» THE TRADITIONAL FOOD IN MADAGASCAR

1. TSENA’NY TANTSAHA TALATAMATY: Rice Porridge + Chinese Noodle Soup
ADDRESS: Talatamaty City
OPEN: 3AM - 7AM (or whenever the police shut it down)

Four miles outside of Madagascar’s capital city, Antananarivo, lies Talatamaty City. Talatamaty City is home to one of the country’s largest local morning markets, Tsena’ny Tantsaha. Sellers open up shop at 3am, selling everything from produce to fabrics. And lucky for us, the market has no shortage of food to try as well.

????RICE PORRIDGE: Zebu (Malagasy cattle) and sausage are mixed with leaves, ginger, special Malagasy rice, porridge and spices.

????CHINESE NOODLE DISH: Pasta, macaroni, potato, mayonnaise and zebu skin.

2. TALATA VOLON’ONDRY: Sausage + Koba
ADDRESS: Talata Volon’ondry
OPEN: Varies

Talata Volon’ondry is a village located just outside of Antananarivo. The village is known for producing sausage and Madagascar’s national snack, koba.

????SAUSAGE: There are typically two types of sausage being sold - zebu sausage and a halal style potato sausage. This snack is frequently accompanied by local rum.

????????KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days.

Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. The fuel from the ingredients gives people energy and helps them stay full even when walking long distances without and source of food along the way.

Thai Farm Food!! 3 HUGE VILLAGE MEALS - Unseen Thai + Lao Food on the Mekong River!!

Amazing Thai + Lao Village Food in Nakhon Phanom, Thailand!
????️ WATCH NEXT: Street Food Popeye Sausage -

Nakhon Phanom, Thailand - Located in the Isan region of Northeastern Thailand, along the mighty Mekong River, Nakhon Phanom is one of the most laid back provinces in Thailand. Today we’re in Ban Na Thon Village (บ้านนาถ่อน) and the community has gather to cook local Thai Isan / Lao food, and we’re going to learn about their amazing culture.

Really quickly - Nakhon Phanom is located along the Mekong River and is part of the Isan region of Thailand. But that being said, it’s across the river from Laos, and the people of Isan share the same culture and food from Lao.

Ban Na Thon Village (บ้านนาถ่อน) is a fantastic village, so laid back, friendly, and with a variety of homestays. We had the pleasure of spending a number of nights in this village where we did a lot of cooking and eating local food, and we also did a number of activities to learn about the local culture.

For breakfast we had a number of pounded salads with long-beans, amazing grilled chicken, and sticky rice. For lunch, which was one of the biggest meals of the day, they made a huge amount of dishes - the highlights being the “bon kob,” a pounded frog chili dip and a buffalo skin chili dip. There was also an Isan food of raw pig’s blood coagulated into a jelly. I had eaten a couple times in Laos before. It was an amazing meal and great to eat with the community.

For dinner and final meal they Aunty’s made a beautiful bowl of laap, and Isan style mixed meat salad and herbs, this time made with fish. Again, it was fantastic to learn about the culture of the amazing people and their Isan / Lao culture.

QAMARVAN, AZERBAIJAN - Welcome to Qamarvan, a small village in the mountains of Azerbaijan and home to Tavakkul from @WILDERNESSCOOKING. They make amazing nature oriented food videos cooking outdoors. And today Tavakkul is cooking a whole lamb two ways - part is on a hot stone over fire and with the ribs he’s cooking them in a tandir. Qamarvan is a beautiful location, set in a valley surrounded by some of the highest mountains in Azerbaijan. It’s green, lush, and home to some of the best lambs that graze naturally and organic food. Wilderness Cooking is an outdoor cooking show that specializes in natural foods, organic cooking and oftentimes whole animals. What I love about this is how therapeutic their cooking is. Nothing is rushed and the sounds are kept natural.

Today, Tavakkul is cooking a whole lamb as fresh as possible. He has a number of amazing cooking techniques around the yard and today he’s cooking half the lamb on a fire hot stone and the other goes into the mud tandir oven. He seasoned the meat with salt and pepper. For the hot stone the trick was the amount of lamb fat he melted down to almost confit the lamb in its own dripping fat. For the tandir lamb, it was cooked then basted with sour plum sauce. Let me tell you, not only does Tavakkul’s cooking look good, but it’s insanely tasty. Everything is saturated with as much lamb fat as possible giving it the maximum amount of flavor.

It was an incredible day, the food was delicious, and the Azerbaijani hospitality was even better.

Tavakkul does have a restaurant in Qamarvan that’s call Qaya Restaurant that you can definitely check out when you’re in the area to get some amazing local Azerbaijani food.

