Recipe | Le Blanc Resort | Food & Travel

The chefs at Le Blanc Resort & Spa in Cabo San Lucas, Mexico are amazing and this Habanero Oil recipe is one of the stars we got to enjoy when we were there last. It's very spicy but has tons of flavor and is a perfect accompaniment to a charcuterie tray, crackers, or drizzled over pizza.

It's super easy to make and the taste is out of this world. Be forewarned though - this sauce will knock your socks off, so wear gloves when handling the peppers and taste a very small amount before dishing it all over your food.

Jalapenos can be substituted if you want something with a little less heat.

Give the recipe a try and comment below to let me know how your sauce turns out!

6-8 habaneros, sliced (don't discard the seeds!)
3/4 cup vegetable oil

Slice habaneros & skewer. Heat BBQ to max heat & cook until peppers reach a medium to dark char.
Remove from skewers & add to blender. Add oil & blend until smooth. Serve.
Stores well in the fridge and with age, flavour will mature.

Serve with anything that you'd normally serve with hot sauce!

Taqueria El Rapido: - We started off with Taqueria El Rapido a laid back food truck selling a variety of different tacos. Mexi Papa ordered a combination taco for all of us, including asada, tripa, and cabeza, three wonderful different textures. It was a delicious taco and a great way to begin this food tour.

El Guero Canelo Restaurant: - Sonoran hot dogs are one of the most popular foods in Tucson, and there are many to choose from. We decided on El Guero Canelo as it’s one of the most legendary, historical, and because this restaurant has even received a James Beard award - an award winning hot dog. It didn’t disappoint, a delicious creation.

Rollies Mexican Patio: - Next up for a modern twist to local Tucson Mexican food - Rollies. We had rolled tacos, flat enchiladas, carne asada fries, birria tacos, and birria ramen. You could taste the quality and amazing flavors. Great laid back spot with delicious Mexican Tucson style food.

CHICHICASTENANGO - Today we’re exploring Chichicastenango a city in the highland mountains of Guatemala that’s home to the Chichicastenango Market, which is the biggest indigenous Mayan market in Central America. It’s a colorful overdose of all things you can buy, and a gathering of Mayan culture and customs. I was excited to visit to learn and to try as much street food as possible.

We met up with Roberto, our local Guide to Chichicastenango Market. He first took us around the market. We then saw the main fruits and vegetables section, everything pretty much fresh right out of backyards. We then tried Guatemalan chicharrones - or fried crispy pork. It was as tasty as always, and loaded with onions to give it a sweet and delicious taste.

After chicharrones we continued with our food tour in Chichicastenango Market on to eat at one of the best stalls in the entire market that’s known for their hen chicken soup and their special kettle cooked fried chicken. Both dishes were delicious, especially with some fresh tortillas. We also stopped by another similar stall to eat some more chuleta’s, a variety of fried meat cutlets.

In addition to all the delicious food, there’s plenty of areas of the market to explore and many Mayan cultural churches and cemeteries to wee while you visit.

It was another excellent day in Guatemala on this ultimate Guatemalan food tour!