» KILIFI SWAHILI VILLAGE

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali
ADDRESS: Koleni, Kilifi, Kenyan Coast

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

????????CHICKPEA TOFU CAKE: Chickpea tofu, fried tofu, tofu paste, garlic - salt water, vinegar, chilli flakes and chilli oil.

????????GREEN PAPAYA SALAD: shredded green papaya, crispy leeks, chickpea powder, chilli oil, red eye bean, MSG and salt fermented tamarind sauce. Mix it all together.

2. FAMILY HOME

???? FRIED ANTS WITH PEANUTS: Smash the peanuts, place them in a bowl with smashed garlic and chilli. Saute mixture in a pot and add turmeric powder, peanut, garlic, chilli, ants and salt.

???????? BEEF JERKY: Marinate the jerky with garlic, chilli and salt and place on grill. Slightly mash the well cooked meat to soften it. Place everything in a mortar and crush it with more garlic and chilli.

????GRILLED BIRD: Clean the bird and place on skewers. Marinate it with salt and grill it.

????????MUSTARD & BEAN SOUP: Boil the chicken bones with beans until the beans are tender. Then just before serving, add salt and freshly picked mustard leaves.

To start our street food tour in Sicily, Italy, we went to a local patisserie inside a monastery that makes the best Sicilian cannoli in Palermo.

To continue our street food tour in Sicily, Italy, we went to the most extreme street food market in Palermo, Ballaro' market.

Inside the market, we had the most extreme and insanely delicious street food in Palermo, Sicily.
We had steamed octopus, a sandwich with Frittola and Stigghiola.

Moving on with our street food tour in Sicily, Italy, we couldn't miss the famous massive Arancini stuffed with ragu'.

To continue our street food tour in Sicily, Italy, we went for something pretty extreme, Pani ca meusa, the most iconic sandwich in Palermo.

Guiglo, Côte d’Ivoire (Ivory Coast) - After making our way along the Atlantic coast of Côte d’Ivoire, we’re continuing our Ivorian food tour to the north, stopping first for an extraordinary meal in Guiglo, before we continue all the way to Northern Ivory Coast, eating as much local food as we can along the way.

In Guiglo, Côte d’Ivoire we met with the Guéré tribe and Madam cooked us an absolutely incredible meat called Sauce Bawin (cassava leaves sauce) and Sauce Kplé Ba (sticky sauce) - a meal fit for West African royalty! It was impressive and the flavors were unbelievable.

We continued our journey to Touba and to an extremely remote village called Gboola. In Gboola we saw one of the most mysterious and fascinating dances I’ve ever scene, the Ivorian stilt dances. We then had lunch with the community.

Finally to complete this cay we drove to Odienne, in the very northern part of Côte d’Ivoire. There we had some Gnomi (griddle cakes) and a huge meal of Sumbala La-fri - Rice made with eggplant and locust beans.

It was another incredible day of local West African food in Côte d’Ivoire (Ivory Coast)!

PLJESKAVICA, a Serbian national dish also known as the Serbian hamburger, is a flat, round patty made from minced beef, pork, and veal, or a combination of the three, with the addition of selected seasonings such as paprika, salt and pepper, and in some cases, finely minced onions and garlic.
Flavorful and juicy, the word pljeskavica comes from the word pljeskati, meaning to clap, since this is the motion made when forming the patties that are then grilled on both sides to a smoky brown color, with typical grill marks on both sides.
Traditionally, the meat is then placed inside a thick flatbread called LEPINJA, which is as equally important as the meat - it should not be too dry, cold, nor crumbly, but moist, springy, and warm. The perfect pljeskavica should be juicy, perfectly spiced, and preferably topped with kajmak–a rich, clotted, slightly salty, local cream cheese.
Along with kajmak, the perfect accompaniments to the meat include finely chopped fresh onions, bell peppers, or pickled vegetables known as turšija.
There are also two significant varieties of pljeskavica: one is called gourmand's pljeskavica and has hot pepper flakes, tiny cheese cubes, and pieces of bacon dispersed throughout the meat, and the other one is called stuffed pljeskavica with sliced cheese, bacon, and sometimes ham inside the meat.

BAKU, AZERBAIJAN - Welcome to Baku, an exciting city on the Caspian Sea in Azerbaijan! Today I’m hanging out with my friends from reAzerbaijan, and we’re taking you on an ultimate and extreme street food tour - it’s going to be meaty! #ExperienceAzerbaijan #Baku

As Adnan and Farhad explained to me, unfortunately during the Soviet period, Azerbaijan wasn’t able to develop their street food culture that much and creativity was omitted. When Azerbaijan broke away from the Soviet Union, it was the Turkish who influenced much of the Azerbaijani street food culture. So you will definitely find some similarities, and yet some differences.

We started this extreme street food tour in Baku by going to one of the oldest Soviet style cafes for a quick piroshky on the go. It was pretty oily, but pretty tasty especially when drenched in tomato sauce.

Amin Kabab - Next stop on this food tour, we went to Amin Kabab, a small neighborhood kebab grill for a quick Lyulya kebab, or chopped meat kebab.

Eskulap Restoran - If you’re looking for one of the best local Azerbaijan kebab meat restaurants in Baku, this is the spot. Adnan explained it’s a legendary restaurant he’s been coming to since he was a kid. They specialize in all things lamb, and along with a variety of stews and braised dishes, one of their specialties is the Khan Kebab, lamb liver wrapped in caul fat and grilled. I also loved the lamb braised in sour plums and barberries and the insane dessert kebab of ground walnuts and lamb fat. What a meal!

To continue this extreme street food tour in Baku we headed to a lamb street where lambs hang on the street, you choose your cut from nose to tail. The organs and jaws are some of the most popular items here. We tried lamb jaws and testicles - both of which were pretty tasty.

Köz Halil Usta - Finally to complete this food tour, we had to eat at Köz Halil Usta for tantuni, a Turkish in origin food, but one of the most popular street foods in Azerbaijan. They fry up beef slices with spices and sunflower oil and wrap into your choice of bread or lavash. It’s something you could watch all day being made and it’s so incredibly addictive.

And that wraps up Azerbaijani food tour in Baku. It’s an incredible city and the lamb and meats are spectacular!

Sukhothai is the ancient capital of Siam, and so there’s a lot of Thai culture and history here. Along with visiting the historical sites of Sukhothai ( I was very excited to learn more about the culture and especially eat authentic local Sukhothai Thai food.

After we arrived to Ban Na Ton Chan (บ้านนาต้นจั่น), we immediately went to check into our homestay where we were greeted by an amazing local early lunch. Among the spread of food, one of the highlights was barometer earthstar mushroom curry (แกงคั่วหมูเห็ดเผาะ), it was incredibly delicious. We ate, had some local durian, and then took a little rest before preparing the next meal!

Aunty was amazing, she went above and beyond to take care of us, and to cook us local food. In the afternoon we went to gather some fresh ingredients, including bamboo shoots, bitter melon leaves, and pea eggplant. Along with many other dishes, one of the main dishes Aunty cooked was a local style bamboo shoot curry (แกงหน่อไม้) ใบย่านาง), using mainly the fresh herbs and bamboo shoots that we harvested ourselves. She started with juice made from yanang ( leaves, which are common in certain regions of Thailand, often used for a curry broth. She then boiled the bamboo shoots, and added in an assortment of vegetables, mushrooms, herbs, spices, fermented fish sauce, and finally red ant eggs to finish it off. It was extraordinary!

For dinner we had an entire local Sukhothai Thai food feast - including the amazing bamboo shoot curry Aunty prepared, a chili dip made with egg, and an assortment of other delicious Thai food.

It was a learning experience, and so much fun to hang out with Aunty who was so kind and took such great care of us.

1. MAMA MWENDWA’S: Chapati + Tea (Chai) + Mayai-Chapati
ADDRESS: Nation Kibandas, Mombasa Road, Nairobi
OPEN: 6:00AM to 3:00PM

???????? CHAPATI : Add flour to a bowl, salt and water and knead until firm. Sprinkle a little flour on a flat surface, then flatten and roll out the big mound of dough onto the surface. Pour a little cooking oil on the flat dough. Using a knife, portion the flat dough lengthwise into equal strips. Roll in each strip into a ball. Flatten dough balls using a rolling pin then cook on both sides on a hot pan.

☕ TEA (CHAI): To a big sufuria, add water followed by milk. As it gets hotter, add tea leaves.

???? MAYAI-CHAPATI: Add cooking oil to a hot pan, pour in a beaten egg and cook until well done on both sides. To make the Mayai-Chapati, place the omelette inside a chapati and serve.

2. ENKARE: Nyama Choma + Ugali + Kachumbari + Sukuma Wiki + Mutura

???? NYAMA CHOMA (Roast Meat): Divide the meat into popular cuts like leg and ribs, with offcuts like kidney. Season with salt and place in an oven for a few minutes. Then, place on a charcoal grill and cook evenly on both sides.

???????? UGALI : Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

???????? KACHUMBARI: Mix tomato, onion, lemon juice together to make salad.

????????SUKUMA WIKI (Collard Greens): Fry onions in cooking oil, add the sukuma wiki for about a minute or two and then serve.

???? MUTURA (African Sausage): Cut offal into small pieces then boil. Fry with onions, herbs and spices. Stuff inside uncooked tripe and tie both ends firmly, then grill.
